Steps:
- Line a 9-in. square baking pan with parchment, letting ends extend up sides. Place graham crackers and peanuts in a food processor; pulse until just ground. Add sugar; process 10 seconds. Add sweetened condensed milk, vanilla and salt; pulse until dough comes together., Press dough into prepared pan. Refrigerate, covered, at least 4 hours or overnight. Lifting with parchment, remove from pan. Cut into bars. Store in an airtight container.

PAçOCA (BRAZILIAN PEANUT CANDY)
This no-cook candy tastes somewhat like the inside of a Reese's peanut butter cup. It can be eaten on its own, or crumbled as a topping for ice cream or cake. (There is also a brazilian beef dish which people in the north of the country call "paçoca". It's more broadly known as paçoca de pilão to distinguish it from this candy.) Manioc is also known as cassava.

Steps:
- In a food processor, finely grind the peanuts with the dry ingredients.
- Add a tablespoon of condensed milk and process for 30 seconds. Check if mixture is starting to come together by pressing some into a ball with your fingers. If the mixture will form a ball that stays together well, it's ready. If it is still too crumbly, add more condensed milk and process.
- Firmly press mixture into a square 8 inch by 8 inch pan lined with wax paper. You can also use greased cookie cutters (simple shapes) to cut pieces out of the candy, or press the candy into molds to shape it.
- Remove candy from pan by lifting out the wax paper, and cut into smaller squares.
- Store in an airtight container.

PISTACHIO BRIGADEIROS
An out-of-the-ordinary take on the Brazilian candy known as brigadeiros. Adapted from a Leticia Moreinos recipe found in Fine Cooking. Cooking time includes chilling time.

- In a 3-qt heavy-duty saucepan, combine the condensed milk, cream, 6 tbs ground pistachios, corn syrup and butter and bring to a boil over medium heat. Reduce the heat to medium-low and continue to cook, stirring constantly with a whisk, until the mixture thickens and starts to form a dense batter. This will take about 12 minutes. When the mixture is properly cooked, the whisk will leave trails in the batter that briefly expose the bottom of the pan, and the mixture will slide to the side in a blob when the pan is tilted, leaving a thick residue on the bottom of the pan.
- Slide the mixture into a bowl, but do not scrape the pan -- you don't want to use the residue that's stuck to the pan, or your candies will be gritty and off-textured. Allow the mixture to cool to room temp, then chill for about 3 to 4 hours, or until mixture is very firm.
- Put the remaining ground pistachios (you should have 1/4 cup left) in a bowl. Using a small cookie scoop, portion out the mixture and roll by hand into balls that are approximately 1" in diameter. Drop each rolled ball into the pistachios and toss to coat. Remove the coated candies from the pistachios, allowing the excess nuts to sift through your fingers, and place the candies in tiny paper candy cups. If you find that the nuts are not sticking well to the outside of the candies, you can roll them around a bit more in your hands before coating (this warms them up a bit so they soften).
- These can be stored tightly covered at room temperature If you choose to refrigerate them for storage, allow them to come to room temp before serving for best flavor.

- in a heavy saucepan,over medium-low heat, stir all ingredients constantly.
- cook till mixture thickens enough to show bottom of pan while stirring.
- pour into greased dish and cool to room temperature.
- take small amount with a teaspoon and roll into ball shape.
- roll in jimmies to garnish.
- *****hint*grease hands to prevent stickiness.
- if balls do not hold shape return to saucepan and cook additional 5 minutes.
