CHICKEN NOODLE CASSEROLE
This casserole based on a favorite soup will satisfy any comfort food craving. Partially cooking the egg noodles allows them to soak up the flavorful sauce without becoming too soft.

- Preheat the oven to 375 degrees F. Butter a 3-quart casserole dish.
- Bring a large pot of generously salted water to a boil. Add the egg noodles and cook until al dente, about 4 minutes. Strain.
- Meanwhile, heat 2 tablespoons of the butter in a large Dutch oven or pot over medium-high heat. Add the mushrooms and cook, stirring occasionally, until browned all over, about 3 minutes. Season with 1/2 teaspoon salt and a few grinds of pepper. Transfer to a small bowl and set aside.
- Lower the heat to medium and melt the remaining 4 tablespoons butter in the Dutch oven. Whisk in the flour to form a loose paste. Stir in the onions, carrots, celery and thyme and season with 1/2 teaspoon salt and a few grinds of pepper. Cook for 5 minutes to soften, then add the wine. Whisk for 30 seconds, then add the chicken broth and heavy cream. Bring to a boil, reduce heat and simmer for 10 minutes. Remove the thyme sprigs; fold in the noodles, mushrooms, chicken and parsley and season with salt and pepper. Transfer to the buttered casserole dish and top with the Gouda.
- Bake until bubbly and brown on top, 40 to 45 minutes.

- In a large pot, boil the chicken until tender. Cut the breasts into cubes or small pieces.
- In a large bowl, combine the chicken pieces with the water chestnuts, onion, soup, most of the crushed corn flakes and mayonnaise. Mix well.
- Pour mixture into a 9x13 inch baking dish. Sprinkle the rest of the crushed corn flakes on top of the mixture. Bake in the preheated oven for 1 hour.

PANTRY CHICKEN CASSEROLE
Using pantry items plus a couple of fresh items, you can create a cheesy, comforting casserole your whole family will love. Though it does include RO*TEL® and a can of mild green chile peppers, it's not spicy, but if you like the heat, choose hot RO*TEL® and peppers. This pantry chicken casserole reheats well, too, but I had to hide it, or there would have been no night #2! A crusty bread and a green salad complete this easy pantry meal.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a large casserole dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- While the pasta is cooking, melt butter in a large skillet over medium heat. Add onion and bell pepper and cook, stirring occasionally, until vegetables are tender, about 5 minutes. Add mushrooms and cook until they release their liquid, about 5 minutes. Add garlic and cook, stirring occasionally, until fragrant, about 1 minute.

- Preheat oven to 300F and butter a casserole dish.
- Melt butter in a double boiler; blend in flour, add milk and stock and cook until thick, stirring constantly.
- Season with salt and paprika.
- Pour over eggs, stirring constantly; add remaining ingredients and pour into prepared casserole.
- Bake until a knife inserted in center comes out clean, about 20 minutes if the mixture is hot when placed in oven.

- Mix flour, salt and pepper in a bag, add the chicken and shake to coat well.
- Brown a few pieces at a time in the butter in a skillet.
- Remove to a 3 QT baking dish, reserving the drippings.
- Add the carrots, potatoes and onions to the baking dish.
- Pour the chicken broth over and add the thyme.
- Bake, covered at 350*F for 45 minutes.
- Stir 6 TBs flour into the reserved drippings, adding additional butter if necessary.
- Cook for 6 to 8 minutes or until medium brown, stirring constantly.
- Stir in the milk.
- Cook until thickened, stirring constantly.
- Season to taste with salt, pepper and nutmeg.
- Pour the gravy over the chicken and vegetables and bake uncovered for 25 to 30 minutes longer.
- Garnish with parsley and serve.
THE BEST CHICKEN CASSEROLE
This is the best chicken casserole I ever made. My mother-in-law gave me the recipe. It's easy to make and allows for plenty of leftovers.

- Pick off all the chicken in shredded pieces and set aside for later.
- In a small bowl, combine the celery salt, curry powder, pepper, poultry seasoning, and onion powder. Set aside for later.
- Cook rice according to package but substitute dry sherry and chicken broth for the water and olive oil. Add ingredients from step 2 when adding rice.
- Melt 1/2 cup butter in a large pot over medium heat. Add mushrooms and scallions and saute for 10 minutes or until tender.
- Stir in rice, chicken, sour cream, and soup. Spoon mixture evenly into 2 8x8 casserole dishes.
- In a medium bowl, stir together crushed crackers, fried onions, 1/4 cup melted butter, paprika, and garlic powder.
- Sprinkle top of casserole evenly with cracker mixture.
- Bake covered at 350 degrees for 30 minutes then uncover and bake for 5 to 10 minutes more.

MOM'S CHICKEN CASSEROLE
This casserole is not fancy or "gourmet" by any means, but I love the stuff. My mom got the recipe from a church cookbook, I think, and she makes it best.
