BANANA FRITTERS
These great little fritters are a breakfast favorite.

Steps:
- In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
- Heat the oil in a large skillet to 365 degrees F (180 degrees C).
- Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

BANANA NUT BREAD FOR THE BREAD MACHINE
I got this recipe from my sister-in-law and it is to die for! Banana bread is a long time favorite in my house and this recipe won us all over....even grandma.

Steps:
- Into baking pan measure flour, sugar, baking powder, soda, and salt.
- Add oil, eggs, sour cream, and vanilla.
- **(follow your machine's instructions).
- Insert pan securely into unit; close lid.
- Select"Cake" setting; press"Start."**.
- When beep sounds after about 5 minutes, add mashed banana and nuts.
- Press"Start" again.
- The"Complete" light will flash when cake is done.
- Using hotpads, remove pan from unit.
- Turn bread out onto cooling rack.
- Cool; slice thinly to serve.
- Makes 1 5x4-inch loaf.
- Banana-Chocolate Chip Bread: Prepare bread as above through"Cake" setting.
- When beep sounds, add mashed banana and 1/3 cup chopped chocolate chips.
- Omit nuts.
- Continue as directed.
- **If Bread machine on "Cake Setting" does not mix ingredients follow these steps.
- Place ingredients in pan of bread machine.
- Select Dough setting, and press Start. Mix bread for 3 to 5 minutes until bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push dough from sides of bread pan. When 3 to 5 minutes have passed on clock display, press Stop. Do not continue mixing.
- Select "Cake" setting, and press Start. Cake cycle time may vary with machines, but should be about "50 minutes". Test bread for doneness, insert a toothpick into center top. Remove toothpick. If bread is done, toothpick will come out clean. If there is dough on toothpick, reset machine on "Cake" setting and continue to bake an additional 10 to 15 minutes. Test again with toothpick to assure the bread is completely baked.
- Remove pan from machine, but allow bread to remain in pan for 10 minutes. Remove bread to cool completely on a wire rack.
BREAD MACHINE WEST AFRICAN BANANA FRITTERS
This is based on a recipe from Madge Rosenberg's cookbook, The Best Bread Machine Cookbook Ever - Ethnic Breads. She says, "These fritters, similar to what we know as beignets, make inexpensive party food rich in natural fruit flavors. Children will enjoy munching these crispies with milk, but the big kids will eat their way through an endless supply with coffee or beer." My kind of fritters!

Steps:
- Add all the ingredients for the dough to your bread machine in the order suggested by the manufacturer and process on the dough cycle.
- Remove the dough after the cycle ends and place on a lightly floured work surface.
- With a floured rolling pin, roll out the dough into an 8-by-12-inch rectangle.
- Cut into 2-inch squares.
- Place on a nonstick or greased tray, cover, and let rise in draftfree area about 30 minutes.
- Heat 1-inch of oil in a large saucepan or skillet until it reaches 365 degrees F on deep-frying thermometer.
- Fry 3 or fritters at a time 10 to 15 seconds on one side until golden.
- Carefully flip fritters and fry until lightly browned, 5 to 7 seconds.
- Drain on crumpled brown paper bags or on several layers of newspaper covered with a sheet of paper towel.
- Sprinkle confectioners' sugar over fritters.
- Serve warm.

WEST AFRICAN BANANA FRITTERS
Easy to make and delicious. I got this from an old Time-Life book (1970) on African Cooking, which is timely for the ZWT-4!

Steps:
- In a deep mixing bowl, stir the flour and sugar together and, with a whisk, beat in the eggs one at a time. Whisking constantly, add the milk, about 1/3 cup at a time and continue to beat until the batter is smooth and elastic enough to stretch like a ribbon from the beater when it is lifted up out of the bowl.
- Peel the bananas, chop or slice them coarsely, and drop them into a shallow bowl. With the tines of a table fork, mash the bananas to a smooth puree. Stir the puree into the batter and let the mixture rest at room temperature for about 30 minutes before frying.
- Pour oil into a deep fryer or large, heavy saucepan to a depth of 2 to 3 inches and heat the oil until it reaches a temperature of 375 degrees ona deep frying thermometer.
- For each fritter, ladle about 1/4 cup of the banana batter into the hot oil. Deep-fry 2 or 3 fritters at a time, leaving enough space between them so that they can spread into 3 or 4-inch rounds or oblongs. Turning them once or twice with a slotted spoon, fry for about 3 minutes or until the fritters are a rich golden color on all sides. as they brown, transfer them to paper towels to drain.
- While the fritters are still warm sprinkle them lightly with powdered sugar and serve at once.
