BREAD MACHINE CINNAMON-RAISIN BREAD

You can say goodbye to store-bought cinnamon raisin bread forever with this fan-favorite recipe simply made in your bread maker. It hits all the right notes with the cinnamon-sugar flavor, a chewy crumb and plump, juicy raisins. Toasted and slathered with butter, you couldn't ask for a better breakfast. Steps:

  • Measure carefully, placing all ingredients except raisins in bread machine pan in the order recommended by the manufacturer. Add raisins at the Raisin/Nut signal or 5 to 10 minutes before last kneading cycle ends.
  • Select Sweet or Basic/White cycle. Use Medium or Light crust color. Remove baked bread from pan and cool on wire rack.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  • Place butter, sugar, and 1 egg in large bowl. Beat well. Beat in second egg. Stir in milk and vanilla.
  • In another bowl measure in flour, baking powder, and salt. Stir in raisins. Pour all at once into batter. Stir to moisten only. Spoon into greased loaf pan.
  • Bake in 350 degree F (175 degree C) oven for 1 hour or until it tests done. Cool 10 minutes. Turn out of pan. Cool on rack. Wrap to store. Allow to ripen a day or two to improve flavor. Serve buttered.

THE BEST RAISIN BREAD FOR BREAD MAKER / MACHINE

I have tried no less than 5 different recipes and several variations of Raisin Bread recipes before finding what I think is the best tasting recipe. It is a culmination of trail and error using various recipes found on the internet and in Bread Machine Cookbooks. This recipe makes approximately a 1.5lb (750gm) loaf.

The Best Raisin Bread for Bread Maker / Machine image

Steps:

  • Firstly, mix the flour, milk powder, sugar, salt and cinnamon together thoroughly in a mixing bowl making sure there are no lumps.
  • Now add the luke warm water and butter into the bread machine. (I divide the butter into four pieces and put one in each corner of the pan for easier mixing).
  • Then add the dry mixed ingredients into the pan. Make a small well in the centre of the dry mixture and add the yeast.
  • Set the Bread Maker / Machine to 'Sweet Bread' setting and wait for it to 'BEEP' (approx 15 minutes) before adding the raisins.
  • Wait until cooked and enjoy fresh or toasted with butter -- YUM !
  • ** If the mixture is too dry while mixing you can add a tablespoon of water. Alternatively if its too moist, a tablespoon of flour should sort it out nicely. **.

270 ml lukewarm water
1 tablespoon butter
3 cups plain white flour (I haven't tried bread flour)
1 tablespoon powdered milk
3 tablespoons brown sugar
1/2 teaspoon salt
1 tablespoon cinnamon or 1 tablespoon allspice
2 teaspoons dry yeast
1 cup raisins (I dust them in a little plain flour to coat them and prevent them sinking to the bottom of the loaf)

Rich Raisin and Cranberry Loaf (bread machine) image

Steps:

  • 1. OPTIONAL: I like to soak raisins/cranberries in hot water until soft. This will make them plumper and softer and keep fruit on outside of loaf from burning. If you prefer not to do this, mix dried fruit w/ pinch of flour and toss. This will keep fruit from sticking together.
  • 2. Place ingredients, in order listed, in bread pan. Select loaf size (2 LB) and crust preference. I use a light setting for a tender loaf. Choose sweet bread program and start bread maker.
  • 3. Add fruit when mix-in tone sounds or when appropriate for your maker. When cycle is complete, remove bread from pan to wire rack to cool completely prior to slicing. Take a whiff of that heavenly yeasty cinnamon fragrance and ENJOY!
