Steps:
- Remove the roots and leaves from the leeks, wash well, and chop roughly.
- Heat the oil in a large, heavy-based saucepan or stock pot. Saute the leek until softened.
- Add the garlic and pepper, and continue cooking, stirring, for around a minute.
- Add the spinach, in batches if using fresh, broccoli, potato and stock. Cover and simmer until the potato is tender.
- Remove from heat and allow to cool slightly.
- Blend on high speed using a hand held/stick mixer.
- Serve with grated parmesan or sour cream.

- Cut off woody ends from broccoli. Chop the rest.
- Slice shallots thinly.
- Gently saute broccoli and shallots in butter and oil for ten minutes.
- Add spinach and toss to mix.
- Add stock and bring to boil.
- Mix in blender and season to taste.
VERY GREEN BROCCOLI SOUP

- Cut the broccoli florets from the stems. Peel the tough outer skin from the stems and trim off the fibrous ends. Cut the stems lengthwise into slices about 1/2-inch thick and then crosswise into 1/2-inch pieces.
- Heat the olive oil and butter in a soup pot over medium-high heat until hot. Add the garlic and cook until light brown. Add the onion and celery, lower the heat to medium, and season with salt and pepper. Cook the vegetables slowly until tender, about 10 minutes. Regulate the heat so the vegetables cook without taking on color.
- Add the thyme and stir. Add the broccoli stems, stock, and salt and pepper, to taste, and bring to a boil. Cook, uncovered, for about 3 minutes. Add the florets and continue to cook until very tender, about 5 minutes more.
- Puree the soup in a blender in small batches. Add some of the spinach and some of the lemon zest to each batch and then puree it. (The soup can be made to this point, covered, and refrigerated for up to 1 day or frozen for up to 1 month.)
- Return the soup to the pan and reheat over gentle heat. Stir in the cream. Taste and adjust the seasoning with salt and pepper. Keep warm.
- Chef's Note: When I plan on finishing a dish with the addition of a dairy product, as I do here with cream, I often add a dairy product early in the cooking, too, as I do with the butter in the initial cooking of the vegetables. It melds the flavors.

- Heat the oil in a large saucepan. Add the onion and fry for 8 mins until soft and translucent. Add the garlic and cook for 1 min more. Tip in the broccoli, peas and chard, then pour over the stock and bring the mixture to the boil. Reduce the heat to a simmer, cover and cook for 25 mins.
- Stir through the herbs, lemon zest and juice, then blitz the soup with a stick blender until completely smooth. Ladle into bowls and serve with the toasted pumpkin seeds scattered over the top.

- Melt butter in a medium saucepan over medium-high heat. Add leeks and garlic and cook, stirring occasionally, until translucent, about 2 minutes. Stir in mustard, then flour; cook until mixture has a slightly nutty aroma, about 1 minute.
- Gradually whisk in broth until combined. Add broccoli stems and season with salt and pepper; increase heat to high and bring to a boil, whisking constantly. Add broccoli florets; reduce heat to low and simmer partially covered until broccoli is tender, about 8 minutes. Stir in spinach and cook 1 minute more; remove from heat.
- Working in batches, purée soup in a blender. Return to pot and reheat over medium-low. Whisk crème fraîche with 1 tablespoon water in a small bowl. Serve soup, drizzled with crème-fraîche mixture and garnished with pretzels.
SPINACH- BROCCOLI BAKE

- Place frozen spinach in a container and cover with water. Bring to a boil.
- Cover and simmer for 4 minutes, drain.
- Place frozen broccoli in container and cover with water. Boil 3 minutes.
- (I combined the two steps above and boiled for 4 minutes in the same container).
- In large mixing bowl combine soup, mayonnaise, egg, and spices.
- Add cooked spinach and broccoli, mix well.
- Pour into greased quart.
- Bake at 350°F until firm.

- Preheat oven to 425°F. Bring 4 quarts water and 2 tablespoons of the salt to a boil in a large pot over high. Set 1 cup of the broccoli aside. Add remaining broccoli to pot, and cook 3 minutes. Add spinach, pushing down to submerge in water. Cook 1 minute or until broccoli is tender and spinach is wilted. Remove 1 cup cooking liquid; set aside. Drain in a colander, discarding remaining cooking liquid. Run cold water over broccoli and spinach, draining well, until cool, 2 to 3 minutes.
- Process cooked, cooled broccoli and spinach, 1 cup reserved cooking liquid, stock, and parsley in a blender until smooth, 1 minute. Transfer to pot; stir in half-and-half, 2 1/2 teaspoons of the salt, and 1/2 teaspoon of the pepper.
- Toss together bread, Parmesan, and 3 tablespoons of the oil. Place in 1 layer on 1 side of a greased rimmed baking sheet. Toss reserved 1 cup broccoli with remaining 1 tablespoon oil and 1/4 teaspoon each of salt and pepper. Place in a single layer on other side of baking sheet. Bake in preheated oven until broccoli is tender and bread is toasted, 7 to 9 minutes.
- Gently reheat soup over medium until steaming, 4 to 5 minutes. Stir in lemon juice. Ladle soup into bowls, and top with roasted broccoli and croutons.

- Start by washing the spinach leaves under water. Pat dry them using a kitchen towel and chop the spinach leaves in a medium bowl. Now, on a chopping board chop the onions, potatoes, broccoli and keep them aside.
- Place a large pan over medium flame and once its hot enough add butter in it. When butter starts to melt, add chopped onions and cook over medium flame till they are translucent. Sprinkle salt and pepper over it now. Then add vegetable broth and stir to mix the ingredients well. Add broccoli florets, and chopped potatoes in the pan. Cook the mixture over medium flame for a minute or two.
- When vegetables appear cooked, add spinach leaves in the pan and stir well. Cook it over medium flame for 5-7 minutes, stirring occasionally. When vegetables are properly cooked remove from flame and let the mixture cool.
- After sometime, transfer this mixture to a blender jar and blend it on high speed for a few seconds to make a smooth puree. Transfer soup to a serving bowl and sprinkle black pepper over it. Garnish with parmesan cheese and serve hot.
