HOT SAUSAGE BURGERS WITH BROCCOLI RABE AND PROVOLONE

Hot Sausage Burgers with Broccoli Rabe and Provolone image

Steps:

  • In a large bowl, combine the pork, red pepper flakes, paprika, fennel, sage, onion, garlic and salt, to taste. Form the meat into 4 patties, put on a plate and coat with a drizzle of extra-virgin olive oil.
  • Heat a small pot over medium-low heat and add the brown sugar, Worcestershire, vinegar, tomato sauce and black pepper, to taste. Simmer until the mixture becomes a thick steak sauce consistency, about 15 minutes.
  • Add a couple inches of water to a medium skillet over medium-high heat. Bring to a boil, then salt the water and add the broccoli rabe. Cook for 5 minutes, then drain. Transfer the broccoli rabe to a cutting board and chop it into 2-inch pieces. Set aside. Return the skillet to the stove over medium heat and add 1 tablespoon of extra-virgin olive oil. Stir in the chopped garlic and the broccoli rabe. Saute for 2 minutes, then season with a few grates of nutmeg, to taste.
  • Heat a drizzle of extra-virgin olive oil in a skillet over medium-high heat, add the patties and cook for 5 to 6 minutes on each side. Top the patties with a slice of provolone during the last minute of cook time and tent with foil to melt.
  • Divide the broccoli rabe on the bottoms of the rolls and top with the cheesy sausage patties. Slather some of the warm sauce on the roll tops and cover the burgers. Serve the burgers on individual plates with a few chips alongside.

1 1/2 to 1 3/4 pounds coarsely ground pork (ask butcher to do this)

1 small bundle broccoli rabe, tough ends discarded
1 large or 2 small cloves garlic, finely chopped
A few grates nutmeg
4 thick deli slices sharp provolone cheese
4 ciabatta rolls or other crusty rolls, split
Store-bought olive oil-rosemary or herb flavored fancy potato chips

Steps:

  • In bowl beat eggs to blend.
  • Stir in broccoli, almonds, onion, bread crumbs and water.
  • Add salt and pepper to taste.
  • On an oiled 12-by-15-inch baking sheet shape mixture into 4 patties each 3/4 inch thick.
  • Bake at 375°F, turning halfway through cooking until each side is golden brown, about 25 minutes total.
  • Serve on buns with mayonnaise and lettuce.

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium saute pan on high heat, brown ground beef and then drain oil. Using flour on the rolling pin and area, roll out pizza dough until 12-inches in diameter. Using a large spoon; spread sauce over the whole pizza dough leaving 1/2-inch from edge unsauced. Add mozzarella and then ground beef and broccoli over the sauce. Place pizza on a large sheet tray and place in preheated oven for 12 to 15 minutes. Remove pizza from oven, cut in 1/8ths and serve.

Steps:

  • Mix ground chicken with chopped broccoli and cheese (I used an 8oz bag of the Kraft Crumbles).
  • Add Montreal Seasoning and form into burgers. I bake them on a non-stick pan so no oil is needed and they still come out crispy (see photos).
  • I topped mine with Franks Red Hot sauce because I love that on my turkey and chicken burgers. My husband used BBQ sauce and said it was really good, so whatever condiment makes you happy, try on these burgers or just have them plain.

MOLLIE KATZEN-INSPIRED POTATO AND BROCCOLI BURGERS

The famed vegetarian cookbook author Mollie Katzen has a whole chapter devoted to burgers and savory pancakes in her beautiful new cookbook, "The Heart of the Plate." Before I'd looked carefully at the chapter I'd bought a bunch of broccoli with the idea that specks of broccoli would be beautiful in a burger. Mollie, with her delicious Walnut-Coated Broccoli-Speckled Mashed Potato Cakes, was way ahead of me on that idea. I loved her idea of coating the burgers with ground walnuts and barely cooking the finely chopped broccoli before incorporating it into the mix. I've made a variation on Mollie's burgers, using red potatoes and sticking with the Indian seasonings I've been using in other burgers this week.

Mollie Katzen-Inspired Potato and Broccoli Burgers image

Steps:

  • Bring a medium pot of water to a boil and salt generously. Place broccoli in a strainer and dip into the boiling water for 1 minute, then remove. Rinse with cold water and shake out excess, then drain on paper towels.
  • Steam potatoes over 1 inch of boiling water until tender, about 15 minutes. Transfer to a bowl and mash with a fork. The skins will break up in the mash. Stir in broccoli and remaining ingredients except the ground walnuts and oil. Season generously with salt, combine well, taste and adjust seasonings.
  • Place ground walnuts in a wide bowl. Scoop out about 1/3 cup of burger mixture and form into a ball (you can moisten your hands to prevent sticking). Roll in the walnuts, then gently flatten into a patty. Place on a plate or sheet pan and continue to shape all of the patties. Refrigerate for 1 hour or longer.
  • When you're ready to cook, place a rack over a sheet pan. Heat 2 tablespoons of oil in a 12-inch, heavy nonstick frying pan over high heat. Swirl pan to coat with the hot oil. Lower heat to medium. Place 4 to 5 patties in the pan (do not crowd), and cook until well browned on one side, about 4 minutes. Turn and brown for about 4 more minutes. Remove to the rack. Heat remaining oil in the pan and cook remaining patties. Keep patties warm in a low oven until ready to serve. Serve with a salad and your choice of toppings, such as the usual (ketchup, mustard, relish), or yogurt raita, garlic yogurt, or chutney.

Steps:

  • Preheat oven to 350 degrees. Line 9-in pie pan with uncooked pie crust (Any pie crust will work, but my Never Fail crust is the one we always cook with this).
  • In skillet brown beef and onion, drain. Stir in flour, salt, and garlic salt. Add the milk and cream cheese; cook and stir til smooth.
  • Add moderate amount of hot cream mix to beaten egg and return to mixture in skillet. (Try to not curdle the egg).
  • Cook and stir over medium heat til thick. Stir in the broccoli. Pour mixture into pastry lined pie pan.
  • Cut the cheese into slices and arrange over the meat mixture. Place top crust over filling. Seal and flue edges. Cut slits in top and allow steam to escape. Brush top of the pie with a little milk.
  • Bake 40 to 45 minutes. Let stand ten minutes before serving.

Chickpea-Broccoli Burgers image

Steps:

  • In small saucepan, bring couscous and water to a boil; turn off heat, cover and let stand until liquid is absorbed and couscous is tender, about 10 minutes- Reserve 1 cup couscous and save remaining for another use.
  • Meanwhile, steam broccoli until tender, 5 to 7 minutes- Remove from steamer and set aside to cool.
  • In medium skillet, heat oil over medium heat. Add onion and cook, stirring often, until soft, about 5 minutes- Stir in cumin.
  • Remove from heat and allow to cool.
  • Preheat oven to 400 degrees, then line a large cookie sheet with foil, and dust with breadcrumbs.
  • In food processor, combine couscous, broccoli, onions, chickpeas and tahini- Process until blended, stopping to scrape down sides of bowl when necessary.
  • Transfer mixture to large bowl.
  • Gradually add 1/4 cup bread crumbs- Add enough additional bread crumbs until mixture is stiff enough to form into patties but still moist- Season with salt.
  • Shape mixture into 3-inch patties (1/2-inch thick).
  • Put patties on prepared cookie sheet- Bake until lightly browned on both sides about 50 minutes, turning once halfway.
  • They can be served at this point or grilled or broiled until crispy for 1 or 2 minutes per side.
