BROCCOLI LEEK QUICHE

This is from my back in the day recipe file that was given to me in 1984. I have found this to be a no fail reliable quiche,& I've served this to the girls from nursing school during those marathon study sessions, and family and friends.

Broccoli Leek Quiche image

Steps:

  • Preheat oven to 375 °F.
  • In a large mixing bowl mix soup mix, broccoli, cheese, ham, and pepper.
  • Place pie shell into 9 inch pie pan and spoon broccoli/cheese mixture into unbaked pie shell.
  • In another mixing bowl mix eggs& half and half.
  • Pour over broccoli/cheese mixture in pie shell.
  • Bake 40-45 minutes until knife inserted 1 inch from edge comes out clean.
  • Let stand 10 minutes before serving.
  • *Ialways rinse my ham to remove the extra salty flavor.
  • *Ihave substitued other similiar flavors of Knorr soup mix.

Steps:

  • Preheat the oven to 180C/350FGas Mark 4.
  • Cook the leeks and broccoli seperately in a little boiling water for about five minutes. Drain well. Arrange the broccoli and leeks in an ovenproof dish.
  • Melt 40 g of the margarine in a frying pan over a moderate heat. Add the breadcrumbs and fry until golden. Stir in the yoghurt, season to taste. Mix in half the cheese.
  • Pour the cheese sauce over the vegetables. Sprinkle with the remaining cheese and dot with the margarine. Cook in the oven for 15 - 20 minutes, then brown under a hot grill if wished. Serve immediately, sprinkled with paprika.

50 g sunflower margarine

300 g plain low-fat yogurt

Broccoli-Cheddar Quiche image

Steps:

  • Preheat oven to 375 degrees. Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Place in a 9-inch pie plate, fold overhang under, and crimp edge. Place a sheet of parchment paper over dough and fill with pie weights or dried beans. Bake until edge is dry and light golden, about 20 minutes. Remove parchment and weights.
  • Meanwhile, in a large skillet, melt butter over medium-high. Add onion, season with salt and pepper, and cook until light golden, 8 to 10 minutes. In a medium bowl, whisk together eggs and cream. Add onion, broccoli florets, and cheese and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Whisk to combine, pour into crust, and bake until center of quiche is just set, 40 to 45 minutes. Serve warm or at room temperature.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Place pie crust into a 9-inch deep pie dish and prick crust all over with a fork; brush with oil. Place crust onto prepared baking sheet.
  • Bake crust in the preheated oven for 8 minutes.
  • Place broccoli into a bowl and microwave on high until broccoli is bright green and slightly tender, about 4 minutes. Whisk eggs, milk, Dijon mustard, oregano, salt, pepper, and thyme in a bowl; stir broccoli into egg mixture. Pour mixture into crust and sprinkle quiche with Cheddar and Parmesan cheeses. Place pie dish on the baking sheet.
  • Bake until a knife inserted into the middle of the quiche comes out clean, about 40 minutes. Let stand 10 minutes before cutting.

Ham and Broccoli Quiche image

Steps:

  • Preheat oven to 425 degrees.
  • Line quiche dish or large glass pie pan with unbaked pie crust.
  • Combine ham, cheese onion and broccoli and put in quiche dish. Beat remaining ingredients in separate bowl and pour mixture into quiche dish. Gently stir.
  • Bake at 425 degrees for 15 minutes then reduce heat to 300 degrees. Bake for 30 minutes longer or until slightly golden and inserted knife comes out clean. Let stand for 10 minutes before cutting.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until brown and crispy, about 10 minutes. Remove bacon to a paper towel-lined plate and crumble when cool enough to handle.
  • Saute leeks in the bacon fat over medium heat until soft, 4 to 5 minutes.
  • Place pie crust in a glass, deep-dish pie pan. Spread leeks over the bottom of the crust, then sprinkle bacon crumbs over top.
