STEAMED FISH WITH GINGER

- Pat halibut dry with paper towels. Rub both sides of fillet with salt. Scatter the ginger over the top of the fish and place onto a heatproof ceramic dish.
- Place into a bamboo steamer set over several inches of gently boiling water, and cover. Gently steam for 10 to 12 minutes.
- Pour accumulated water out of the dish and sprinkle the fillet with green onion. Drizzle both soy sauces over the surface of the fish.
- Heat peanut and sesame oils in a small skillet over medium-high heat until they begin to smoke. When the oil is hot, carefully pour on top of the halibut fillet. The very hot oil will cause the green onions and water on top of the fish to pop and spatter all over; be careful. Garnish with cilantro sprigs and serve immediately.

STIR FRIED BEEF WITH GINGER AND SCALLIONS RECIPE

- 1. Cut the steak with the grain (lengthwise) into 3-inch wide sections, and then cut those against the grain (crosswise) into 1/2 inch thick slices. Season with salt and pepper. 2. Peel the ginger and cut into thin rounds. Trim the ends off the scallions and cut into 2-inch long pieces.. Mince the garlic. 3. Heat 1 T oil until shimmering in a 12-inch skillet over medium-high heat. Add half the meat in a single layer; cook for 2-3 minutes total, turning once, until well browned on both sides. Transfer to a bowl. Repeat with another T of oil and the remaining meat. (You may want to deglaze the pan with some wine or vinegar here -- dump it when you are done) 4. Reduce the heat to medium; add the remaining T of oil to your now-empty skillet. Add the ginger and cook for 2 minutes, stirring, until lightly browned on some edges. Add the garlic and cook for 20 seconds, until fragrant. 5. Stir in the scallions, fish sauce and honey, and then return all the meat and juices to the pan. Cook for about 2 minutes, stirring occasionally, until the sauce thickens and the stir fry mixture is warmed through. 6. Serve with Jasmine rice
BROILED STRIPED BASS WITH GINGER-SCALLION OIL

- In a bowl, combine the scallions, ginger, garlic and red pepper. In a saucepan, heat the oil until shimmering. Pour the hot oil over the scallion mixture and stir in the lemon juice, soy sauce and salt. Preheat the broiler. Brush the fillets on both sides with some of the scallion oil. Arrange on a broiler pan skinned side down; broil until just cooked through, about 5 minutes. Transfer the fillets to plates; spoon some scallion oil on top. Serve with the Stir-Fried Asparagus.
STEAMED STRIPED BASS WITH GINGER AND SCALLIONS
Steps:
- Arrange a steamer rack or an inverted pie plate in a deep 12-inch skillet and add 3 cups water to skillet. Cover skillet and bring water to a boil.
- Pat fillets dry and arrange on a heatproof plate that will fit into skillet with 1 inch clearance around plate. Sprinkle ginger and 1/4 cup scallions evenly on top of fish. Stir together soy sauce and oil in a small bowl and drizzle evenly over fillets. Carefully transfer plate with fish to rack in skillet and cover tightly, then steam over moderately high heat until fish is just cooked through, 15 to 20 minutes. Carefully remove plate from skillet and sprinkle with remaining 1/4 cup scallions.
GINGER CHICKEN ASPARAGUS STIR FRY
This is a delicious stir-fry recipe and a really quick and easy dinner. Although the original recipe calls for asparagus, I have used fresh green beans (cut into 1-inch pieces) in place of the asparagus. The amounts for this recipe serves really only about 3 people, however all ingredients can easily be doubled to serve more. This is delicious!

Steps:
- In a small bowl, combine the lemon juice, soy sauce, fresh ginger and garlic; mix/whisk to combine.
- Toss the chicken pieces well with about 3 tablespoons of the lemon/soy mixture; reserve the remaining mixture.
- Dissolve/whisk the cornstarch in chicken broth.
- Heat the oil in a wok or frying pan until hot.
- Add in mushrooms and chicken; stir over high heat until chicken looses the pink colour.
- Add in asparagus and green onions, continue to stir over high heat until veggies at crisp-tender.
- Add/stir in broth/cornstarch mixture and reserved soy sauce mixture until thickened.
- Sprinkle with toasted sesame seeds.
- Serve over rice or cooked pasta.
