These brownies are not cake-like. They are more moist and gooey. I always undercook them a bit because we like them very moist.

Steps:

  • Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.
  • Mix oil and sugar until well blended.
  • Add eggs and vanilla; stir just until blended.
  • Mix all dry ingredients in a separate bowl.
  • Stir dry ingredients into the oil/sugar mixture.
  • Pour into greased 9 x 9 square pan.
  • Bake for 20 minutes or until sides just starts to pull away from the pan.
  • Cool completely before cutting.
  • Note: I usually double the recipe and bake in a 9 x 13 pan. If you double the recipe, you will need to cook longer than 20 minutes.

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 13 by 9-inch pan with vegetable oil spray.
  • In a glass or ceramic bowl, melt the butter in the microwave. Whisk in the sugar, eggs, cocoa, and vanilla. Stir in the flour and salt. Add chopped semisweet and bittersweet chocolates and pecans.
  • Spread the batter in prepared pan. Bake about 25 minutes, just until brownies test moist but not wet. Cool completely before cutting.

4 eggs, beaten
1/2 cup unsweetened cocoa powder
1 tablespoon vanilla extract
1/3 cup all-purpose flour

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch baking pan.
  • In a medium bowl, cream together the sugar and 1 1/2 cups of butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour and cocoa powder, stir into the creamed mixture until just blended. Spread evenly into the prepared pan.
  • Bake for 35 to 40 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.
  • To make the frosting: Combine the semisweet chocolate and remaining 2 tablespoons butter in a small bowl. Heat in the microwave or over a double boiler, stirring frequently until smooth. Spread over brownies when cool.

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a casserole dish (or 9" X 13" baking pan) with PAM or canola oil spray.
  • Mix together all dry ingredients in a large bowl. Add all the wet ingredients and stir well.
  • Spread in the oiled casserole dish and bake 25 minutes, or until the top is dry and the sides pull away from the dish slightly.
  • Allow to cool completely, then cut into squares.
