BAKED BROWN SUGAR WINGS
We like to pair these with Thousand Island dressing or yum yum sauce.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with foil.
- Combine oil, brown sugar, onion powder, garlic powder, chili powder, paprika, salt, and black pepper in a bowl. Rub over chicken wings and transfer to the prepared baking sheet.
- Bake in the preheated oven until browned and no longer pink in the centers, about 25 minutes.

BROWN SUGAR BBQ RUB
This is my favorite rub to use when I smoke meats. I threw it together to use on smoked pork butt, but it also works really well on chicken and ribs. Apply liberally to meat and let sit overnight for best flavor. The brown sugar helps make a nice bark. Makes enough to cover two 8-pound pork butts or 6 racks of ribs.

- Combine brown sugar, paprika, salt, chili powder, garlic powder, onion powder, dry mustard, black pepper, cayenne, and cinnamon in a small airtight container. Seal and store in a cool, dark place until ready to use.

BROWN SUGAR WINGS
My mother in law used to serve heaps of these at least once a week. She use to love it because wings were very cheap in those days and there was enough to feed the entire family and then some. Now wings are just as expensive as other chicken pieces. I cut the wing tips off and freeze them to use for broth at some other time.

- In a medium bowl, whisk together catsup, sugar, Worcestershire, and vinegar; season with salt and pepper. Set aside 1 cup sauce for tossing raw chicken; use rest for baked chicken.
- Preheat oven to 450 degrees, with racks in upper and lower thirds; line two rimmed baking sheets with aluminum foil.
- Divide wings between baking sheets, and toss with reserved 1 cup sauce.
- Bake chicken until opaque throughout, 30 to 35 minutes, rotating sheets and tossing chicken halfway through. Toss baked wings with 1/2 cup sauce, and serve with remaining sauce on the side.

- Pat wings dry with paper towels. Place wings in a large, non-reactive glass or plastic bowl. Add the salt and toss to coat. Sprinkle the baking powder over the wings and toss again to coat. Place in the fridge for at least 4 hours or up to overnight. (This step helps the wings get super crispy when they’re baked!)
- Preheat oven to 450℉. Spray a large rimmed baking sheet with nonstick spray. Set aside. Place wings in an even layer on the baking sheet, and bake for 20 minutes, then flip them, and bake for another 15-20 minutes or until golden and crispy.
- While wings are baking, in a medium saucepan, combine all ingredients for the BBQ sauce. Bring to a boil over medium-high heat, then reduce to medium low and simmer for 10 minutes, stirring frequently. Season to taste with additional salt and pepper if desired.
- When wings are finished baking, add to a large bowl along with ½-¾ cup (or desired amount!) of BBQ sauce and toss to coat! The amount is totally up to you and how saucy you want them! (You will have extra sauce leftover for another use!) Serve immediately with extra BBQ sauce and enjoy!
