BUFFET BEAN BAKE

What a great recipe for home or an awesome recipe for a pot luck! It's ready to bake in 17 minutes, so with just a few minutes of preparation, (you could actually prepare it and stick it in the fridge until you need it)!

Buffet Bean Bake image

Steps:

  • Preheat oven to 350*.
  • In medium skillet, fry bacon until crisp. Remove from skillet, crumble and set aside.
  • Drain all but about 2 tablespoons drippings from skillet; add sugar, vinegar, salt and mustard.
  • Simmer, uncovered, 10 minutes.
  • In large bowl,combine drained beans, 1/2 can french fried onions and hot sugar mixture.
  • Spoon bean mixture into 9X13-inch baking dish.
  • Bake, covered, at 350* for 30 minutes or until heated through.
  • Top with crumbled bacon and remaining onions, bake uncovered, 5 minutes or until onions are golden brown.

6 slices bacon
1 cup packed brown sugar
1/2 cup vinegar
1/2 teaspoon salt
1 tablespoon prepared mustard (the yellow one)
1 (16 ounce) can butter beans, drained
1 (16 ounce) French style green beans, drained
1 (16 ounce) can pork and beans, drained
1 (16 ounce) can lima beans, drained
1 (15 1/2 ounce) can yellow wax beans, drained
1 (15 ounce) can kidney beans, drained
1 (2 7/8 ounce) can French-fried onions

BAKED BEAN CAKE OR MUFFINS

An unusual "veggie cake" made with baked beans! I find this similar to a carrot cake, it is easy to make and very tasty. Adapted from a recipe found in Saltscapes magazine, chef Marie Nightingale.

Baked Bean Cake or Muffins image

Steps:

  • Cake:.
  • Place raisins in a bowl and pour boiling water over them, set aside.
  • In large mixing bowl, mash beans with a fork.
  • Add eggs, oil and sugar, beat well.
  • Combine flour, baking soda, baking powder, cinnamon and salt.
  • (I sometimes add a 1/2 tsp nutmeg, 1/4 tsp cloves to spice it up a little!).
  • Stir into bean mixture.
  • Drain raisins and reserve liquid.
  • Add raisins, nuts and vanilla to batter.
  • If batter is too thick, add a little of the raisin water, stirring to combine.
  • Pour mixture into a greased 13" x 9" baking pan.
  • Bake at 325 degrees for approximately an hour or until tester inserted in centre comes out clean.
  • Remove from oven and let cool in pan on rack.
  • Icing:.
  • Combine sugar and cream in a heavy-bottomed saucepan over medium heat.
  • Bring to a boil, cook for 2 minutes.
  • Add butter, remove from heat and stir in nuts, coconut and vanilla.
  • Pour evenly over the cake, allow to cool before cutting.
  • Note: edited to reduce 1 cup oil to 1/2 cup and 1/2 cup applesauce and reduced the sugar from 2 to 1 1/2 cups with good results. This recipe will makes 24 large muffins, baking time is 30 minutes.

  • Heat a dash of oil in a large wok, and add the onion and garlic. Cook over a medium heat for a few minutes, until soft and translucent. Add the arborio rice, and cook for another minute or two. Next, add the vegetable stock a little at a time, stirring regularly and allowing most of the excess liquid to be absorbed by the rice before adding more - it should take around 20 minutes in total. The rice should be almost cooked.
  • When you've added all of the stock, add the drained beans, chopped tomatoes, and tomato puree. Mix well, and allow to simmer for another 10-15 minutes, until not too much excess liquid remains. Add about 3/4 of the grated cheese, and plenty of black pepper, and mix again to melt the cheese.
  • Transfer the mixture to a large baking dish, and top with the remaining grated cheese. Bake at 190°C (Gas Mark 5 / 375°F) for around 30-40 minutes, until cooked to your liking. For a slightly firmer bean bake, allow to stand for 10 minutes before serving.
