CHEESY BEAN BURGERS

This super-satisfying, vegetarian bean burger makes a cheap and easy after-work meal for all the family

Steps:

  • Heat oven to 190C/170C fan/gas 5. Tip the butter beans into a bowl and mash with a fork to form a rough purée. Set aside. Heat 1 tbsp of oil in a small frying pan and add the onion and garlic. Cook over a gentle heat for 3-4 mins, until softened.
  • Stir the onion mixture into the butter beans, along with the cheese, then season. Shape the mixture into 4 patties, cover and chill for 10 mins.
  • Put the cherry tomatoes in a small roasting tin and season with salt and pepper. Roast for 10-15 mins, until tender.
  • Tip the flour, egg and breadcrumbs onto three separate plates. Roll each patty in the flour, dusting off any excess, carefully roll in the egg, then finally coat in the breadcrumbs.
  • Heat remaining oil in a non-stick frying pan and add burgers. Cook for 8-10 mins, turning occasionally until golden. Drain on kitchen paper and serve with the roasted tomatoes and rocket.

Steps:

  • In medium bowl, mash beans with fork. Stir in remaining patty ingredients. Shape mixture into 4 patties, about 1/2 inch thick.
  • Spray 10-inch skillet with cooking spray. Cook patties in skillet 8 to 10 minutes, turning once, until golden brown. Remove from skillet; keep warm.
  • In same skillet, mix sauce ingredients. Cook over medium-low heat 5 to 8 minutes, stirring occasionally, until vegetables are tender. Serve sauce over patties.

Steps:

  • In a bowl mash drained butter beans; add egg, cheese, onion, green pepper, saltine crackers, garlic powder, salt, and pepper. Mix.
  • Divide into 4 patties.
  • Heat oil in a skillet.
  • Use more or less oil to reach 1/4 inch depth in pan. Make sure oil is hot.
  • Fry patties on each side until golden, about 5 minutes. (I bet I take less time, lol).

  • In a sauté pan, cook the onions in 2 Tbsp. vegan butter, 2 tsp. salt, and 2 tablespoons of water over medium heat for about 30 minutes (until caramelized with a honey-like color), stirring frequently. Then roughly chop into medium dice-size pieces and add to large mixing bowl.
  • Meanwhile, in medium-sized pot – cover frozen butterbeans with water, add bay leaf, black pepper, and 2 tablespoons of vegan butter. Bring to boil and cook until completely tender (about 30 minutes). Once done cooking, turn off heat and add 2 tsp. salt and let sit for at least 10 minutes. Then drain beans and add to large mixing bowl.
  • Using a potato masher – Mash until mixture is about 1/2 whole beans and half mashed beans. Add chopped onions, spices, and Worcestershire sauce to beans and give a good mix. Then add rice and oats to bean mixture and mix until fully combined. Then, using an ice cream scoop – make patties and place them on a tray lined with parchment paper. Move the tray to the refrigerator and let rest for about 20 minutes. (These can also be frozen and saved for a later date.)
  • In a nonstick pan – heat grape seed oil over medium-high heat until smoking, then add as many patties as the pan can hold without being crowded. Let burger cook until caramelized and crispy, then carefully flip and repeat on other side. You really only want to flip them once because they may fall apart if you flip too many times.
