Buttermilk Baked Tomatoes image

Steps:

  • Cut tomatoes in half, seed, and place cut side up in broiler safe baking dish.
  • Pour 1 tablespoon of buttermilk into each tomato half then sprinkle top of each with cheese, salt and pepper.
  • Bake at 400 degrees Fahrenheit for 15 minutes; then place under broiler until lightly browned.
  • You may add oregano, basil, tarragon, garlic, or rosemary for a flavor change.

Fried Green Tomatoes with BBQ-Buttermilk Sauce image

Steps:

  • For the tomatoes: In a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F.
  • In a shallow dish, add the cornmeal, paprika, salt, cayenne and pepper. Mix will. Place the flour on a separate shallow dish. Place the beaten eggs into another shallow dish. Dredge the slices of tomato into the flour, then the eggs and finally in the seasoned cornmeal. Place the breaded tomatoes in the oil and fry until golden brown, about 3 minutes on each side. Remove and drain the tomatoes on paper towels. Season with salt and pepper.
  • For the sauce: Mix the mayonnaise, buttermilk, barbecue sauce, vinegar, lime juice and brown sugar in a bowl. Season with salt and pepper. Serve the sauce alongside the fried tomatoes.

Steps:

  • Preheat the oven to 450 degrees F.
  • Slice the tomatoes from core to core. Remove and discard the seeds and juice, and add the tomatoes to a casserole dish. Drizzle with olive oil and sprinkle with salt and pepper.
  • Combine the 2 tablespoons olive oil, panko, Parmesan, parsley, garlic, shallots, red pepper flakes and some salt and pepper together in a small bowl. Fill the tomatoes with the panko mixture. Bake 20 minutes. Drizzle with a splash of olive oil before serving.

Steps:

  • Mix buttermilk, curry powder, 3 teaspoons salt, and pepper in large bowl. Add chicken; turn to coat. Cover; chill at least 4 hours or overnight.
  • Remove chicken from refrigerator. Line 2 baking sheets with paper towels. Mix flour, chili powder, and 3/4 teaspoon salt in shallow dish. Mix tomatoes and next 3 ingredients in another large bowl.
  • Add enough canola oil to 12-inch skillet to reach depth of 1/2 inch. Heat over medium-high heat to 375°F. Remove 6 chicken pieces from buttermilk mixture. Dip in flour mixture and turn to coat; shake off excess. Add chicken, skin side down, to skillet. Reduce heat to medium-low. Cover; cook until brown, about 12 minutes. Turn chicken over. Cook uncovered until cooked through, about 5 minutes for breasts and 10 minutes for legs and thighs; transfer to paper towels. Repeat with remaining chicken. (Salad and chicken can be made 2 hours ahead. Let stand at room temperature.)
  • Add spinach to tomato salad; season with salt and pepper. Divide salad among plates; top with chicken.

Steps:

  • Make the buttermilk ranch: In a medium bowl, whisk together the sour cream, mayonnaise, buttermilk, lemon juice, dill, pepper, onion powder, garlic powder, and salt. Refrigerate until ready to serve.
  • Make the fried tomatoes: Slice the tomatoes into ½-inch (1 ¼ cm) -thick slices. Lightly season the tomato slices on both sides with salt.
  • Place ½ cup (60 G) of flour in a medium shallow bowl.
  • In a separate bowl, combine the cornmeal, remaining ½ cup (60 G) flour, the cayenne, garlic powder. and the 1¼ teaspoons of salt and mix with a fork to combine.
  • In another medium, whisk the eggs and buttermilk together.
  • Dredge each tomato slice in the plain flour, then in the egg mixture, then in the seasoned cornmeal mixture.
  • Pour ½ inch (1 ¼ cm) of canola oil into a large skillet. Heat over medium-high heat until the temperature reaches 400ºF (200ºC).
  • Working in batches, fry the tomatoes for 1 minute on each side, until golden brown. Do not overcook the tomatoes, or they will become mushy inside. Transfer the fried tomatoes to a paper towel-lined baking sheet and season with salt.

BUTTERMILK FRIED GREEN TOMATOES

I did a search and came up with many fried green tomato recipes on here, but this one is different in that it uses buttermilk, and no cornmeal. Culinary lore says that ripe red tomatoes felt so much like human skin that eating them was considered improperly erotic. In any case, there was something suspect about this New World member of the nightshade family that the Spaniards first brought back to Europe. One solution to it's naughty nature was to eat green tomatoes, which are firm and not nearly as sweet as ripe ones. This version is delicious. Cook times are guestimates.

Buttermilk Fried Green Tomatoes image

Steps:

  • In a bowl, mix together the eggs and buttermilk.
  • Whisk in the 1 TBS flour, 1/2 the salt and 1/2 the pepper.
  • Soak the tomatoes in this liquid for about half an hour.
  • Whisk together the remaining flour, salt and pepper.
  • Heat about 1 inch of oil to 350*F in a heavy skillet.
  • (I use my cast iron one).
  • Dredge the tomato slices, one at a time in the seasoned flour, shaking off any excess.
  • Fry the slices in hot oil.
  • Do NOT crowd.
  • (slices should not overlap as they cook).
  • Fry each side until it begins to turn brown.
  • Turn in the oil and fry until golden brown and crisp.
  • Drain on paper towel.
  • Salt to taste.
  • Serve with tomato chutney.

Buttermilk Parmesan Potatoes image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly grease 9x13 inch baking dish. Arrange potatoes over the bottom of the dish, and set aside.
  • Melt 1 tablespoon butter in a saucepan over medium heat. Add the garlic and onion; cook and stir until the onion is transparent, about 5 minutes. Stir in 3 tablespoons butter until melted. Sprinkle the flour, salt, and pepper over the onion mixture. Cook and stir until mixture bubbles and thickens, about 2 minutes. Continue to stir the flour mixture while gradually pouring in the milk and buttermilk, and return the mixture to boiling.
