THE FAMOUS POOL ROOM COLESLAW BURGERS
In the little southern town of Fayetteville, Tennessee, people come from all around to have these burgers. People who have grown up in the area but have moved away make special trips to get them. There are two different pool rooms on the square (Bill's Pool Room and Honey's). However, you can find these burgers at any greasy spoon in the Lincoln County area.

Steps:
- Put all ingredients in a large pan and just bring to a boil.
- Put slaw and burger on bun.
- The traditional way of eating this is without any other condiments.
- Put the rest of the slaw in jars and seal.
- It does not have to be refrigerated until opened.
ULTIMATE STEAKHOUSE BURGER
This is by far the best burger recipe I have tried. It is a recipe I clipped from a magazine--sorry folks, just can't remember which one. TRY THESE you'll never fix a plain hamburger again. They are so tender and juicy and the bacon fat adds just a hint of smoky flavor. I don't think you'll be sorry!

Steps:
- Fry bacon in skillet. Place 3 tablespoons of bacon fat into heatproof bowl and set in refrigerator while preparing other ingredients.
- Put bread in bowl, add milk, and let mixture sit about 5 minutes. Using a fork, mash bread and milk till smooth paste forms.
- Break up beef into small bits into a medium size bowl. Season with salt and pepper, then add garlic, bread paste, and reserved chilled bacon fat. Lightly knead all ingredients to mix and incorporate. Divide into 4 patties.
- Oil cooking grate and grill burgers over a very hot fire, without squeezing down on them, until well seared on both sides (7-10 mins depending on preference for doneness). Top burgers with bacon previously cooked. Serve on buns.

BONNIE'S HUBBY BILL'S HAMBURGER STEAK

- My Complete Seasoning is a mix I use to cook with. It contains: 3 tablespoons salt, 1 tablespoon paprika, 1 tablespoon onion powder, 1 tablespoon garlic powder, 1/2 teaspoon white pepper, 1 1/2 teaspoons thyme, 1/2 teaspoon black pepper, 1/2 teaspoon oregano. Mix together and keep in a shaker bottle by the stove. Good on just about everything. Close to Nature's Seasoning in flavor, but a little stronger. Add 1 tablespoon cayenne pepper to it for Latin dishes.
- PREPARE HAMBURGER STEAKS: Mix the hamburger in a small bowl, add the chopped green onion, garlic powder, My Complete Seasoning and mix well. Refrigerate the meat mixture for about an hour.
- Shape the meat into 3 to 4 patties. Place the patties in a non-stick medium size skillet and brown on both sides. Mop up any grease that has accumulated with a paper towel on the sides of the pan, but leave the brown pieces and about 1 tablespoon of grease which contain a lot of flavor for the gravy.

- Mix the one can of mushroom soup with the one package of gravy mix in a small bowl, and add about 3/4 cup to 1 cup of water a little at a time, whisking until smooth, add the mushrooms. The gravy should be on the thick side, Add the the mixture to the skillet. Gently move the hamburger steaks around to pick up the flavoring. The gravy will be a nice tan color. Then put the lid on and simmer about 20 minutes, stirring occasionally. Spoon the gravy up onto the hamburger steaks while it simmers. Serve with mashed potatoes or hot buttered noodles and peas. Enjoy!

An old fashioned hamburger steak recipe topped with cream of mushroom. Serve with some warm mashed potatoes and your favorite green vegetable. Our family loves this. Makes a great cheap meal!

- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together the ground beef, crackers, milk, pepper, salt, garlic powder, and Italian seasoning. Form 6 or 8 large beef patties, and place in a 9x13 inch baking dish, or other shallow casserole dish. Pour the condensed soup evenly over the top of the patties, and sprinkle canned mushrooms over the top. Cover the pan with a lid or aluminum foil.
- Bake for about 45 minutes in the preheated oven, or until beef patties are well done.

BILLS GRILLED STEAKS
I love to grill steaks and I like to do it kind of simple. The most important thing is the steak itself. Please use a nice cut that is prime or choice. I like strips and filets but a rib eye is great too. weather you use a gas grill or a match lighted charcoal make sure the grille is hot hot hot, Cook that hunk of meat you choose any way you like it EXCEPT Well done, Then enjoy!

- Rub your chosen steak with olive oil. Add garlic salt.I use Lowerys but any good brand will do.put a good black pepper on steaks. Sprinkle lightly with dried basil. Let stand at room tempature for an hour or so. cook and eat that baby.spice measurements are app. Something I have done lately is buy a whole filet . cut it in half and cook half with the seasonings. Then slice it thin about 1/4 inch. Serve it quickly so it does not get cold.

UNCLE BILL'S HAMBURGER PATTIES
I cooked these patties for a Fund Raiser and served over 260 persons, both young and mature. They were a tremendously big hit with all.

Steps:
- In a large mixing bowl, mix together ground round, beaten eggs, onions, soda crackers, garlic powder, salt, pepper and barbecue sauce. Mix until well incorporated.
- Weigh out hamburger patties to 6 - 7 ounce each.
- Press together and flatten to about 3 1/2" in diameter or use a mold.
- The patties should be about 3/4" thick.
- Using a round wooden spoon handle (about 1/4" round), make a hole in the center of the hamburger pattie.
- In a frying pan over medium-high heat, heat olive oil.
- Place 3 patties into the hot oil and fry for about 2 to 3 minutes, the hole will begin to close.
- Turn patty over and continue to fry for about 2 to 3 minutes.
- The hole that was made in the pattie will fill in when the hamburger is cooked through properly.
- Check for doneness to make sure there is no pink showing.
- NOTE: If the burger mixture does not hold together when squeezed, add some milk and mix to blend.
- Serve in a nice large bun that is warmed and buttered with a spread of mayonnaise, Dijon mustard, a slice of sweet onion, a slice of a large tomato, and a leaf of lettuce.
- A slice of Swiss cheese layered on the burger patty is great.
- A pickle of your choice adds an additional touch.
- Fry some mushrooms and spread some over the top of the bun.
- Fried caramalized onions are a good added touch.
- This makes a fantastic hamburger.

- Place the bacon in a large pot or Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and reserve drippings in the pot.
- Melt butter in bacon drippings in the pot over medium heat. Stir cabbage, onion, salt, pepper, and sugar into butter and bacon drippings. Cover the pot. Cook, stirring occasionally, until cabbage and onion are tender, 15 to 20 minutes. Crumble bacon into cooked cabbage.

- Combine all ingredients (except noodles) together in medium to large skillet (will depend on the amount of hamburger used).
- Brown humburger, stirring as needed to obtain a ground consistancy.(Adding sugar will give this meal a slightly sweet taste)
- Set aside.
- Prepare noodles according to package directions.
- With about 1 minute left in noodles cooking time, add hamburger and finish cooking. Serve hot.
