Steps:
- Place ingredients in bread machine pan in the order suggested by the manufacturer.
- Select White Bread setting. Start.
- To bake bread in oven: select dough or manual cycle.
- Once cycle is complete, shape dough and place in a greased loaf pan.
- Allow to rise in a warm spot until doubled in size. Bake in a preheated 350 degrees F (175 degrees C) oven for 35 to 45 minutes.
- In my Bread machine start to finish is 2 1/2 hours. This makes a 1 1/2 pound loaf.
BUTTERMILK CHEESE BREAD (BREAD MACHINE)
I needed bread and wanted to use what I had at home. This is what I came up with. It came out of the oven with a crackly, blistered crust and a great light texture. Excellent with soup or for sandwiches.

BREAD MACHINE LIGHT MOIST BUTTERMILK BREAD
This is a really good light easy bread recipe. It also keeps very well. I make this recipe in a Zojirushi Home Bakery Supreme with excellent results every time.

- 1. Measure out all of the ingredients.
- 2. Place the cold buttermilk in the microwave for 30 seconds to warm. Beat the egg and stir into the buttermilk.
- 3. Place ingredients into bread machine in order recommended by manufacturer. I put liquid (buttermilk and egg) in first then add the flour, salt & sugar. Cut the butter into small pieces and scatter around on top. Make a little hole in the top center and add the yeast making sure not to let the yeast touch any wet ingredients.
- 4. Set machine to quick bake with medium crust. If you like a lighter loaf you can set it for light crust.
- 5. This recipe can also be stirred up using the dough cycle in the machine and baked in a conventional oven at 350 degrees for 35 minutes.
- 6. Cinnamon Raisin Bread- add 1 teaspoon of ground cinnamon, 4 Tablespoons of sugar and 1/2 - 1/3 cup of raisins. Add the raisins according to manufacturer's instructions for your brand of machine.

- Add all ingredients in the order listed to the bread maker pan, reserving 1/3 of the cheese for the top. *Check your brand's manual for the correct order to add ingredients if you are not using a Cuisinart bread machine. If it differs, add them in the order that your manual states.
- Select the basic/white bread setting. Choose the 2 lb loaf size and your preferred crust color. If baking in the oven, choose the dough setting. Press start and allow machine to run through the cycle. *See notes for making a smaller loaf
- Baking in Machine: At the end of the last kneading cycle, remove the kneading paddle. This is optional and can also be done once the bread cools. When the bread completes it's last rise, brush the top and sides with an egg wash and top with the remaining cheese. Once the bake cycle is complete, remove from the pan immediately.
- Baking in Oven: Once the dough cycle is complete, remove from the bread pan, punch down, cover with a towel and let rise for 30 minutes in a warm place. Shape the bread into a circle or oval. Brush the top and sides with an egg wash and top with the remaining cheese. Bake at 350° for 30-35 minutes. The bread will sound hollow when tapped if it's done.
