LIGHT BUTTERMILK RANCH DRESSING

This is a great ranch dressing mix, which is lower in sodium and without the preservatives found in the commercial brands. This dressing mix not only makes a good salad dressing and dip, it is also good as a sauce on cooked vegetables, baked potatoes, fish, poultry and meat. This recipe makes 1/2 cup of the dry mix, or enough to make 8 cups of the finished dressing. You can make the dry mix up in larger quantities and package it in small decorative jars just large enough to hold one recipe for holiday gifts. When wrapping the jars of the mix, you could include a copy of the recipe and the ingredients for making more of the dry mix. This way if the recipient likes the dressing, they can make more of it for themselves and share it with even more friends. Recipe is from Cook It Light.

Steps:

  • Place the scallions, basil, lemon juice, mustard, olive oil, garlic, salt, and pepper in the bowl of a food processor fitted with the steel blade. Transfer the dressing to a container, cover, and refrigerate for 1 hour for the flavors to develop.
  • Arrange the lettuce, tomatoes, and onion artfully on salad plates and drizzle with the dressing. Sprinkle with salt and pepper and serve.
  • Cook's Note: Ina substituted Boston lettuce for Bibb lettuce when taping this episode.

BUTTERMILK RANCH VEGGIE OR CHIP DIP

My husband loves to dip his veggies and chips in Ranch Dressing but prefers his dip to be thicker than dressing. We didn't care for the Hidden Valley Ranch Dip Mix so I decided to try using the dressing mix to make a dip and he loved it. I now keep both ingredients on hand at all times so I can whip up some dip whenever we need it. It is wonderful with both veggies and chips. We prefer Breakstone sour cream, especially if using the Fat Free or Lite variety.

HEALTHIER BUTTERMILK RANCH DRESSING

Cut some calories the next time you make ranch by using Greek yogurt. This healthier ranch dressing version can be thrown together in 5 minutes, and, unlike bottled dressing, you know exactly what is in it. I like to add a pinch of cayenne for some kick, but I'll leave that up to you.

It's creamy too thanks to the secret ingredient, Mexican Crema, which ...
