Steps:
- Mix the yeast and water in the bowl of your mixer and let proof for 5-10 minutes.
- Meanwhile, heat the buttermilk and butter over low heat until the butter melts.
- The mixture will look badly curdled- don't worry, that's what happens when buttermilk is heated.
- It will be fine.
- Mix the salt, baking soda and sugar into 1 cup of the flour.
- Pour over the yeast, and mix until thoroughly combined.
- Put the bowl on your mixer with the dough hook attachment, add another cup of flour and mix until the flour is incorporated.
- Keep adding flour until the dough comes together and is no longer sticky.
- Then let the dough knead in the machine 5-10 minutes.
- Take out of the bowl and finish kneading by hand until the dough is smooth.
- Turn into a buttered bowl, cover with plastic wrap, then a towel, and then let it sit to rise until doubled.
- Punch down the dough, divide and shape into 2 loaves, then place in greased loaf pans.
- Set aside for the second rising.
- Heat the oven to 350 degrees F.
- Bake the loaves until done, about 30-45 minutes.

BUTTERMILK BREAD II
This bread is delicious plain or toasted. I make it at least once a week.

Steps:
- Proof yeast in warm water.
- Place the butter or margarine and buttermilk in a small saucepan. Heat slowly until butter or margarine has melted. Cool to lukewarm.
- Place sugar, salt, baking soda, buttermilk mixture, and yeast in large mixing bowl. Add 3 cups flour one cup at a time, and mix with the dough hook attachment of an electric mixer. Gradually add the remaining flour while continuing to mix. When dough is not sticky, turn out on a lightly floured surface. Knead for several minutes, until the dough is soft and smooth. Place in a greased bowl, and turn once. Allow to rise until doubled in size.
- Punch down the dough. Divide, and shape into 2 loaves. Place in two well greased 8 x 4 inch bread pans. Allow to rise until dough has risen one inch above pans.
- Bake in a preheated 375 degrees F (190 degrees C) oven for 30 to 35 minutes. Loaves are done when nicely brown and hollow sounding when thumped.

- Mix the milk and lemon juice in a jug. Leave at room temperature for 5-10 mins until the milk has thickened slightly. It won't thicken as much as traditional buttermilk, but it's a great substitute when making scones, soda bread or pancakes. Don't worry if the mixture looks curdled or has small white lumps in it, it will be fine once cooked.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat.
- Melt butter in a skillet over medium-high heat. Saute onion in hot butter until soft and translucent, 6 to 7 minutes. Cool to room temperature.
- Combine cooled onion, beef chuck, bread crumbs, buttermilk, ketchup, eggs, Worcestershire sauce, salt, black pepper, hot sauce, tarragon, and Italian seasoning in a bowl; mix together with a fork and let sit until breadcrumbs absorb moisture, about 10 minutes.
- Turn meatloaf mixture out into the center of the prepared baking sheet and form into a 9x5-inch loaf.
- Bake in the preheated oven for 45 minutes. While meatloaf is baking, whisk brown sugar, mustard, and cider vinegar together in a small bowl. Spread brown sugar glaze over the top of the meatloaf and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

BREAKFAST APPLE BRAN LOAF

- Preheat the oven to 375°F. Grease a 9x5 loaf pan or line it with parchment paper.
- Into a large mixing bowl, combine the eggs and buttermilk and whisk well to combine. Add the grated apple, melted butter and vanilla and stir to mix. Add the bran cereal and let it sit for 5 minutes to absorb liquid.
- While you're waiting, in another bowl, combine the dry ingredients. Combine the all purpose flour, oat bran, cane sugar, muscavado, pecans, baking soda, baking powder, sea salt, cinnamon and nutmeg. Stir to mix. Add the wet ingredients in with the dry and stir just to combine, do not overmix.
- Pour the batter into the prepared pan, it should come up no more than 3/4 way up the pan. Sprinkle the top of the loaf with a handful of oat bran and brown or turbinado sugar. Bake on the middle rack for 40-45 minutes or until a toothpick in the center comes out clean. Allow it to cool completely before removing it from the pan.
- Slice with a serrated knife and serve with butter on the side.
- Loaf can be kept covered at room temperature for 3 days or for 5 days in the fridge.

BUTTERMILK LOAF
This terrific recipe is from Roben Ryberg's, "The Gluten-Free Kitchen". This is her favorite loaf and mine as well. You can have this loaf of bread on your table in 35 minutes start to finish. But most importantly, it taste's great! No store-bought wheat-free/gluten-free loaf that I've ever tried comes even close to this. Enjoy!

- Preheat oven to 350 degrees F.
- Optimally, have the buttermilk between 80 degrees F and no warmer than 105 degrees F.
- This is important for the yeast to activate.
- Too low a temperature and it won't activate.
- Too high and it will kill the yeast.
- In the measuring cup in which you've measured the buttermilk, add the yeast to the milk; stir to dissolve the yeast and set aside for now.
- In a medium bowl, combine all the dry ingredients.
- To the dry ingredients, slowly add the oil (stirring all the while) and then slowly add the milk/yeast mixture (also while stirring).
- Mix well; dough will look wet, thick, and pasty.
- Place dough into your well-greased 9- x 4-inch loaf pan.
- Wet hands and smooth out the top of the dough, then make an indentation down the center lengthwise of the loaf.
- I use the back of a wet spoon for the indent.
- Bake for 25-28 minutes.
- Loaf will just begin to brown.
- Test for doneness with a long toothpick, much as you would for a cake.
- Cool briefly before removing from pan.
- Finish cooling on a cooling rack.
- Refrigerate or freeze extra servings.
