FLUFFY BUTTERMILK PANCAKES WITH MAPLE-BUTTER SYRUP

I've been perfecting my Pancake recipe over the years and I finally did it! These pancakes are super fluffy and delicious. My family was truly impressed. Makes about 12 - 6"diameter pancakes. I use non-stick spray on my griddle but you can use butter.

Fluffy Buttermilk Pancakes With Maple-Butter Syrup image

Steps:

  • PANCAKES: In a large bowl, mix Flour, Baking Powder, Baking Soda, Sugar and Salt. Set aside.
  • Separate egg yolks from egg whites.
  • Beat egg whites and cream of tartar on high speed until high speaks form, set aside.
  • Beat milk, egg yolks, vanilla, and melted butter together at slow speed until mixed.
  • Add Milk mixture to Flour mixture slowly while beating at a medium speed until completely blended.
  • Add 1/3 of the egg whites to the batter and mix together. Fold in (using a spoon of spatula) the rest of the egg whites carefully, do not over mix!
  • Grease your skilett or griddle with your preference of non-stick spray or butter and set to medium temperature (or 350 degrees).
  • Drop about 1/3 cup of batter on pan for each pancake and cook on that side until you see a few bubbles on the surface of the batter.
  • Flip your pancakes and cook for about another 1-2 minutes.
  • SYRUP: Place Maple syrup in a microwave safe container, add butter and heat in microwave for 30-45 seconds until butter is melted. Mix with spoon and serve over pancakes.

Buttermilk Pancakes with Blueberry Syrup image

Steps:

  • Cut the butter into small pieces and melt in a small saucepan over medium heat or in the microwave. Remove and cool.
  • Heat the griddle over medium heat.
  • Whisk together the eggs, buttermilk, flour, sugar, baking powder, cardamom, vanilla, baking soda, cinnamon, salt and melted butter together. Stir until you have a lumpy batter, but don't over mix.
  • Carefully wipe the griddle down with vegetable oil using a paper towel. Add a very small pat of butter to the griddle and swirl to melt. Once the butter is foamy, add the pancake batter using a 1/4-cup ladle. Flip the pancakes once you see a ring of bubbles around the edges, about 3 minutes. Cook the next side for about 2 minutes more.
  • Wipe the griddle clean and re-oil and butter between each batch. Repeat for the remaining batter. Serve immediately with Blueberry Syrup.
  • Add the syrup and blueberries to a small saucepan over medium heat. Simmer for 10 minutes, until slightly thickened. Smash a few of the berries with a wooden spoon against the sides of the pan. Serve over buttermilk pancakes.

From the Gourmet International Pancakes and Waffles Cookbook circa 1970. My mom gave me this book when I first moved out on my own. I just recently tried the buttermilk pancake recipe and I can say that we haven't used another pancake recipe since. Light, fluffy, and absolutely delicious. Before this my family preferred a box mix (yuck!) so I am so glad I found this very simple recipe. This feeds my VERY hungry family of 3 sufficiently so I would definitely double if you have a larger family.

Steps:

  • Place sifter into a medium sized bowl. Sift flour, sugar, baking powder, and salt.
  • Combine the eggs, buttermilk, and melted butter in another bowl (I use a large liquid measure).
  • Add wet ingredients into dry ingredients and whisk together until combined.
  • For each pancake pour 1/3 cup batter (for a pretty large pancake) into a preheated skillet on medium heat that has been melted with butter or sprayed with non-stick spray. Once bubbles start to form and pop in the middle, flip the pancake and brown on the second side.
  • Serve with your choice of topping. We like homemade syrup, or jam with sour cream and vanilla yogurt.

Old-Fashioned Buttermilk Pancakes image

Steps:

  • Preheat a griddle to medium heat, according to manufacturer's instructions.
  • Mix flour, sugar, baking powder, baking soda, and salt together in a large mixing bowl. Add buttermilk, eggs, and butter; stir together until well blended but do not stir out all of the small lumps. Overmixing the batter will make the pancakes tough and rubbery.
  • Pour oil on a paper towel and spread over the griddle to grease lightly. Test the griddle with a few drops of water; water should dance across the surface and not instantly steam and evaporate.
  • Working in batches, drop 1/4 to 1/3 cupfuls batter for each pancake onto the hot griddle. Cook until the sides start to shine and look stiff, 3 to 5 minutes. Flip and cook until golden on the other side, about 2 more minutes. Repeat to make remaining pancakes.

Steps:

  • Combine flour, sugar, baking powder, baking soda in a bowl. Mix together well. Add egg (beaten). Then add the oil and Buttermilk. Mix well, but do not over mix. Batter is best when it has some small lumps.
  • Heat the skillet to 380F Degrees. Pan is ready when you can dribble droplets of water on the pan and it bounces. Pour the batter to the desired size of pancakes. Wait for the pancakes to bubble and cook on the edges before flipping over. Pancakes are done when they are golden brown on both sides and when they bounce back when touched.
