BUTTERNUT SQUASH SOUP II

This is a thick, rich soup with tons of flavor. Something I whipped up off the top of my head, with things I had on hand. Super easy, quick, and a great way to use squash. An instant hit at my house.

Steps:

  • Melt the butter in a large pot, and cook the onion, celery, carrot, potatoes, and squash 5 minutes, or until lightly browned. Pour in enough of the chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 40 minutes, or until all vegetables are tender.
  • Transfer the soup to a blender, and blend until smooth. Return to pot, and mix in any remaining stock to attain desired consistency. Season with salt and pepper.

Butternut Squash Soup image

Steps:

  • Chop the squash in half, lengthways. Remove the seeds then chop the squash into chunks, leaving the skin on. Peel the potatoes and the onion, then chop these into chunks as well.
  • Put the squash, potatoes, onion and garlic (with skin on) into a large roasting tin. Drizzle oil over the vegetables and sprinkle the cumin, salt and pepper all over. Roast for around 20 minutes at about 200 degrees.
  • Take the softened vegetables out of the oven and remove the garlic skins.
  • Place the roasted veg (and skinless garlic) into a food processor and whizz them up while gradually adding the chicken stock, until you get a tasty mush of vegetables.
  • Transfer the puree to a saucepan and warm it through. You can add more stock/water if you like a runny soup, or you can boil off some of the stock already added if you like it thicker.
  • You could serve this with some crusty bread, creme fraiche, some chopped spring onions and a sprinkle of salt and pepper.

Steps:

  • Add oil, garlic and onion to large stockpot over medium heat.
  • Saute for 3-4 minutes.
  • Add sage, salt, pepper, broth and squash.
  • Bring to a boil.
  • Cover, reduce heat and simmer for 20 minutes (or until squash has a tender consistency).
  • Use stick blender to lightly puree, leaving some chunks, or puree half of the soup in a food processor or blender and return to pot.

  • Preheat oven to 450.
  • Cut squash in half lengthwise, scoop out seeds and place cut side down on a baking sheet.
  • Roast the squash for 40-45 minutes or until it is very tender.
  • Allow squash to cool.
  • While the squash is roasting,saute the onion and ginger in the butter over a medium heat until the onion is translucent and soft.
  • Add the broth, cover and simmer for 10 minutes.
  • Scoop the cooled squash from the skin.
  • Place half the squash and half the broth in a blender, puree until smooth.
  • Repeat with the other half of the squash and broth.
  • If needed, add water to achieve the desired consistency.
  • Return the soup to the sauce pan and reheat.

  • Melt the butter in a large pot over medium heat, then add the garlic and onion and sauté for 1-2 minutes, until the onion is translucent.

  • Heat the oil in a heavy four-quart saucepan. Add the onions, reduce heat to low, and saute slowly until they are tender but not brown. Stir in the garlic.
  • Add the squash and water, cover and simmer until the squash is tender, about 40 minutes. Allow the mixture to cool for about 15 minutes, then puree in two batches in a food processor. Up to this point the soup can be prepared in advance, even refrigerated or frozen.
