BUTTERSCOTCH PIE MY WAY

This is a recipe that I found some years ago and adapted for the microwave. Butterscotch Pie has always been a favorite of mine and they don't come any easier then this one! Prep time does not include chilling time in the fridge.

Butterscotch Pie My Way image

Steps:

  • In a large microwave safe bowl, combine the brown sugar, cornstarch, salt, and milk. Combine well, then cook on high in the microwave for 8 minutes. Remove the bowl from the microwave.
  • Pour a small amount of the mixture into a small bowl. Add the egg yolks to the smaller bowl, mixing until well-combined. Pour the egg mixture back into the large bowl, combining well.
  • Return the bowl back to the microwave and cook on high for and additional 1-2 minutes, until the mixture has thickened. Remove from the microwave and stir in the butter and vanilla. Stir until the butter has melted.
  • Pour into the prepared pie shell and chill for at least 2 hours.

1/2 teaspoon salt
2 cups milk
2 egg yolks, beaten
1 tablespoon butter
1 teaspoon vanilla
1 pie crust, baked

Steps:

  • Preheat oven to 350°F Combine first 5 ingredients in a large bowl. Combine vanilla with next 2 ingredients. Add to flour mixture; stir until well blended (dough will be dry).
  • Turn dough out onto a lightly floured surface and knead lightly 7 or 8 times. Shape dough into a 16-inch-long roll. Place roll on a baking sheet coated with cooking spray; flatten to 1-inch thickness.
  • Bake for 30 minutes. Let cool. Cut roll diagonally into 24 (1/2-inch) slices, and place slices, cut sides down, on baking sheet. Reduce oven temperature to 325F and bake for 10 minutes. Turn cookies over and bake for an additional 10 minutes (the cookies will be slightly soft in center but will harden as they cool). Remove from baking sheet, and let cool completely on wire rack.

Steps:

  • Preheat oven to 325°F.
  • Line a 9 x 13 x 2” rectangular pan with aluminum foil.
  • Set aside.
  • Sift bread flour, cake flour and salt 3x.
  • Set aside.
  • In a small saucepan, melt butter over low fire.
  • Remove from heat the transfer in the bowl of the mixer.
  • Add brown sugar, liquid glucose and vanilla extract.
  • Beat on medium speed until combined.
  • Add eggs one at a time, mixing until blended.
  • At low speed, add dry ingredients and cashew nuts.
  • Pour mixture into the prepared pan.
  • Bake fro 30-45 minutes until top is firm.
  • Cool on wire rack.
  • Cut into bars.
