These are delicious cookies and easy to make. Something a little different from regular chocolate chip! They also freeze well.

Steps:
- Preheat oven to 375°.
- Combine butter and sugar and beat until fluffy Add egg and vanilla and mix very well.
- Gradually add flour, salt and baking soda while mixing until smooth.
- Stir in chips by hand.
- Drop by teaspoonfuls on lightly greased baking sheet.
- Bake until just browned approximately 10-13 minutes. Watch them closely near the end to prevent butterscotch chips from burning!

- Chill for about an hour.
- Preheat oven to 350°.

- Let stand for a minute or so and remove to wire racks.

CHOCOLATE BUTTERSCOTCH CHIP COOKIES
I could only find similar recipes using cake mix, so I thought I'd share a more "homemade" version of these yumm-o cookies. These are very chocolatey...just the way I like 'em. I guess you could also use chocolate chips, peanut butter chips, or anything else instead of the butterscotch, but this is how we likes 'em done.

- Preheat oven to 350 degrees.
- Combine flour, baking soda, salt, and cocoa in mixing bowl.
- Beat butter, both sugars, and vanilla until creamy.

CHOCOLATE BUTTERSCOTCH COOKIES
Steps:
- HEAT oven to 375 degrees F.
- COMBINE shortening and brown sugar in large bowl; beat at medium speed until well blended. Beat in eggs. Add cake mix gradually at low speed. Mix until well blended. Stir in cereal, butterscotch chips, chocolate chunks, chocolate chips and nuts. Stir until well blended.
- SHAPE dough into 1 14-inch balls. Place 2 inches apart on ungreased baking sheets. Flatten slightly. Shape sides to form circle, if necessary.
- BAKE 7 to 9 minutes or until lightly browned around edges. Cool 2 minutes on baking sheets; transfer to cooling racks to cool completely.

- Cream butter, add sugar and cream well. Beat in eggs, then add sifted dry ingredients, vanilla and nuts.

- Layer the ingredients in the order given in a one quart wide mouth canning jar. Firmly pack each ingredient in place. It will be a tight fit, but all ingredients will fit in the jar. Use pinking shears to cut an 8 or 9 inch circle from gingham, calico, or a seasonal fabric. Place the fabric over the wide mouth lid and rim and secure with a rubber band.
