BUTTERY CHERRY-CHIP SCONES (WHITE WHOLE WHEAT FLOUR)
These dense, rich and buttery scones are full of dried cherries and mini chocolate chips--perfect with coffee or tea for breakfast or brunch.

Steps:
- Heat oven to 400°F.
- In large bowl, mix flour, sugar, baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like fine crumbs. Stir in cherries, chocolate chips, egg, vanilla and whipping cream just until dry ingredients are moistened.
- Place dough on lightly floured surface; gently roll in flour to coat. Knead lightly 10 times. On ungreased cookie sheet, roll or pat dough into 8-inch circle. Cut into 8 wedges with sharp knife that has been dipped in flour, but do not separate wedges. Sprinkle with sugar.
- Bake 18 to 20 minutes or until light golden brown. Immediately remove from cookie sheet; carefully separate wedges. Serve warm.

ULTRA-BUTTERY IRISH SCONES
These tender, flaky scones are all about the butter-but the tart dried currants and a finish of flaky salt certainly don't hurt things.

- Preheat oven to 375°. Line a rimmed baking sheet with parchment paper.
- Whisk milk, granulated sugar, and kosher salt in a medium bowl until sugar and salt dissolve. Whisk flour and baking powder in a large bowl. Cut 10 Tbsp. butter into 1/2" cubes, add to flour mixture, and blend with a pastry cutter or your fingertips until pea-size pieces form with some larger chunks remaining. Add milk mixture and stir with a fork until large clumps form. Gently knead in the bowl until dough just comes together. Transfer to a lightly floured work surface.
- With a lightly floured rolling pin, roll out dough to a 14x8" rectangle, with long side facing you. Heat 2 Tbsp. butter in a small, microwave-proof bowl in the microwave until softened but not melted, about 20 seconds. Spread evenly over dough with fingertips, then sprinkle currants evenly on top and press to adhere. Fold up bottom third of dough over center, then fold down top third to meet bottom edge, as if folding a letter. Fold in half crosswise, then, using a rolling pin, gently flatten into an 8x4" rectangle.
- Cut dough in half lengthwise and in quarters crosswise to form 8 even squares. Transfer to prepared pan, spacing 2" apart. Sprinkle tops generously with demerara sugar and lightly with flaky sea salt.
- Bake until scones are golden brown, 25-30 minutes. Meanwhile, melt remaining 4 Tbsp. butter in a small saucepan over medium-low heat. When butter bubbles, remove from heat and skim off foam from surface. As soon as the scones come out of the oven, lightly brush tops with clarified butter, leaving behind white solids in bottom of saucepan. Cool scones on sheet on a wire rack and serve hot, warm, or room temperature.
CHERRY-CHOCOLATE CHIP SCONES

- Heat oven to 400 . Spray cookie sheet with cooking spray.
- In medium bowl, mix flour, sugar, baking soda and salt. Cut in butter, using pastry blender, until mixture looks like fine crumbs. Stir in yogurt, cherries and chocolate chips (dough will seem a little crumbly).
- On lightly floured surface, shape dough into a ball. Knead dough lightly 10 times. Divide dough in half. On cookie sheet, pat each half of dough into 6-inch circle. Cut each circle into 6 wedges, using sharp knife, but do not separate wedges.
- Bake 10 to 15 minutes or until golden brown. Immediately remove from cookie sheet to rack. Carefully separate wedges. Cool 10 minutes. Serve warm.

Inspired by an April/May 2003 Taste of Home recipe, and adapted to fit our tastes, these have been a big hit around here & DH's work.

- Sift together flour, sugar, baking powder & soda.
- Cut in butter.
- Combine yogurt & 1/4 cup milk; stir into flour mixture just until moistened.
- Add in the cherries & chips & knead about 8-10 times.
- On greased baking sheet, pat the dough into a 9-inch circle.
- Cut into 8 pie shaped wedges.
- Mix the 2 Tablespoons milk with the one drop of almond extract & brush over the top of each wedge.
- Separate wedges slightly & bake at 400 degrees for 20-25 minutes or until golden brown.
- Serve warm with butter.

- Line baking sheet with parchment paper.
- Combine all dry ingredients, except sanding sugar, with the cherries (or other dried fruit) in the bowl of an electric mixer fitted with a paddle attachment.
- Add butter, and mix on medium-low speed until the mixture resembles coarse meal.
- Add white chocolate chips. Add buttermilk and mix until just combined.
- Turn out the mixtures onto a clean work surface. With hands, pat mixture into two 16" x 4" rectangles that are 1/2 inches high. Score rectangle into 16 triangles.
- Cover with plastic wrap and transfer to the freezer for at least 2 hours.
- Heat oven to 350°.
- Remove dough from the freezer and cut into triangles with a sharp knife.
- Place scones two inches apart on the prepared baking sheet.
- Brush scones with heavy cream and sprinkle with sanding sugar.
- Bake until lightly golden, about 15 minutes.
- Freezing the dough at least two hours keeps scones from spreading too much. Frozen dough will keep for up to 3 weeks.
