Steps:

  • Preheat oven to 350 degrees.
  • Line a jelly roll pan with a sheet of aluminum foi and set aside. May also use a Silpat mat.
  • Place the butter, vinegar, Tabasco sauce, cayenne pepper, garlic salt annd salt in a medium-size heavy saucepan over medium heat and stir until the butter is melted and the seasonings are well incorporated.
  • Add the cashews and toss until they are well coated with the mixture.
  • Pour nuts onto the prepared and spread so they form a single layer.
  • Bake until the nuts are dark golden brown, 10 to 15 minutes.
  • When nuts are done, remove them from the oven and cool 5 minutes. Scrape the nuts and any dry seasonings from the bottom of the pan into a mixing bowl. Toss well.

Roasted Cajun Nuts image

Steps:

  • Preheat the oven to 200 degrees F. Line a baking pan with parchment.
  • Mix the sugar, Cajun seasoning and cayenne together in a small bowl. If your Cajun seasoning does not contain salt, add 3/4 teaspoon salt.
  • Mix the warm bacon fat or butter with the garlic in a large bowl. Add the almonds, cashews, pecans and peanuts and toss to coat well.
  • In another large bowl, whisk the egg white vigorously until foamy. Add the nuts to the egg white and toss to coat. Add the seasoning mix and toss to coat.
  • Spread the nuts on the prepared baking pan in a single layer. Bake, stirring every 10 to 15 minutes, until glossy and lightly toasted, about 1 hour. Cool completely; the nuts will crisp as they cool.

I don't know if this is authentic to the recipe, but I also like to let the finished nuts cool just a bit then toss them in a bag with some garlic salt before serving.

Steps:

  • Combine the cashews, paprika, turmeric, salt and water together in a bowl and let stand for 1 hour.
  • Heat the vegetable oil in a skillet and fry the cashews until they're browned evenly.
  • Remove from the oil, drain on paper towels and let cool slightly.
  • In a plastic zipper bag, combine the chili powder and garlic salt to taste; toss the nuts around in the mixture and serve.

Steps:

  • Preheat oven to 350°F. Spray sheet of foil with nonstick spray; set aside. Lightly spray rimmed baking sheet with nonstick spray. Toss cashews and all remaining ingredients in medium bowl. Spread cashew mixture evenly in single layer on prepared sheet.
  • Bake nuts until golden brown and coated with maple syrup mixture, stirring occasionally, about 20 minutes. Immediately pour nut mixture out onto foil, spreading evenly. Cool 10 minutes, then separate and break apart any nut clusters. Cool completely. DO AHEAD: Can be made 3 days ahead. Store airtight at room temperature.
