ONE POT CAJUN CHICKEN & RICE RECIPE BY TASTY
Here's what you need: chicken breasts, cajun spice, onion, bell pepper, black beans, rice, chopped tomato, chicken stock, olive oil, salt, garlic powder, hot paprika, black pepper, onion salt, cayenne pepper, dried oregano, dried thyme

Steps:
- Rub chicken breasts with olive oil and then the cajun spice mix (store-bought or homemade)
- Sear the chicken breasts on each side for about 2 minutes, then remove from the pan.
- Add some more oil and fry the onions and peppers until softened.
- Add the black beans and fry for a couple of minutes. Add the rice and fry for a further minute.
- Place the chicken back on and cover in chopped tomatoes.
- Add chicken stock and more cajun spice (to taste).
- Bring to boil, then cover and simmer for 25 minutes.
- Enjoy!
CAJUN STYLE RED BEAN AND RICE SOUP
This is a very hearty, spicy soup. Makes for a filling first-course serving.

Steps:
- In a large pot over high heat, heat the oil. Add the bacon and saute for 2 minutes. Add the onions, bell pepper, garlic, bay leaves, sausage and ham hock and saute for 2 more minutes.
- Add the beans and saute for 2 more minutes. Stir in the Cajun-style seasoning, Worcestershire sauce and stock. Bring to a boil, reduce heat to low and simmer for 1 hour, stirring occasionally.
- Add the salt, cover the pot and simmer for an additional 15 minutes. Turn off the heat and allow the pot to sit, covered, for about 20 minutes. Discard the ham hock.
- Ladle soup into individual bowls. Top each serving with 1/4 cup rice and 1 tablespoon green onion.

- Prepare Fast Chicken Soup Base. Bring to a simmer.

CHICKEN RICE SOUP

Steps:
- Preheat the oven to 400 degrees F.
- Drizzle the chicken breasts with olive oil and sprinkle with the ground thyme and some salt and pepper. Put the chicken in a roasting pan and roast until cooked through, about 20 minutes. Set aside.
- In a pot over medium heat, melt the butter and saute the celery, carrots, onions and bell peppers for 3 to 4 minutes. Sprinkle with the fresh thyme and turmeric and cook for another 2 minutes. Pour in the chicken broth, cover, bring to a simmer and simmer 30 minutes.
- Prepare the rice according to the package instructions; keep warm.
- Shred or chop the chicken and add it to the pot with the soup. Simmer for another 15 minutes. Stir in the rice and minced parsley and serve.
CAJUN CHICKEN AND RICE SOUP RECIPE

- Cook chicken in stockpot. Cover with water and add bay leaves, salt, poultry seasoning and pepper. Bring to boil , reduce heat, cover and simmer for 1 1/2 hr or until chicken is tender. Remove chicken from broth; set aside to cool. Stain broth discarding seasonings. Set aside 6 cups broth for the soup. Remove chicken from broth. Shred and set aside 3 cups chicken. (Save remaining chicken for another use.) In large stockpot, saute onion and celery in butter until onion is crisp-tender. Add garlic; cook 1 minute longer. Stir in tomatoes, orange juice, cilantro, seasonings and reserved broth. Bring to boil. Reduce heat; cover and simmer for 15 min. or until veggies are tender. Stir in the cooked, drained rice, beans and reserved chicken. Heat. 1 1/2 cup equals 393 calories.
