Steps:
- In a small bowl, combine paprika, garlic powder, thyme, salt, black pepper, cayenne pepper and oil to make a paste.
- Pat fish dry with paper towels.
- Using the back of a spoon, rub paste mixture evenly over the entire surface of the fish.
- Cover with plastic wrap and refrigerate for 2 hours.
- Preheat bbq to medium high and grease grill.
- BBQ halibut, turning once, until cooked through, about 3 to 5 minutes per side (Alternately, cook fish in a nonstick frypan over medium high heat).
- Cooking time may vary depending on thickness of fish.
- Remove fish to a serving plate and serve with lemon wedges.
- This rub works equally well with salmon, sea bass or tuna.

- Combine salt, black pepper, red pepper, paprika, and garlic powder, in a small bowl; mix well and rub evenly over both sides of the fish.
- Preheat a large nonstick skillet over medium-high heat and spray with cooking spray.
- Add the fish, and cook for 3 to 4 minutes per side, or until fish is cooked through and flakes easily with a fork.

BLACKENED CHUTNEY HALIBUT: "CHUTBUT"
Steps:
- Heat a cast iron skillet directly over hot coals in a barbecue until smoky hot. Alternatively, heat the skillet on the stove over high heat until very hot. Sprinkle Cajun Spice on the fish, or, for a more robust flavor, dredge the fillets in the Cajun Spice, coating both sides of fish. When the pan is hot, pour approximately 2 tablespoons of clarified butter into pan, and reduce heat to medium-high. Carefully add as many fillets as will fit in the skillet, leaving at least 1/2-inch in between each. Cook the fish for approximately 2 minutes on the first side, and then flip the fillets with a fish spatula. While flipping the fish, add another 1 to 2 tablespoons clarified butter to the pan, and sear the fish on the second side for 1 to 2 minutes, or until the fish is cooked through. Repeat with remaining fish fillets, adding more butter as needed.
- Serve the halibut on a bed of white or wild rice. Pour the Mango Chutney over the fish, and serve with a green salad on the side.
- Combine all ingredients together in a bowl, stirring until well mixed. Set aside for dredging fish fillets.
- Add all ingredients to a medium non-reactive saucepan. Simmer over low heat for 30 minutes. Set aside, and keep chutney warm until ready to serve.
CAJUN-STYLE BLACKENED HALIBUT
Steps:
- Preheat oven to 400°F. Mix first 7 ingredients in small bowl. Place fillets on baking sheet. Brush on both sides with 1 tablespoon oil. Sprinkle top of each with seasoning.
- Heat heavy large skillet (preferably cast-iron) over high heat until very hot. Add remaining 1 tablespoon oil; swirl to coat. Place fillets, seasoned side down, in skillet. Cook until very brown on bottom, 1 minute. Return fillets, browned side up, to baking sheet. Place in oven; bake until just opaque in center, about 8 minutes. Top each with 1 teaspoon butter.
BAKED HALIBUT WITH WARM SHERRY ONION VINAIGRETTE
Steps:
- In a heavy skillet cook onion, 1 1/2 tablespoons shallot, and garlic in butter with salt and pepper to taste over moderate heat, stirring, until onion is pale golden, about 10 minutes.
- Stir in vinegar and cook, covered 5 minutes. Stir in tomato and cook, covered, stirring occasionally, 10 minutes. Stir in bell pepper and 1/4 cup oil and cook, uncovered, stirring, 2 minutes. Stir in parsley and remaining 1/4 cup oil and keep vinaigrette warm.
- Preheat oven to 425°F. and butter a baking dish just large enough to hold fillets in one layer.
- Sprinkle remaining 1 1/2 tablespoons shallot in baking dish and in it arrange fillets, seasoned with salt and pepper. Add thyme sprig, wine, and stock or clam juice and cover fillets with a buttered piece of wax paper. Bake fish in middle of oven 10 to 15 minutes (depending upon thickness of fillets), or until just cooked through.
- Transfer fillets to a large plate and keep warm. Pour cooking liquid through a fine sieve set over skillet of vinaigrette. Cook vinaigrette over moderate heat, stirring, until it is warm and cooking liquid is incorporated.
- Serve fish, garnished with additional thyme sprigs, with warm vinaigrette.
