Cajun Mac and Cheese image

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook until al dente, about 1 minute less than the label directs. Reserve 1 cup of the cooking water, then drain the pasta. Meanwhile, combine the olive oil and sausage in a large skillet over high heat and cook, stirring, until the sausage starts to brown, about 2 minutes. Stir in the scallions and bell pepper and cook until the vegetables are slightly soft, about 3 more minutes. Add the Cajun spice and flour and cook, stirring, 2 more minutes. Gradually whisk in the milk and continue whisking until the sauce is thick and smooth, about 5 more minutes. Add the pasta, cheese and reserved cooking water to the skillet. Reduce the heat to medium low and cook, tossing to coat the pasta in the sauce and melt the cheese, about 1 minute.

CAJUN SEAFOOD PASTA

This recipe is a hot one, but delicious! If you are weak of tongue, then divide the amounts of peppers in half. Better to add more than spoil your creation! Bay scallops are preferred, but the larger sea scallops can be used if they are cut in half. This dish can also be placed in a casserole dish and placed under the broiler until top turns golden brown!

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente.
  • Meanwhile, pour cream into large skillet. Cook over medium heat, stirring constantly, until just about boiling. Reduce heat, and add herbs, salt, peppers, onions, and parsley. Simmer 7 to 8 minutes, or until thickened.
  • Stir in seafood, cooking until shrimp is no longer transparent. Stir in cheeses, blending well.
  • Drain pasta. Serve sauce over noodles.

Steps:

  • Combine the Parmesan, mustard, cayenne, coriander, fennel, paprika and pepper in a bowl. Sprinkle half of the mixture onto a work surface. Place the puff pastry on top of the mixture and sprinkle the remainder on the pastry. Roll mixture into pastry. Using a pizza cutter, cut pastry into 4 sections of 1/2-inch strips. Place strips on parchment-lined sheet pans. Freeze for 1 hour.
  • Preheat oven to 400 degrees F. Bake 8 to 10 minutes until golden brown. Turn off oven, leaving door ajar for 5 minutes. Remove from the oven and cool. Straws can be stored in airtight containers for up to 1 week.

Cheesy & Seedy Jalapeno Bread (Abm) image

Steps:

  • Place yeast, flour, seeds, oatmeal, salt, sugar, oil, and water in bread machine according to manufacturer's directions.
  • When cycle is complete, remove dough, and knread 1 cup cheese and jalapenos (well drained and dried) into dough. I make the process easier by taking chunks of the dough and placing them into a bowl, a couple at a time, topping with cheese and jalapenos, and repeating until all dough, cheese, and jalapenos are gone - and then gently kneading.
  • Form into a loaf, and place into a lined 9x5 bread pan (I line mine with parchment paper.) Alternatively, you could grease and flour the pan - just be aware that the cheese can stick really well, so it's best to line the pan! Top with shredded cheddar and additional grains/oatmeal.
  • Allow loaf to rise until doubled, approximately 45 minutes. Set oven to 375°F When loaf is doubled, bake for 35-45 minutes, until browned and until the loaf sounds hollow when you knock on the bottom of it.
