"When I follow my favorite meat loaf recipe, I end up with an extra half pound of ground beef," relates June Ellis. "So I came up with this easy dish to use it up." The Erie, Illinois cook brings this fast family-pleaser to the dinner table at a savvy 76 cents a plate.

Cajun Macaroni image

Steps:

  • In a large saucepan, cook the beef, onion, green pepper and celery over medium heat until meat is no longer pink; drain. Add tomatoes and Cajun seasoning. Cook, uncovered, for 15-20 minutes, stirring occasionally., Meanwhile, prepare macaroni and cheese according to package directions, using 2 tablespoons milk and 1 tablespoon butter. Stir in beef mixture; cook for 2-3 minutes or until heated through.

Steps:

  • Cook macaroni according to package directions and rinse with cold water, drain well. While pasta is cooking, mix dressing. Toss together and serve. Even better the next day!

2 cups dry elbow macaroni
1/2 cup diced red onion
1/2 cup sliced green olives
1/4 cup diced celery
1/4 cup diced red bell pepper
1/2 lb cooked peeled shrimp (optional)
1/2 cup mayonnaise
1/8 cup olive oil
1/2 tablespoon Tabasco sauce
1/2 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard

Steps:

  • Soak the red onion in a bowl of ice water for 15 minutes; drain and pat dry. Meanwhile, bring a large pot of salted water to a boil. Add the macaroni and cook as the label directs. Drain, transfer to a bowl and toss with 3 tablespoons milk. Let cool.
  • Whisk the mayonnaise, sour cream, mustard, pickle brine, sugar, hot sauce, remaining 1 tablespoon milk and 1/2 teaspoon salt in a large bowl. Add the macaroni, red onion, bell peppers, celery, celery leaves and parsley; toss to coat. Cover and refrigerate at least 2 hours. Stir again before serving; season with salt.

Steps:

  • Pour orange juice into a non-metallic container with a tight fitting lid.
  • Slice the pickled jalapeños into half-inch rounds - do not remove seeds.
  • Add the jalapeños to the orange juice.
  • Place lid on container and shake well.
  • Refrigerate 3 days.
  • When read to serve, strain orange juice, discarding peppers.
  • Fill champagne glasses half full of crushed ice.
  • Fill glasses half full of orange juice.
  • Add enough Champagne to fill glasses.
  • Stir gently and serve.
