CALIFORNIA ZUCCHINI BAKE
this is my take on a cheesy zucchini bake that my grandma use to make, granted its not exact but its pretty close given my diet restrictions

Steps:
- Cook rice according to package directions (for a better taste don't use instant or minute rice).
- In a large frying pan saute veggie burgers, zucchini, and onions in canola oil.
- Remove from heat and stir in salt, garlic powder, chili powder, chilies, rice, tofutti sour cream, and 1/2 cup of the Monterey Jack soy cheese.
- Place in shallow 2 1/2-quart casserole dish coated with vegetable cooking spray.
- Top with tomato slices and sprinkle with remaining soy cheese.
- Bake at 375° F for 20 minutes uncovered or until hot in the center. Serve immediately.

This dish is a favorite from my mother-in-law and was a great way to get our kids to eat veggies when they were young. We recently stumbled across the recipe and fixed it again. Still as delicious as we remembered it.

Steps:
- Saute beef, zucchini, onions and seasonings in large, greased skillet until meat is no longer pink and vegetables are tender crisp, stirring frequently.
- Add green chilies, rice, sour cream and 1 cup of the cheese.
- Pour into a 9 x 13 casserole.
- Arrange tomato slices on top.
- Season with salt and pepper.
- Top with remaining cheese.
- Bake at 350 degrees for 20 to 25 minutes.

- Toss the zucchini slices with sea salt. Place into a colander and set over the sink to drain for 45 minutes. Pat dry at the end.
- In a small 1.5 quart (1.5 L) casserole dish, arrange the zucchini slices in several overlapping rows, sprinkly very lightly with half of shredded cheese between rows. You'll use about 3/4 cup cheese total. Season lightly with black pepper. (They already have salt at this point.)
- Combine the brie, cream, milk, butter, and garlic in a small saucepan. Heat for a few minutes on the stove over low to medium-low heat, stirring frequently, until the cheese melts and the mixture is smooth. If desired, add sea salt to taste. Pour the mixture evenly over the zucchini.

- Preheat oven to 375 degrees F. Spray a small baking dish with cooking spray and set aside (I used a dish that was 8-in x 5-in, but an 8-inch square pan will also work).
- Place zucchini in a colander, sprinkle with salt, and allow to sit for about 10 minutes (this will help draw out some of the water from the zucchini). After 10 minutes, squeeze out moisture from the zucchini. TIP: In order to make sure that I get most of the water out of the zucchini (and avoid a runny casserole), I like wrap the zucchini in a dish towel. Squeeze it and wring it out multiple times while it's in the towel -- you will be shocked by how much liquid comes out!
- In the prepared dish, combine zucchini, onion, garlic, eggs, ½ cup Parmesan cheese, mozzarella cheese, and cheddar cheese. I like to use my hands to make sure that it’s all completely combined, and then gently press the mixture evenly into the prepared dish.
