CARAMELIZED MAPLE APPLE PIE WITH CANDIED BACON CRUMBLE

The holidays deserve a pie worthy of its occasion. This towering pie is piled high with apples that bathe in a deep maple caramel with a slight tang from cider vinegar. It's topped with a buttery crumble studded with crispy candied bacon. A pie that definitely earns its place at the table.

Caramelized Maple Apple Pie with Candied Bacon Crumble image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place bacon on a baking sheet and sprinkle 1 tablespoon brown sugar over the top.
  • Bake in the preheated oven until crisp, 10 to 20 minutes.
  • Line a 9-inch springform pan with pie crust pastry; refrigerate.
  • Combine apples and lemon juice in a bowl and toss to coat.
  • Melt 1/4 cup butter in a large skillet over medium-low heat; add maple syrup and 1/3 cup brown sugar. Bring to a boil, lower heat, and simmer until mixture is reduced by half, about 5 minutes. Carefully add apples and stir well to coat. Cook until apples just start to soften and get a bit of color on them, about 5 minutes. Return the apples to the bowl leaving behind the sweet syrup.
  • Stir vinegar into sweet syrup; simmer until syrup is reduced and consistency of maple syrup, about 5 minutes. Carefully pour syrup over the apples. Cool for 10 minutes.
  • Combine flour, 1/4 cup brown sugar, 1/4 cup unsalted butter, baking powder, cinnamon, and salt in a food processor; pulse until crumbly. Break bacon into pieces, add to food processor, and pulse until combined with the crumble.
  • Tip apples into the pie crust in the springform pan. Fold dough over part of the apple filling to form an edge. Crimp the edges between your fingers. Top the apple filling with the crumble. Brush crust with cream and top with white sugar.
  • Bake pie in the preheated oven until the juices bubble and the crust is deeply golden, about 1 hour. If the crust starts to brown too quickly turn the oven down to 350 degrees F (175 degrees C).

  • Preheat oven to 325 degrees F (165 degrees C). Line a pie dish with 1 crust.
  • Whisk together cornstarch, sugar, cinnamon, nutmeg, and salt in a large bowl. Stir apples, maple syrup and whole egg into cornstarch mixture.
  • Pour apple mixture into the prepared crust. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape. Steps:

  • Preheat oven to 350*F In a heavy saucepan over medium heat, bring the maple syrup to a gentle boil. Cook the maple syrup for 5 minutes, reducing heat if necessary. Remove the saucepan from the heat Stir in the butter until melted. Add the heavy cream and stir. Transfer 1/2 cup of the mixture to a small bowl; whisk in the flour and salt and then whisk this back into the mixture in the saucepan. Beat the eggs in a small bowl and then whisk them into the mixture in the saucepan until well incorporated and the consistency is smooth. Roll out the pie dough and place it in a 9-inch pie plate. Pour the warm filling into the pie shell. Bake in oven for 50 - 60 minutes, until the center is golden brown, bubbly and relatively firm when lightly jiggled back and forth. Some jiggle is ok, but we don't want too much. Cool pie completely on at room temperature before slicing. This will take at LEAST 1-2 hours.

Steps:

  • Preheat oven to 375-400 °F.
  • Beat butter in a large bowl until creamy (about 30 sec.).
  • Gradually add maple syrup and vanilla seeds.
  • Beat until the mixture becomes creamy and then stir in the eggs, one at a time.
  • In a separate bowl mix spelt, rolled oats and baking powder.
  • Gradually add the dry mix to the butter-egg mixture. Stir well.
  • Put 2/3 of the mass in a well greased 9 inch pan and smooth down.
  • Peel the apples and cut them into small pieces and spread them on the batter.
  • Scatter sultanas over the apple fill.
  • Using 2 teaspoons, spoon the remaining batter into heaps and spread them over the apples.
  • Spread sliced almonds and butter flakes over the pie.
  • Bake at 375-400°F for 50-60 minutes. Check it after 35 minutes and cover with foil if the surface gets too brown.
  • Serve with whipped cream or maple or ginger syrup. (I use Recipe #123111).
