CANADIAN CHEESE SOUP
My family loves Canadian bacon, but I don't run across a lot of dishes that call for this pork product. Everyone was thrilled the first time I offered this succulent soup. -Jolene Roudebush, Troy, Michigan

CANADIAN YELLOW SPLIT PEA SOUP WITH HAM
Creamy yellow pea soup studded with bits of ham, carrots, celery, and thyme. There is nothing like this one on a cold day! I am a Canadian now living in the US. and cannot get Habitant® soup anymore, so I came up with this version. I think it is as good as the real thing, if not better, because it is homemade.

- Pat moose chunks dry with a paper towel (this will make for better searing). Season with 1/2 teaspoon each of salt and black pepper.
- Turn Instant Pot to 'Sauté.'Note: Settings may vary on your Instant Pot, depending on the model. Please refer to the manufacturer's guide on how to use your Instant Pot.
- Adjust the [+] or [-] button to set the timer to 25 minutes (adjust if you need less or more time to sear). Add 1 tablespoon of olive oil to Instant Pot.
- Once oil is hot, add moose chunks and brown in batches (don't overcrowd the pot). Brown about 5 to 6 minutes per batch, adding 1 tablespoon of olive oil (roughly) per batch (I had 3 batches, transferring the seared chunks to a plate while continuing batches). Note: Moose is not cooked at this point, we're just adding a little colour.
