CHOCOLATE-DIPPED STRAWBERRIES
A bumper crop of berries turned into a real treat when I dipped them in chocolate! I like to make these chocolate covered strawberries before dinner and put them in the fridge, so they're ready when we're finished eating. - Wash strawberries and gently pat with paper towels until completely dry. In a microwave-safe bowl, melt semisweet chocolate and 1 tablespoon shortening at 50% power; stir until smooth. Dip each strawberry and place on a waxed paper-lined baking sheet. Freeze strawberries for 5 minutes., Meanwhile, microwave white chocolate and remaining shortening at 30% power until melted; stir until smooth. Stir in food coloring if desired. Drizzle over strawberries. Refrigerate until serving.

SALTED CARAMEL STRAWBERRIES
Found this one in a back issue of Southern Living then looked it up on Southern Living's website. It got the best of ratings and reviews. Hope it lives up to its standards. I would imagine this perfect for afternoon tea, brunch or shower.

- To prepare strawberries do not remove green caps before washing. Water will seep into the berry, softening the texture and weakening the flavor. Wash strawberries just before using then patting dry with paper towels. (Caramel mixture will not stick to wet strawberries.).
- Microwave caramels, 3 tablespoons whipping cream and 1/4 teaspoon salt in a 1-quart microwave-safe bowl at MEDIUM (50% power) for 3 1/2 minutes or until smooth, stirring at 1-minute intervals.
- Dip each strawberry halfway into caramel mixture. Roll in nuts and place on lightly greased wax paper. Let stand for 15 minutes. Serve immediately or cover and chill up to 8 hours.

CHOCOLATE-DIPPED STRAWBERRIES

- Rinse the strawberries and let dry completely on paper towels. Line 2 baking sheets with parchment or waxed paper. Melt and temper the chocolate (see pages 25-30).
- Hold a strawberry securely between your thumb and forefinger, and with the pointed end down, dip the berry into the chocolate, covering three-quarters of the berry. Remove the berry from the chocolate, gently shake off the excess chocolate, and place the berry on the prepared pan. Repeat with the remaining berries. Let the chocolate set up at room temperature, or chill in the refrigerator for 15 minutes. The dipped berries must be served within 4 hours of preparation; if not served immediately, refrigerate until 15 minutes before serving.

This is a very easy treat to make. You can use any kind of fruit. I like to make my fruit skewers with fruit combinations that are colorful and tasty. Be creative!

- Place the water, sugar, and corn syrup in a 2-quart heavy-bottomed saucepan over medium-high heat. The corn syrup will make the cooked sugar harder and crunchier; it will also help prevent the cooked sugar from melting as quickly when it reacts to the humidity in the air. Insert a candy thermometer and cook the sugar mixture to 311 degrees F (155 degrees C), what is known as the hard crack stage. Stir the sugar slowly as it cooks to ensure that it cooks evenly. If you do not stir it, the mixture will develop hot spots and the sugar will cook faster in those spots. Use a pastry brush to keep the inside of the saucepan clean as the sugar cooks, or the sugar may recrystallize. To do this, dip a clean brush in cold water and brush the inside of the pan clean.
- Remove the cooked sugar from the heat and pour it into a medium-size heatproof glass bowl. The glass bowl will hold the temperature and stop the cooking process. It will also allow you to reheat the sugar in the microwave if necessary. If you leave he sugar in the saucepan, the sugar will continue to cook and turn dark brown. Occasionally stir the hot sugar to keep it from darkening due to the residual heat. Stirring also helps to keep its temperature even. I put a towel under the bowl to keep it from tipping and to protect my hands from the heat of the glass.
- Peel, core or pit, and halve the fruit as necessary. Use a sharp knife to slice the fruit into small pieces. (This is not necessary for berries or grapes.) Arrange the fruit on toothpicks or small skewers in any combination you like. Leave enough room at one end of the toothpick or skewer so you will be able to hold it as you dip it in the hot sugar. Dip each toothpick in the hot sugar, coating the fruits completely. Wipe the toothpick against the rim of the bowl to remove any excess sugar and place on a sheet of parchment paper. Repeat until all of the fruit has been dipped. The fruit skewers should release easily from the parchment paper as soon as they cool. You can arrange them on a plate or use your imagination to make a fruit skewer centerpiece.

- Cut a strip of baking parchment and leave to one side. To melt the dark chocolate, fill a small pan with 2cm water and bring to a simmer. Put the chocolate in a heatproof bowl and rest it on top of the pan, ensuring the bowl isn't touching the water. Stir the chocolate to gradually melt it. Or, melt the chocolate in 20 second blasts in the microwave, stirring after each blast until melted. Put the melted chocolate in a small deep bowl.
- Gently hold the strawberries by the leafy top and dip into the chocolate. Tap off any excess chocolate and put on the parchment to set. If you have any leftover chocolate, pour it onto another strip of parchment and leave it to set, it can be used again.
- If you'd like to decorate the strawberries, melt the white and milk chocolate and drizzle lightly over the fruit.

- Place several pieces of newspaper or parchment paper on the floor under the working area - the edge of a counter or tabletop works well - to catch any excess caramel as it drips off the fruit. Have ready 24 two-inch pieces of masking tape and 24 six-inch wooden skewers.
- Insert each skewer perpendicularly into the bottoms of the fruit without going through the other side. Set the fruit aside.
- Dip the fruit into the caramel coating, and coat completely. Place the skewers on the edge of the counter or tabletop with the fruit stems pointed toward the floor. Using the masking tape, secure skewers. If coating segmented fruit, rest sections on an oiled wire rack set over a baking sheet. Let caramel drip onto the floor, forming tails; let the caramel set completely.
- Using scissors, cut the tails to the desired lengths; let cool completely. Just before serving, remove the skewers.
