Warm Tropical Fruit and Buttermilk Torte with Vanilla Frozen Yogurt image

Steps:

  • Grease and flour the cake pan. Preheat oven to 350 degrees F.
  • Cream the butter with 1/2 cup of the sugar until light and fluffy. Add another 1/2 cup of sugar and beat until incorporated. Gradually add in the buttermilk, scrape down the sides of the bowl. Add the egg whites in 1 at a time, beating well after each addition.
  • In a separate bowl stir together the flour and baking powder. Add the flour mix into the batter with the vanilla and mix together until well incorporated.
  • Pour the batter into the prepared pan and arrange the mango, pineapple, and banana decoratively on the top. Sprinkle with the remaining 2 tablespoons sugar and bake for 45 minutes or until golden brown.
  • Let the torte cool slightly and slice. Serve each slice warm with a small scoop of vanilla frozen yogurt, 2 caramelized banana slices and 2 tablespoons of raspberry sauce.
  • Slice the bananas on the diagonal into 24 slices and place on a baking sheet. Sprinkle with the sugar and caramelize under a broiler for 1 to 2 minutes.
  • Place raspberries, sweetener, and lemon juice in a blender and process until smooth. Strain and set aside.

Freekeh with Caramelized Shallots, Chickpeas, and Yogurt image

Steps:

  • In a medium saucepan, bring freekeh and 3 cups water to a boil. Reduce heat to maintain a simmer, cover, and cook until tender and chewy, about 45 minutes. Drain. Transfer to a bowl and let cool.
  • Meanwhile, heat 1 tablespoon oil in a medium skillet over medium-high heat. Add cumin seeds and stir until fragrant and toasted, about 30 seconds. Add pepper flakes and shallot; cook, stirring, until deeply caramelized, 2 to 3 minutes. Add chickpeas and cook, stirring occasionally, until golden, about 3 minutes. Season with salt; transfer mixture to bowl with freekeh. Toss in lemon juice, cilantro, and pomegranate seeds.
  • To serve, dollop each portion with 1/4 cup yogurt, then drizzle with remaining 1 tablespoon oil.

Yogurt with Caramelized Pineapple and Hazelnuts image

Steps:

  • Melt butter in a large skillet over high heat. Add pineapple, sugar, and oats; cook, stirring and scraping bottom of pan, 5 minutes. Reduce heat to medium-high; cook, stirring, until sugar is caramelized and pineapple softens, about 5 minutes more. Stir in lime juice. Spread mixture in a single layer on a rimmed baking sheet, breaking up any big chunks; let cool slightly.
  • Spread yogurt in a large dish. Top with pineapple mixture and hazelnuts. Serve immediately.

Caramel Yogurt image

Steps:

  • Place yogurt in a fine-meshed strainer or colander lined with cheesecloth. Place strainer over a bowl and drain for at least 3 hours, or overnight. Reserve all liquid in bowl: this is whey. There should be about 2 cups firm drained yogurt. If necessary, return enough whey to yogurt to make 2 cups.
  • In a medium saucepan, place sugar, salt and 1 cup whey. Bring to a boil, reduce heat to medium and cook, stirring frequently; adjust heat as needed so mixture does not boil over. Cook until liquid boils off and remaining syrup becomes deep brown, 20 to 30 minutes. Remove from heat.
  • Add 2 tablespoons whey to pot and stir to blend well. If mixture is too thick to stir, add another tablespoon of whey. Allow caramel to cool slightly, stirring frequently to make sure it remains fluid. (If caramel stiffens too much to stir, place over a pot of hot water and stir until fluid again.) Add 1/4 cup yogurt to pot and stir vigorously to blend. Add remaining yogurt and stir to blend fully.
  • Transfer to a covered container and refrigerate until chilled, at least 30 minutes. If desired, serve garnished with a sprinkling of cardamom, cinnamon or grated lemon zest.

Ryazhanka, a classic Ukrainian drink, is cool, tangy and lightly sweet, like yogurt with a touch of dulce de leche. This recipe comes from Olga Koutseridi, who spent her childhood summers in Mariupol, Ukraine, where vendors sold chilled ryazhanka that she'd guzzle after a day at the beach. The slight caramel flavor comes from slowly baking whole milk, which can be done in the oven or a slow cooker, before mixing it with a fermented starter like sour cream or kefir.

Ryazhanka (Fermented Caramelized Milk) image

Steps:

  • If using an oven, heat to 225 degrees. Place the milk in a Dutch oven (if baking the mixture) or large, heavy saucepan (if using a slow cooker) and bring to a simmer over medium heat, stirring from time to time so the milk doesn't scorch. It will take about 15 minutes to get to a simmer.
  • Transfer to the oven, if using, and bake, uncovered, until the top is a deep caramel brown, about 6 hours. If using a slow cooker, transfer the milk to the slow cooker, cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours, until the top is caramel brown. You can discard or save the skin that develops on top of the milk, refrigerating it in an airtight container. Traditionally, the skin is served on top of a glass of ryazhanka.
  • Transfer the cooked milk directly to jars or first to liquid measuring cups to cool the milk and determine how much you have. Let cool at room temperature, uncovered, to 115 degrees. You do not want to add kefir to hot milk, as the heat will kill the bacteria. Add 1 tablespoon kefir for every 2 cups cooked milk. (You'd use 1 tablespoon kefir per pint jar, 2 tablespoons per quart jar, or 3½ tablespoons kefir total for 7 cups cooked milk.) Stir or whisk the kefir until fully incorporated. If the mixture isn't already in jars, divide among jars. Cover the jars with coffee filters and secure around the tops with rubber bands or string.
  • Leave the jars in a warm place until the ryazhanka develops a consistency that's thicker than kefir but thinner than yogurt, 24 to 48 hours, depending on the temperature of your kitchen. You might see some separation between liquid and solids. The flavor will be both sweet and sour from the fermentation. Cover the jars with their lids and refrigerate until chilled. The ryazhanka can be refrigerated for up to 7 days.
