LIGHT CARAMEL CORN
I'm a diabetic. (Trivia fact: Diabetics have no dietary restrictions.) My nutritionist gave me this great recipe for caramel corn out of a diabetic cookbook. It's light, filling, and makes a great snack. It's a hit with the kids and many of my friends. The popcorn can be fresh popped or out of a microwave. I'm not sure exactly how much popped popcorn is in a microwavable bag, but I usually use a full bag.

Steps:
- Pop the popcorn and put it into a bowl. Make sure there is some extra room in the bowl if possibble. You'll need that room when you toss the popcorn.
- In a small microwave safe bowl, microwave together the butter and honey, only until melted. Over heat it, and it WILL burn (trust me, I've done it.).
- Using a regular spoon, drizzle 2 spoonfuls of the butter/honey mixture over the popcorn and toss thoroughly. THIS IS CRUCIAL. Put any more on at once and it won't turn out right.
- Repeat step three. Most of the mixture will be gone before it seems like you're getting anywhere with this. Be patient, and when the honey/butter is all gone, enjoy:).

- Preheat oven to 250°.
- Coat a large jelly roll pan with cooking spray.
- Combine sugar, corn syrup, butter, and molasses in a medium saucepan; bring to a boil over medium heat. Cook 5 minutes, stirring once. Remove from heat; stir in vanilla, baking soda, and salt. Place popcorn in a large bowl; pour sugar mixture over popcorn in a steady stream, stirring to coat.
- Spread popcorn mixture into prepared pan. Bake at 250° for 1 hour, stirring every 15 minutes.
- Remove from oven; stir to break up any large clumps. Cool 15 minutes. Serve warm or at room temperature.
- Note: Store in an airtight container for up to 1 week.

CARAMEL POPCORN
Steps:
- HEAT oven to 250 degrees F. Coat a 15x10-inch jelly roll pan or two 13x9-inch baking pans with no-stick cooking spray. Place popcorn in extra-large bowl. Remove unpopped kernels.
- MELT shortening in 2-quart saucepan. Stir in brown sugar, corn syrup and salt. Bring to a boil over medium heat, stirring occasionally. Boil without stirring for 4 minutes. Remove from heat. Stir in vanilla and baking soda. Evenly pour over popped corn, quickly stirring until popcorn is evenly coated. Place in prepared pan.
- BAKE 45 minutes, stirring every 15 minutes. Cool. Break into bite-size pieces.
CARAMEL POPCORN
Steps:
- Preheat oven to 250 degrees F. Generously butter heavy large baking pan. Mix warm popcorn and peanuts in prepared pan. Place in oven while preparing syrup.
- Combine brown sugar, butter and corn syrup in heavy medium saucepan. Whisk over medium-low heat until sugar dissolves and butter melts. Attach clip-on candy thermometer to side of pan. Increase heat to high and boil without stirring until thermometer registers 255 degrees F, occasionally brushing down sides of pan with wet pastry brush, about 4 minutes. Remove from heat. Stir in vanilla extract, salt and baking soda (mixture will bubble). Gradually pour syrup over popcorn and nuts completely.
- Bake until caramel feels dry, stirring frequently, about 1 hour 30 minutes. Remove from oven. Using metal spatula, scrape mixture from bottom of pan to loosen. Cool completely in pan. (Can be prepared 1 week ahead. Store in airtight container at room temperature.)
CARAMEL CANDY POPCORN

Steps:
- Combine brown sugar (or white), light corn syrup, butter or margarine and salt in a mixing bowl.
- When it's all mixed together put into a pot or saucepan and bring to a boil.
- Stop stirring and let it bubble for 5-8 minutes.
- While it's boiling pop the popcorn.
- Pour popcorn into a large bowl* (Remove kernels)*.
- Pour the mixture over the popcorn and mix it around until all the popcorn is coated with the caramel sauce.
- Take the coated popcorn and put on an ungreased baking sheet.
- I suggest to put tinfoil down to make clean up easier!
- Put on middle rack in the oven and cook at 250°F for 45 minutes.
- Let cool and put in a bowl and enjoy!
- *For more of a buttery taste use white sugar*.
VEGAN CARAMEL POPCORN

- Heat 2 tablespoons vegetable oil in a very large pot over medium-high heat. Put 4 popcorn kernels into the oil and cover until popped; add remaining kernels to the saucepan in an even layer. Cover and remove from heat, about 30 seconds. Return to heat and gently shake pan back and forth over the burner until popping slows to several seconds between pops, 1 to 2 minutes.
- Divide popcorn among large bowls and set aside.
- Combine brown sugar, corn syrup, coconut oil, and salt in a sturdy pot over medium-high heat. Cook, stirring occasionally, until the mixture reads 270 degrees F (132 degrees C) on a candy thermometer. Add condensed milk, mix well, and heat back up to 270 degrees F (132 degrees C). Remove from heat and let cool for 1 minute. Mix in vanilla extract.
- Pour hot caramel over popcorn. Mix well until coated.

- Pour popcorn into a large bowl.
- Combine brown sugar, condensed milk, corn syrup, butter, and vanilla extract in a saucepan over medium heat. Cook, stirring often, until a candy thermometer reads 234 degrees F (112 degrees C), about 5 minutes. Pour over popcorn; stir to coat evenly.

- Set oven to 250 degrees F.
- Put the popped corn in a large bowl.
- Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
- Then boil for 5 minutes WITHOUT stirring (this is important DO NOT stir for 5 minutes!).
- Remove from heat and stir in baking soda and vanilla.
- Add in the nuts and stir to combine.
- Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
- Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
- Remove from oven then cool.
- Break into pieces.
- Store in a tightly covered tin box.
- Delicious!

This is a great caramel popcorn or caramel sauce recipe.The caramel doesnt ask for more than one ingredient which is what is special about this recipe! - Fill a deep pot with water.
- Remove the paper off the can of sweet condensed milk and place the can as it is in the pot(dont open it).
- Let it boil for about 2 1/2-3 hours adding water every once in a while that it covers the can or the can will pop and ur kitchen is gonna be in a dangerous mess.If the can pops it can burn.BE CAREFUL!
- Pour the caramel onto the popcorn and mix thoroughly.
- Allow to chill.
