Steps:
- Heat the oil in a large skillet. Gently saute onions, garlic and hot peppers, then add beans and vinegar and cook for about 5 minutes. Add the rice to the beans, then stir in stock, reduce heat, and simmer until rice is cooked, about 15 to 20 minutes. Stir in parsley, chives, hot sauce, salt, and pepper and serve.

Steps:
- Bring broth and coconut milk to a boil in a medium-size pan over med-high heat; add in rice.
- Cover, decrease heat, and simmer 20 minutes, or until liquid is absorbed; remove from heat and keep warm.
- Heat oil in a nonstick skillet over med-high heat; add in onion; stir/saute 5 minutes.
- Decrease heat to medium; add in squash; cook 8 minutes or until tender, stirring occasionally.
- Stir in thyme and remaining ingredients; cook 3 minutes or until heated through, stirring occasionally.
- Add rice to squash mixture, stirring to combine; serve.

- In a medium mixing bowl, combine the curry, turmeric, salt and pepper. Mix well.
- Add the water, yogurt, raisins, and onion. Stir until well blended.

- In a small bowl whisk together oil, vinegar, Dijon, cumin and garlic until well blended; season with salt and pepper to taste, add in some sugar if you find that the dressing is too strong.
- In a medium bowl combine the cooled or cold cooked rice, black beans, corn niblets, bell peppers and green onions.
- Add in enough dressing to moisten; toss to combine (you don't have to use the full amount of dressing).
- Season once again with salt and pepper (or cayenne pepper).

- Line large serving bowl with lettuce leaves, if desired. Spoon salad into bowl and serve.

- Melt butter in saucepan over medium heat. Add ginger, garlic, and cinnamon stick, and sauté until fragrant, about 1 minute. Stir in rice, and sauté until rice grains are opaque, about 2 minutes. Add water, coconut milk, sugar, salt, lime zest, and white pepper and bring to a simmer. Stir once, cover, reduce heat to low, and simmer for 15 minutes.
- Fluff rice with a fork, cover, and let rest for 5 minutes. Garnish with toasted coconut, if using.
