CARROT CAKE FREEZER ENERGY BALLS

These freezer energy balls are sweetened with peanut butter and honey.

Carrot Cake Freezer Energy Balls image

Steps:

  • Line a baking sheet with parchment paper and set aside.
  • Combine carrots, oats, flax meal, peanut butter, honey, walnuts, raisins, vanilla, cinnamon, ginger, and salt in a bowl. Beat with a hand mixer until well combined.
  • Roll mixture into 12 equal-sized balls and place on the baking sheet. Freeze until they hold their shape, at least 1 hour. Transfer to a freezer-safe container and store in the freezer.

Steps:

  • Mix all the ingredients together (I used my hands to get it all mixed together-this is a messy job). Consider adding more oatmeal if mixture is really tacky. I suggest refrigerating the mixture before the next step. Form into balls (I used my hands, next time Try cookie scoop) and place on a baking sheet lined with parchment paper. Refrigerate for 1-2 hours to let them soften and get really yummy. I was surprised how tasty these were!

1 1/2 C rolled oats
3/4 C grated carrot (grate it using a fine shredder)
1/4 C raisins (I chopped fine so the raisins would be better dispersed)
3 Tbsp honey
1/2 C nut butter (I used cashew butter, but a flavored butter would be good too)
1/4 C chopped walnuts (chop them small)
2 Tbsp unsweetened coconut
1 Tbsp mini chocolate chips
1 Tbsp chia seeds
1/2 cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 Tbsp brown sugar or coconut sugar (optional - I used it)

  • Place the peeled, chopped carrots in the bowl of your food processor, with the S blade attachment.
  • In the food processor bowl again (no need to clean it!), add all the dry ingredients and blend on high speed until the nuts, oats, and coconut turn into a fine ground/flour. It shouldn't take more than 1 minute.
  • Add in almond butter, vanilla, maple syrup (optional, only for a boost of sweetness), the carrot pieces from step 1, and the soft pitted dates. If your dates are slightly dry, make sure you soak them in hot water for 10 minutes before using them in this recipe. Drain well before adding to the food processor to avoid the addition of water.

  • Using the grater attachment on your food processor (or a box grater), grate the carrot and set aside.
  • To the food processor, add the pitted dates and blend until small bits remain or a ball forms. Remove from food processor and set aside.
  • To the food processor, add walnuts, vanilla, salt, and spices. Blend until a semi-fine meal is achieved — about 15 seconds. Then add the dates and shredded carrot back in and pulse in 1-second increments until a loose dough forms and the carrots are just incorporated. Be careful not to over-blend. You're looking for a pliable dough, not a purée.
  • Add coconut flour 2 Tbsp (18 g) at a time and pulse to combine. If it is not mixing, you may need to remove the lid and stir occasionally to encourage things along. You’re not looking for a paste or purée here, but a tender, crumbly dough. Once well combined, add raisins (optional) and pulse/stir once more to combine.
