CARROT SLAW WITH GOLDEN RAISINS

Carrots are the star of this cabbageless slaw, spooned into individual servings;cumin seeds, golden raisins, and cilantro are added to give it a bit of Moroccan flavor.

Carrot Slaw with Golden Raisins image

Steps:

  • Toast cumin seeds in a small skillet over medium heat, tossing occasionally, until they are fragrant and a shade darker, about 2 minutes. Lightly crush cumin seeds using a mortar and pestle, or using the flat side of a large knife. Set crushed seeds aside.
  • Toss grated carrots, golden raisins, and orange and lemon juices together in a medium bowl. Add oil and crushed cumin seeds; season with salt. Add cayenne, if desired; toss in cilantro.

1 teaspoon cumin seeds
1 1/2 pounds carrots, coarsely grated (about 12 medium carrots)
1/4 cup golden raisins
1/4 cup fresh orange juice
4 teaspoons fresh lemon juice
1/4 cup extra-virgin olive oil
Coarse salt
Pinch of cayenne pepper (optional)
1/2 cup loosely packed fresh cilantro

Steps:

  • Soak raisins in Chardonnay white wine in a bowl until plump, about 1 hour.
  • Drain and reserve any remaining liquid from the plumped raisins.
  • Mix carrots, mayonnaise, and chives together in a large bowl.
  • Fold plumped raisins into carrot mixture.
  • Mix reserved soaking liquid into the salad a tablespoon at a time until desired texture is achieved.

I came up with this as a side for a fish curry we ate last night. I have a hand held tool that shreds carrots in long strips. You could just grate the carrot if you don't have the same. I'm in a remote area so used dried mint, feel free to use fresh as I would if I could get it!

  • Grate carrots through the large holes of a box grater or with a food processor using the grater blade. In a medium bowl, combine grated carrots with golden raisins, mint, lemon juice, and olive oil. Season with salt and pepper, and toss to combine well. Serve.
