GRILLED TURKEY PARMESAN SANDWICH
Not your ordinary leftover-turkey sandwich, this grilled creation, with cheese and marinara sauce, is filled with irresistible flavor.

- Heat a medium nonstick skillet or a griddle over medium heat. Working on a clean surface, place a slice of cheese on top of each of 4 bread slices. Spread 1 to 2 tablespoons of marinara sauce over the cheese; sprinkle evenly with Parmesan. Layer each with turkey and a final slice of cheese. Top each sandwich with another bread slice, and lightly butter outsides.
- Working in batches, grill sandwiches until bread is golden brown on the bottom, about 3 minutes. Using a spatula, turn sandwiches, and grill until other side is golden brown and cheese is melted, about 3 minutes more. Slice in half, and serve warm.

- Heat oven to 350°F. Line bottom and sides of 15x10x1-inch pan with foil. Generously spray foil with cooking spray.
- In large bowl, stir together all ingredients except Parmesan cheese and marinara sauce, using hands or spoon. Shape mixture into (48) 1-inch balls. Place Parmesan cheese in small bowl. Roll balls in Parmesan cheese, pressing to adhere. Place in pan.
- Bake 18 to 23 minutes or until brown and cooked through in center (at least 165°F). Immediately remove from pan. Serve warm with sauce for dipping.

TURKEY PARMESAN PANINI

- Preheat the oven to 450 degrees F.
- Place the tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with the salt. Toss well to coat. Roast the tomatoes until beginning to pop and blister, about 15 minutes.
- Meanwhile, spread 1 tablespoon pesto on 4 slices of bread. Spread 1 tablespoon marinara on the other 4 slices. Place a slice of mozzarella on each slice of bread. Divide the turkey evenly on 4 slices of bread and top with some of the blistered tomatoes. Sprinkle each sandwich with 1 tablespoon Parmesan. Top with the remaining slices of bread and press gently.
- Heat a large skillet over medium heat. Add half of the remaining oil to the skillet and add 2 sandwiches. Place a lid slightly smaller than the skillet on top of the sandwiches and press down. Cook until golden brown, about 3 minutes. Flip the sandwiches and repeat on the second side. Continue with the remaining sandwiches. (Alternatively, you can use a panini press.) Serve warm.

CLASSIC TURKEY PARMESAN

- Heat oven to 350 degrees. Beat together eggs and milk in a shallow pie plate or dish; place bread crumbs in another pie plate. Combine flour, salt and pepper in a plastic or paper bag. Add turkey slices to bag one at a time; shake to coat lightly with seasoned flour. Dip in egg mixture, letting excess drip off; roll in crumbs to coat lightly.
- Heat 2 tablespoons oil in a large non-stick skillet over medium heat. Add garlic cloves; cook 1 minute. Push garlic to edges of skillet. Add turkey slices to skillet in batches (do not crowd) and cook 3 minutes per side or until golden brown and no longer pink in center. Transfer turkey as it is cooked to a 13 x 9-inch baking dish. Repeat with remaining turkey adding additional oil to pan as necessary.
- Discard garlic; add spaghetti sauce to same skillet. Simmer 2 minutes or until heated through. Spoon over turkey; top with mozzarella and Parmesan cheeses. Bake about 12 minutes or until turkey is hot and cheese has melted. Sprinkle with basil, if desired.

- Make the sauce first. Heat the olive oil in a medium pot and saute the onions, stirring occasionally, until they are soft and translucent, about 6-8 minutes. Add the garlic and cook another minute. Add the tomato paste, mix well and cook for 3-4 minutes, stirring often. You want the tomato paste to darken to a brick color.
- Add the can of crushed tomatoes, the wine, the salt, red pepper flakes, sugar and the herbs. Mix well and let this simmer gently while you finish the dish.
- Start with slices of turkey breast about 1/4 to 1/2 inch thick. It doesn't matter too much how large the slices are, as you can cut them into serving pieces after you pound them flat. Put the slices between two pieces of plastic wrap, then pound them flat; I like mine between 1/8 and 1/4 inch thick.
- Mix the parmigiano cheese with the breadcrumbs. Salt the turkey well, dip into the beaten eggs and then dredge in the breadcrumb-cheese mixture. Heat the 1/4 cup of olive oil in a large pan and fry the turkey cutlets over medium-high heat until golden on both sides, about 6 to 8 minutes.

- With a paper towel, pat dry each turkey cutlet completely and season with salt and pepper. Set aside for at least 30 minutes to allow the cutlets to come to room temperature for even cooking.
