Steps:
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 45 seconds or until desired consistency is reached.
- Store in refrigerator. Shake well before using.
- If you desire to strain away sediment, place a fine mesh sieve or filtration bag over a large bowl. Pour almond milk slowly into sieve and allow to filter through, or stir the milk in the sieve with a spatula to encourage it to pass through more rapidly. Do not strain if using cashews.
- *Note: Almond Milk is high in fiber only if it's not strained.
HOMEMADE CASHEW AND ALMOND MILK
The addition of cashews makes this recipe a little creamier. Feel free to sweeten with Stevia, agave nectar or dates!

Steps:
- Submerge almonds and cashews in water overnight to soften (minimum 6 hours).
- Drain nuts, and discard water.
- Place nuts in a high-powered blender. Add water and remaining ingredients.
- Blend on high for 1 minute, or until a white creamy milk forms and the majority of the particles are dissolved.
- Place a cheese cloth, nut bag or clean kitchen towel in a fine mesh strainer over a bowl.
- Pour contents of blender over cloth.
- When it mostly drains through, give the cloth a good squeeze to get the remaining milk out.
- Discard nut pulp (or dry it and use it in another recipe!).
- Drink and enjoy! Can be stored in fridge up to 4 days.

- Soak the cashews in hot water for 1 hour.
- Drain and combine the cashews with 125ml cold water in a high powered blender. Blend until completely smooth
- Add 375ml cold water and the maple syrup and blend again until completely smooth. Store in the fridge for up to 5 days and shake before consuming.

- 1. Place the cashews in a large jar or medium bowl and cover with 2 inches of cold water. Cover with a clean kitchen towel and refrigerate. Soak cashews at least 8 hours and up to 12 hours.
- 2. Drain off the soaking water, which contains phytic acid, and rinse the cashews in a fine-mesh strainer under cold running water.
- 3. In a high-speed blender or food processor, combine drained, soaked cashews with 2 cups of water, salt, and maple syrup (if using). Blend on high speed until cashews are finely ground and water is opaque.
- 4. Strain the cashew milk through a nut milk bag or cheesecloth-lined fine-mesh strainer into a large measuring cup. Tie up the ends of the cheesecloth or close the nut bag and massage as much of the cashew milk out as you can.
