BAKED CAVATAPPI WITH SAUSAGE

- Preheat the oven to 500˚ F. Bring a large pot of salted water to a boil. Add the pasta and cook 2 minutes less than the label directs for al dente. Reserve 1 cup cooking water, then drain.
- Meanwhile, cook the sausage in 1 tablespoon olive oil in a large skillet over medium-high heat, breaking up the meat, until browned, 5 to 6 minutes. Remove to a plate using a slotted spoon.
- Heat 1 more tablespoon olive oil in the skillet over medium-high heat. Add the onion and cook until tender, about 5 minutes. Add the garlic and herbes de Provence and cook 30 seconds. Stir in the tomatoes, sausage and 1/4 cup of the reserved cooking water; season with salt and pepper. Bring to a gentle boil, then reduce the heat and simmer until thickened, 3 to 5 minutes. If the sauce is too thick, add a bit more cooking water. Stir the pasta into the sauce.
- Whisk the ricotta, 1/4 cup cheese blend, the lemon zest, 1/2 teaspoon each salt and pepper and 3 tablespoons cooking water in a bowl. Layer half of the pasta and ricotta mixture in an 8-inch square baking dish, then top with the remaining pasta, ricotta mixture and cheese blend. Bake until bubbly, 8 to 10 minutes.
- Toss the lettuce with the lemon juice and remaining 2 tablespoons olive oil; season with salt and pepper. Serve with the pasta.
CASSAVA PATTIES
The first time I had these was when I went to Jamaica in 2003 and they were so good that I bought more to bring back to America with me and make at home for my family. So easy to make too! I would serve this with a coconut curry gravy or with whatever kind of brown gravy you like.

- Start out by soaking the piece of fish for a few hours (at least 2 hours) until it flakes apart.
- In a shallow dish, pour 1 cup of milk and 1 cup of coconut milk into the dish. Soak the cassava patties in the dish until coated.
- Pour oil into the botom of a shallow pan and cook cassava patties over medium heat for about 1 minute on each side (until they are golden, but not brown).
- GRAVY:.
- Put all ingredients into a pot and bring to a boil. Watch very carefully so milk does not boil over. Oce milk begins to boil, bring the heat down to low and let simmer.
- Stir in flour and mix for about 1 minute. Turn off stove, pour gravy over cassava, and go to tropical paradise!

- Make the Batter: Place the knotted pandan leaves and 1¼ cups water in a small saucepan and bring to a boil over high heat. Cover, reduce the heat to low, and simmer for 15 minutes. Measure out 1 cup of the pandan water and allow it to cool to room temperature. If using pandan extract, stir it into 1 cup cool water and set aside.
- Move the grated cassava onto a kitchen towel. Bring together the ends of the cloth and twist to squeeze out as much liquid as you can. There won’t be much liquid, and it may simply be absorbed by the cloth. Place the cassava in a large bowl and break it up a little. Add the sugar and pandan water and mix well.
- Steam and coat the dumplings: Remove the basket from the steamer pot, add 2 inches of water to the pot, and bring to a boil over high heat. Arrange as many dipping bowls in the basket as you can. Spoon enough batter into each bowl to fill them halfway. Place the basket in the pot, cover, and steam for 15 minutes.
- Remove the pot from the heat. Carefully remove the basket, place it on a folded kitchen towel, and allow the pichi-pichi to cool slightly. Meanwhile, spread the coconut out on a large plate. Working while they are still warm, unmold the pichi-pichi with a butter knife or a small spatula and place them on the plate of grated coconut. Turn and press all sides into the coconut, then arrange them on a serving plate. Repeat with any remaining batter. Serve warm or at room temperature. Pichi-pichi can be refrigerated for up to 3 days. Allow them to come back to room temperature before serving.
