PANTRY CHICKEN CASSEROLE
Using pantry items plus a couple of fresh items, you can create a cheesy, comforting casserole your whole family will love. Though it does include RO*TEL® and a can of mild green chile peppers, it's not spicy, but if you like the heat, choose hot RO*TEL® and peppers. This pantry chicken casserole reheats well, too, but I had to hide it, or there would have been no night #2! A crusty bread and a green salad complete this easy pantry meal.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a large casserole dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- While the pasta is cooking, melt butter in a large skillet over medium heat. Add onion and bell pepper and cook, stirring occasionally, until vegetables are tender, about 5 minutes. Add mushrooms and cook until they release their liquid, about 5 minutes. Add garlic and cook, stirring occasionally, until fragrant, about 1 minute.
- Stir in processed cheese food, diced tomatoes and juice, diced tomatoes and green chiles with juice, and mild chile peppers. Cook and stir until cheese has melted, 5 to 10 minutes. Remove from heat and stir in cooked pasta and chicken. Pour into the prepared baking dish.
- Bake in the preheated oven until heated through, about 20 minutes. Serve warm.

- In a large, straight-sided skillet or pot, combine all ingredients except chicken; cover with water by 1/2 inch. Bring to a boil over high. Add chicken and return to a boil. - In a large saucepan, saute mushrooms and onion in 3 tablespoons butter until tender. Add garlic; cook 1 minute longer. Stir in flour until blended. Gradually add milk; bring to a boil. CASSEROLE-POACHED CHICKEN W/ WHITE WINE TARRAGON SAUCE (JULIA CH
From Mastering the Art of French Cooking. Very moist chicken with a rich cream sauce. The sauce is so rich that I would follow Julia's recommendation of very simple sides that don't compete with the flavors at all... buttered peas and baked or mashed potatoes work well. This recipe looks very long, but is actually quite easy... just prep the bird and throw in the oven. The sauce comes together quickly at the end.

- Preheat oven to 325, then cook the onions and carrots on the stovetop (in a casserole just large enough to hold the whole chicken) in 2 T butter until vegetables are tender but not brown.
- Rub the outside of the bird with 1.5T of the butter and place the other 1.5 T inside the bird. Sprinkle the outside with half of the salt and tarragon and the inside with the other half. Truss and arrange the chicken breast-side-up on top of the sauteed vegetables in the casserole.
- Pour the wine into the casserole and add enough of the chicken broth to reach about 1/3 of the way up the chicken. Add the herbs and giblets. Bring to a simmer on top of the stove. Drape the damp cheesecloth over the breast and thighs. It should be long enough to fall into the liquid on either side so that is will draw the broth over the chicken and basted it during the cooking. Smear remaining butter over cheesecloth and top with a layer of waxed paper. Cover casserole and set in the preheated oven.
- Bake chicken for 1 hour and 40 minutes. Watch to make sure that the liquid remains at a very soft simmer and adjust temperature accordingly if needed. When chicken is done (juices should run clear), remove chicken to a platter and strain the cooking juices. Return one cup of the stock to the casserole with the chicken. Cover to keep warm while you prepare the sauce.
- For sauce: Melt butter in saucepan, blend in flour with a wooden spoon and stir over moderate heat until butter and flour foam together for 2 minutes without browning. Remove from heat and as soon as it stops bubbling, add 2 cups of the hot chicken stock,, blending vigorously with a wire whisk.when smooth, set over moderate heat and stir slowly as sauce thickens and comes to a boil. Boil, stirring for 2 minutes. Sauce will be quite thick.
- Pour in 1/3 cup of the cream and add successive spoonfuls until sauce thins out but is still thick enough to lightly coat a spoon. Check seasoning and add salt, white pepper and lemon juice to taste. Just before serving beat in the remaining 2 T butter.
- Carve the chicken and top with the sauce.
BASIC POACHED CHICKEN

- Remove the gizzards, heart, neck and liver from the chicken. Pull off any excess fat from the edges of cavity. Rinse the chicken in cold water, pat dry on paper towels and rub with the lemon juice. Place in a large, deep pot and cover with cold water to a depth of two inches. If necessary to fit the chicken comfortably in the pot, it can be split in half. Rinse the gizzards, heart and neck and add them as well. Reserve the liver for another use. It should not be added to poached chicken, because it will make the stock bitter. It can be frozen. The excess fat can be sauteed slowly in a small skillet to use for frying or it can also be frozen for future use.
- Bring the water with the chicken to a boil.
- While the water is coming to a boil, cut the root and top ends off the onions but do not peel them. The skin will enhance the color of the soup. Trim the roots and most of the green off the leeks and trim the root ends off the carrots. Cut or break the celery if necessary to fit it into the pot. Add the garlic. Tie the parsley and dill together in a piece of cheesecloth.
- When the chicken has come to a boil, reduce the heat to a steady simmer and skim the surface of the water, removing the scum as it accumulates. Do this for at least five minutes, until relatively little scum reappears.
- Add the vegetables, herbs and peppercorns. Continue simmering the chicken and vegetables slowly, skimming the surface from time to time, for one hour, until the juices of the chicken run clear when the thigh is pricked with a sharp fork. If necessary, additional water can be added to the pot during the cooking.
- Remove the chicken from the pot, allowing it to drain well. Set it aside, covered, in a shallow bowl.
- Pour the contents of the pot through a colander set into another large pot or a deep bowl that holds at least six quarts. Clean the original cooking pot. Pour the soup through a large, very fine strainer into the cooking pot. If you do not have a large very fine strainer, use a large strainer with a coarser mesh and line it with a clean linen napkin.
- Bring the soup to a gentle simmer and allow it to cook for 20 to 30 minutes, until it has reduced and concentrated somewhat. Do not allow it to come to a boil or it will turn cloudy. When the soup tastes rich enough, season it with salt.
- While the soup is simmering, retrieve vegetables you wish to serve with it and cut them into one-inch pieces. Remove the skin from the chicken and cut it into serving pieces.
- Serve the chicken and vegetables in bowls, with the hot soup spooned over them. If desired, noodles or rice can be cooked separately and added to the soup as well.
