Steps:
- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking pan. Line the pan with parchment, leaving an overhang, then butter the parchment.
- Whisk the flour, baking powder and salt together in a medium bowl and set aside. In another bowl, whisk the melted butter and brown sugar together until combined. Add the vanilla and eggs and stir to combine. Fold the flour mixture into the wet ingredients, being careful not to overmix. Fold in the walnuts and 1 cup of the chocolate chips. Pour the batter into the prepared pan and smooth the top. Scatter the remaining 2 tablespoons chocolate chips over the batter.
- Bake until the top is a light golden brown, 20 to 25 minutes, being careful not to overbake. Let cool on a wire rack. Remove the blondies from the pan and transfer to a cutting board. Cut into rectangles, sprinkle with flaky salt and serve.
PLATINUM BLONDIES
The recipe for these rich and tasty treats came from an Al Roker cookbook courtesy of the Food Network. Blondies have been popular in America even longer than brownies. This recipe would be appropriate for any U.S. region.

Steps:
- Preheat oven to 325°F.
- Grease an 8" square baking pan.
- Beat sugar and egg until fluffy, about 3 minutes with mixer.
- Add vanilla and butter, and beat to mix well.
- In a small bowl, stir flour, baking soda, and salt.
- Add flour mixture to the butter mixture, beat just until incorporated.
- Don't overmix.
- Stir in the pecans and white chocolate with a spoon.
- Note: I buy a good quality white chocolate bar, and beat it in the package with a heavy spoon or meat tenderizer to break it up into chunks before opening the package, and pouring into the mixture.
- Spoon the batter into the pan and smooth the top.
- Bake for 25- 30 minutes, until the top is dry and golden, and a knife inserted in the center comes out with just a few crumbs, not perfectly dry yet.
- Remove from the oven and cool.
- Cut into 2" squares.
BUTTERSCOTCH BLONDIES
Steps:
- Beat 1 cup vegetable oil and 3/4 cup granulated sugar until fluffy; beat in 1 teaspoon vanilla and 2 eggs. Whisk 2 1/2 cups flour, 3/4 teaspoon baking soda and 1 teaspoon salt, then stir into the oil mixture. Add 2 cups butterscotch chips and chill 30 minutes. Drop by tablespoonfuls and bake 14 to 16 minutes at 350 degrees.
PLATINUM BLONDIES
Brownie who? These blondies will turn heads with sweet white chocolate, salty macadamia nuts and rich shredded coconut. Like any true blonde, these all-white bars have no dark roots to hide.

- Preheat the oven to 350 degrees F. Cut a piece of foil 9 by 20-inches. Butter the corners and sides of a 9-by-13-inch baking pan. Line the pan with the foil so that the excess hangs over at each of the short sides of the pan.
- Whisk the flour with the baking powder and salt in a medium bowl.
- Whisk the eggs, sugars and vanilla until smooth in a large bowl. Using a rubber spatula, stir in the melted butter. Stir the flour mixture into the butter mixture until just combined. Stir in the white chocolate chips and nuts. Spread the batter in the prepared pan using a large spoon. Sprinkle the coconut over the top and press it in lightly. Bake until the top of the blondie is golden and set, the coconut is very brown and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Cool completely on a rack, about 1 hour.
- When the blondie has cooled completely, place a lightweight cutting board or a baking rack over the top of the pan. Flip and set on the counter. Gently pull the pan from the foil and the foil from the pan to remove. Gently peel the foil off the blondies. Place another lightweight cutting board on top, and flip the blondie right-side-up. Slice into fifteen 2 1/2-by-3-inch rectangles, then slice each rectangle on the diagonal to form 30 triangle-shaped bars.
MATCHA BLONDIES ("MATCHIES")
These rich, smooth "blondies" showcase matcha's complex, pleasantly bitter flavor, which reminds us of dark chocolate.

- Preheat the oven to 350 degrees F. Butter a 13-by-9-inch metal baking pan, then line the bottom and sides with parchment paper; butter the parchment paper. Dust the inside of the pan with flour and knock out the excess.
- In a large microwavable bowl, microwave the butter until it melts, about 1 1/2 minutes. Add two-thirds of the white chocolate, then shake the bowl so that the butter covers the chocolate; let stand for 1 minute. Starting from the center of the bowl, whisk the butter and white chocolate together slowly until smooth. Add the matcha powder and whisk until smooth.
- In another large bowl, vigorously whisk together both sugars, the vanilla, salt and eggs until smooth, lightened in color and foamy, about 30 seconds. Scrape the matcha mixture into the bowl and whisk until smooth. Add the flour and use a rubber spatula to fold it in until just incorporated.
- Scrape the batter into the prepared baking pan, spreading it evenly, and smooth the top. Bake until light brown on top and a toothpick inserted halfway between the center and edges comes out clean, about 35 minutes.
- Remove the baking pan from the oven and immediately sprinkle the remaining 4 ounces white chocolate evenly over the top of the "matchies"; let stand for 1 minute. Using a small butter knife or offset spatula, spread the chocolate evenly over the top, creating swirls and peaks.
- Let the "matchies" cool completely, then use the parchment paper to lift them from the pan to a cutting board. Slice them into 24 squares and serve. Store leftovers in a single layer in an airtight container for up to 5 days.
"BROWN ON BLONDE" BLONDIES
Steps:
- Crank the oven to 350ºF. Coat the insides of an 8-inch square baking pan with non-stick cooking spray and line with a sling of parchment paper.
- Melt the butter in an 8-inch sauté pan over medium heat. When it's done bubbling, add the walnuts and pecans and cook until the nuts are toasted and the butter smells nutty, 5 to 7 minutes.
- Meanwhile whisk together the flour, baking powder, and salt in a small bowl.
- Place a fine-mesh strainer over a large heatproof bowl and strain the butter away from the nuts. Set both aside to cool for 30 minutes. Then, chop the nuts coarsely and set aside.
- While you're waiting, beat the almond butter into the cooled butter, followed by the brown sugar, eggs, egg yolk, and vanilla. Beat until completely smooth, about 1 minute, then stir in the flour mixture. Finish by folding in the nuts and transferring to the prepared pan. The batter will be thick, so I suggest a rubber or silicone spatula.
- Bake for 30 to 35 minutes, until the edges are deeply brown and the top is dry and cracked. Remove from the pan and cool on a rack for about 30 minutes. Slice into squares and devour with plenty of frosty almond milk.
BLONDIES
My family loves these chewy bars so much that a pan of them does not last very long in our home. They are from a Kitchenaid cookbook entitled "Great Baking and More." These yummy bars are so quick and easy to stir up and are great for dessert, snacks or lunch boxes. I have used pecans in place of the walnuts and M&Ms for the chocolate chips successfully. Feel free to add your favorite ingredients to this buttery base - it's a winner!

THE BEST BLONDIES!
I got this out of a magazine and changed it around a bit to make it better. Most blondies use melted butterscotch chips but instead you create an authentic rich butterscotch flavor by boiling butter and brown sugar together. These go great with some vanilla ice cream! Most people don't know what a blondie is so I tell them it's like if a cookie and a brownie made a baby haha.

- heat over to 350*F.
- Coat a 8X8 inch (I use a glass pan and pam it lightly).
- In a large bowl combine all the dry ingredients and wisk them together.
- In a small saucepan melt the butter over medium heat and then stir in the brown sugar, bring it to a boil and reduce the heat and stir for 1 min or 2.
- In a large bowl mix the egg and the vanilla together.
- Slowly wisk the butter and brown sugar into the eggs (VERY slowly so you don't cook the eggs).
- Pour the dry stuff into the wet stuff and mix it together.
- Fold in chocolate chips.
- Bake for 18-20 mins or until it passes the toothpick test.

- Position an oven rack on the middle rung.
- Heat the oven to 350°F.
- In a medium saucepan over medium heat, heat the butter and brown sugar, stirring frequently, until the sugar has dissolved.
- Cook, stirring, about 1 minute longer--the mixture will bubble but should not boil.
- Set the pan aside to cool for about 10 minutes.
- Meanwhile, butter an 8-inch square pan, line the pan bottom with parchment (or waxed paper), and then butter the parchment.
- Stir the egg, egg yolk, and vanilla into the cooled sugar mixture.
- Add the flour, salt, and nuts, stirring just until blended.
- Pour the batter into the prepared pan.
- Bake until the center is springy when touched (the top may still look doughy) and a toothpick inserted in the center comes out clean (it's fine if there are a few moist crumbs clinging to it), 25 to 35 minutes.
- Set the pan on a rack until it's cool enough to handle.
- Run a paring knife around the inside edge of the pan and then invert the pan onto a flat surface and peel off the parchment.
- Flip the baked brownie back onto the rack to cool completely.
- Cut into squares with a sharp knife.
- This recipe can be doubled easily; use a 13x9-inch pan and increase the baking time slightly.

FINALLY! BLONDIES LIKE THEY SHOULD BE
I am a HUGE (well, luckily not literally) fan of blonde brownies. So I've been testing/tweaking different recipes for a while. I've finally come up with a recipe that tastes just like I think they should! These are definitely chewy (almost underbaked) with a brown sugar flavor to them.

- Preheat oven to 350 degrees Fahrenheit.
- Melt margarine in a glass mixing bowl, in the microwave. ("Zap" on LOW power until it looks melted).
- Stir in brown sugar; add vanilla; add eggs.
- Stir in flour and baking powder; stir in chocolate chips.
- Spread/pour batter into a 9 x 13" baking pan.
- Bake 19 minutes. (Until toothpick inserted 2" from edge comes out clean)Blondies will firm as they cool.
- Cool completely in pan on a wire rack.
- Variations:.
- Sometimes I substitute the 3/4 cup chocolate chips for 1/2 cup butterscotch chips. I think that too much of the butterscotch flavor can be overpowering.
- My second idea is a little more unconventional as far as blondies go. Omit the chocolate chips, stir in some cinnamon, allspice and ginger.
