CAULIFLOWER GRATIN
Prep Ina Garten's recipe for Cauliflower Gratin from Barefoot Contessa on Food Network ahead as a creamy, cheesy vegetable side for a no-stress dinner party.

- Preheat the oven to 375 degrees F.
- Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.
- Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the hot milk into the butter-flour mixture and stir until it comes to a boil. Boil, whisking constantly, for 1 minute, or until thickened. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan.
- Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Sprinkle with salt and pepper. Bake for 25 to 30 minutes, until the top is browned. Serve hot or at room temperature.

- Preheat the oven to 400F and grease a casserole baking dish. Ours was 7x11 in size, a 9x9 pan will work as well. Just fill the cauliflower pieces to the top of your dish.
- Add the cauliflower to the pan and cook it for 25 minutes, it won't be cooked through at this point.
- While the cauliflower cooks, start on the sauce. In total, it'll take less than 10 minutes to make the cheese sauce so start it when there are 10 mins left on the cauliflower.
- Heat a greased skillet over medium-low heat. Add the cream, 1 cup of shredded cheese, garlic salt, and black pepper. Combine the sauce ingredients and stir it constantly until the cheese is melted and the sauce is heated through.

- In a large skillet over medium-high heat, cook the bacon until crispy and browned. Set aside on paper towel.
- Heat a large pot of salted water on high until boiling. Add the cauliflower and cook for 3 minutes. Drain and set aside.
- In the same pot, melt the butter. Whisk in the flour, stirring constantly. Stir in the milk, and stir constantly until thick and creamy. Stir in the cheese, nutmeg, and salt & pepper to taste.
- Add the cauliflower and bacon to the cheese mixture and toss to combine. Pour into an 9×13 baking dish and top with bread crumbs and a sprinkle of cheese.

- Preheat the oven to 425 degrees. Line a baking sheet with parchment paper. Butter a 2 1/2 quart baking dish and place on the baking sheet.
- Cut the cauliflower into florets, leaving about an inch or so of stem. Drop the florets into salted, boiling water and cook for 10 minutes. Drain in a colander,then run cold water over cauliflower to cool. Pat dry.
- Add the bacon strips into a skillet and cook over medium heat just until the bacon is browned. Remove to a paper towel lined plate to cool.

- Steam or boil cauliflower until just tender but still firm about 5 minutes. Drain and place in a 2 quart casserole dish
- In a medium sized skillet add the bacon pieces. Cook until crisp and sprinkle on top of the cauliflower.
- In a medium sized saucepan add the butter and melt. Add the flour and cook about a minute until it thickens. Slowly whisk in the milk and add in cheese, salt and pepper. Whisk until cheese is melted and sauce has thickened. Pour evenly over the cauliflower and bacon.
- Top with parmesan cheese. Mix bread crumbs with melted butter and sprinkle over the top. Bake at 375 degrees for 20-25 minutes or until bubbly and slightly brown at the top.
