JAN'S CAVATELLI WITH BROCCOLI RABE

Quick, easy and definitely delicious. Spicy sausage and creamy cavatelli is tossed with tangy broccoli rabe in a delicate chicken and wine sauce. I also use gnocchi in place of the cavatelli on occasion.

Jan's Cavatelli with Broccoli Rabe image

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook cavatelli in the boiling water, stirring occasionally until tender yet firm to the bite, 9 to 11 minutes. Drain.
  • Fill the same pot with salted water and bring to a boil. Add broccoli rabe; cook until tender, 7 to 10 minutes. Drain.
  • Heat butter and olive oil in a large skillet over medium heat. Add sausage and onion; cook and stir until sausage is no longer pink, 5 to 7 minutes. Stir in broccoli rabe, roasted red peppers, and garlic. Cook until flavors combine, about 5 minutes.
  • Dissolve chicken stock with white wine and water in a small bowl. Whisk in cornstarch. Pour chicken stock mixture into the skillet. Season with salt and pepper. Bring sauce to a simmer until slightly thickened, 3 to 5 minutes. Remove from heat.
  • Pour sauce over cooked cavatelli and top with Parmesan cheese. Toss lightly and serve.

Steps:

  • In a saucepan, heat the olive oil over moderate heat until hot. Add the garlic and cook it, stirring, until pale golden. Add the broccoli, salt, and red pepper flakes and cook, stirring, for 2 minutes. Add the chicken broth and simmer for 5 minutes.
  • Meanwhile, cook the pasta. Drain the pasta and transfer it to the saucepan. Toss with sauce to combine. Serve with the cheese.

Broccoli Rabe and Cannellini Beans image

Steps:

  • Trim and discard coarse leaves and tough stem roots from broccoli rabe. Cut off florets. Peel large stems and cut stems and leaves into 1 1/2-inch pieces. Rinse and drain. In a large skillet set over moderate heat cook the garlic in the oil until lightly golden. Add the broccoli rabe, broth, red pepper flakes and salt to taste and cook the mixture, over moderately high heat, partially covered, stirring occasionally, for 3 minutes. Add the cannellini beans and cook, stirring occasionally, until broccoli is just tender and beans heated through.
  • In a pot of boiling salted water cook the orecchiette until al dente. Drain. Add broccoli rabe mixture and toss to combine.

Steps:

  • In a large saucepan heat the 1/4 cup olive oil over medium-high heat. Add the onion and cook until just beginning to caramelize around the edges, 5 to 7 minutes. Add the garlic and cook for 1 minute, stirring constantly. Add the broccoli rabe and cook, stirring, until just wilted, about 3 minutes. Add the cannellini beans, chicken broth, crushed red pepper and basil and cook at a simmer, uncovered, until the liquid has reduced slightly and the beans are just beginning to break apart, about 15 minutes. The sauce should be brothy. Remove from the heat and season with salt and freshly ground black pepper. When ready to serve, transfer the warm pasta to a large bowl. Add half of the sauce and toss to combine. Serve the pasta in shallow bowls, with more sauce ladled over the top. Sprinkle each serving with some of the crispy pancetta and drizzle with extra-virgin olive oil, to taste. Pass the cheese at the table for guests to add at their own discretion.

Steps:

  • In a kettle of boiling salted water cook pasta until al dente.
  • While pasta is cooking, squeeze sausage from its casings into a large heavy skillet and sauté over moderately high heat, stirring to break up chunks, until no longer pink. With slotted spoon transfer sausage to a bowl, reserving drippings in skillet.
  • Cut broccoli rabe into 1-inch pieces and sauté in reserved drippings, stirring occasionally, until it begins to brown. Add garlic and sauté, stirring frequently, 1 minute. Add broth and raisins and simmer until broccoli rabe is just tender, about 3 minutes. Add butter, stirring until incorporated.
  • Drain pasta and return to kettle. Add broccoli rabe mixture and sausage and heat through if necessary.
  • Serve pasta with Parmesan.

½ pound (about 2 cups) dried cavatelli or other small shell-shaped pasta
½ pound (about 3 links) sweet Italian sausage

Drizzle with the olive oil and sprinkle with 3/4 teaspoon salt and black pepper. Toss to coat then spread into an even layer, scattering the beans throughout. Roast for 15 minutes, then remove the pan from the oven and gently toss the broccoli and beans to move it around a bit and promote even browning. Return to the oven and bake 5 to 10 additional minutes, until the broccoli is dark and crisp at the tips of the florets and the beans are lightly crisp. Set aside.
  • While the broccoli and beans cook, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to the package instructions. Reserve 1 generous cup of the pasta cooking water, then drain the pasta.
  • Return the pasta to the pot. Add 1/4 cup reserved pasta cooking water, the ricotta, Parmesan, red pepper flakes, and remaining 1/4 teaspoon salt.
  • Zest the lemon right into the pot, then cut the lemon into quarters and squeeze in the juice. Add the roasted broccoli and beans, then gently stir, adding more pasta water as needed if the pasta is too thick. Taste and add more seasoning as desired (I added a pinch of extra salt and red pepper flakes). Serve hot, sprinkled with additional Parmesan cheese.

  • Cut off and discard the lower part of the broccoli rabe stems, leaving the broccoli about 8 inches long. Remove any large tough leaves. If the stems are very thick, you can peel the lower part with a vegetable peeler. Removing the peel takes out some of the bitterness. Cut the stems into roughly 2-inch lengths.
