Down in New Orleans everyone knows of or has been to Mosca's restaurant. It's a dive, owned and operated by the Mosca family forever and serves absolutely THE BEST ITALIAN food in the South. The food is served family-style, the wine is served in little juice glasses, and it's way out of town. Always a fun evening filled with great food and good friends!

Steps:

  • Heat oil in frying pan and add shrimp and spices, saute for 15 minutes, or until the shrimp turn pink.
  • Add wine and simmer for 10 minutes more.
  • Shrimp are to be peeled at tableside and served with hot, crisp bread for dunking into the sauce.

Steps:

  • Heat the oil in a large pan and when hot add the shrimps (unpeeled), the oregano, rosemary, black pepper, salt, bay leaves and garlic. Saute gently for 5 minutes. Add the white wine and cook gently another 5 minutes, or until the wine is reduced to a syrup. Place on serving dish and pour over aromatic sauce.

2 pounds jumbo shrimp (whole, unpeeled, green)
1 small sprig fresh oregano, finely chopped (or use dried)

  • In a 10-in. ovenproof skillet, saute garlic in butter and oil until fragrant. Add the shrimp, lemon juice, pepper and oregano; cook and stir until shrimp turn pink. Steps:

  • In a large, nonreactive bowl, mix together olive oil, lemon juice, wine, garlic, parsley, and paprika; season with salt and pepper. Add shrimp and toss to coat. Cover and transfer to refrigerator. Let marinate for 30 minutes.
  • Remove shrimp from marinade and transfer to a shallow baking dish. Transfer remaining marinade to a medium saucepan and bring to a boil over medium-high heat. Remove from heat; let cool slightly. Pour over shrimp.
  • Preheat broiler.
  • Spoon 1/2 teaspoon butter over each shrimp and sprinkle with breadcrumbs. Broil until shrimp are opaque, 4 to 6 minutes. Serve immediately with lemon wedges.

Steps:

  • Bring a large pot of salted water to a boil. Add angel hair pasta and return pot to boil. Cook until al dente. Drain well.
  • In a large saucepan, melt butter, saute garlic until tender, remove garlic and discard. Add shrimp and cook until colored pink. Stir in white wine. The bread crumbs are used as thickening, so stir in a little at a time until desired thickness is reached.
  • Serve shrimp over angel hair pasta, sprinkled with Parmesan cheese.

Hawaiian Garlic Shrimp Scampi image

Steps:

  • Separate garlic cloves into a bowl and place another bowl on top. Shake until all of the peels are knocked off the cloves, about 30 seconds, being careful not to shake too hard. Chop peeled cloves into relatively small pieces.
  • Melt butter in a saute pan over medium heat and add chopped garlic. Cook, stirring occasionally, until golden brown, 2 to 3 minutes. Transfer the garlic and butter into a small bowl and reserve.
  • Pat thawed shrimp dry with paper towels and add to a large mixing bowl.
  • Combine rice flour, paprika, cayenne, and salt in a small bowl. Sprinkle over the shrimp and use a large spoon or spatula to toss until completely coated.
  • Heat olive oil in a nonstick skillet over medium-high heat. Add some shrimp in a single layer and cook until browned and just barely cooked through, 2 to 3 minutes per side. Add some garlic butter and cook for another 30 seconds. Repeat with remaining shrimp and garlic butter. Serve immediately.
