CAVATELLI WITH SAUSAGE AND BROCCOLI RABE

This is something that I grew up on. My grandmother made this all the time. It is so filling and tasty (and comes together pretty quickly, too)!

Steps:

  • Place sausage in a large skillet over medium heat and, using a wooden spoon, cook until brown and crumbly.
  • Meanwhile, bring at least 4 quarts of lightly salted water to boil and add broccoli rabe and cavatelli. Cook until pasta is done, approximately 11 minutes. Before draining, reserve approximately 2 cups of pasta cooking water.
  • When sausage is done, remove from skillet with a slotted spoon. Add extra virgin olive oil to skillet drippings and cook over medium heat until warm. Add sliced garlic, and red pepper flakes and cook until lightly golden (about 1 minute). Add about 1 cup of pasta cooking water to skillet and cook for 1 minute more. Then add drained pasta and broccoli rabe to skillet. Stir to combine and add reserved sausage. Add salt, pepper, and cheese to taste. Stir to combine again. Simmer for 2 minutes or so. If too thick, add more of the reserved pasta cooking water until desired consistency.
  • Add more cheese before serving and enjoy!

HOMEMADE CAVATELLI PASTA

Cavatelli is a typical Southern Italian pasta made out of just durum wheat semolina flour and water. The starch contained in the durum gives this pasta its distinctive and firm texture, perfect to go with a simple tomato sauce or with a rich Bolognese. Make sure to use a very fine semolina (called durum or semola rimacinata) or the dough will be too stiff.

Steps:

  • Mix semolina flour and salt in a large bowl or on a marble work surface. Make a well in the center.
  • Pour water into the well a little at a time, mixing it with the flour. Add as much water as needed to make a sticky but compact dough.
  • Knead dough with your hands by flattening the ball, stretching it, and folding the top towards the center. Turn 45 degrees and repeat until dough is elastic and smooth, but not too soft, about 10 minutes.
  • Shape dough into a ball. Place in a bowl and cover with plastic wrap. Let rest at room temperature for about 30 minutes before using. If you are using the cavatelli within a few hours or the following day, wrap in plastic wrap and chill in the refrigerator.
  • Work with one portion of the dough at a time, keeping the remaining dough covered to keep it from drying out. Dust a work surface with semolina flour; roll out the dough to make a rope, about 1/3 inch thick.
  • Cut off little 1/3-inch-thick pieces. Press and gently drag the small piece of dough towards you with your index and middle finger. The two sides will curl inwards, leaving hollow spaces.
  • Proceed the same way with the rest of the dough. Transfer cavatelli to a floured surface and sprinkle with more semolina flour. Do not overlap cavatelli or they will stick together. Let dry for about 30 minutes before cooking.

JAN'S CAVATELLI WITH BROCCOLI RABE

Quick, easy and definitely delicious. Spicy sausage and creamy cavatelli is tossed with tangy broccoli rabe in a delicate chicken and wine sauce. I also use gnocchi in place of the cavatelli on occasion.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook cavatelli in the boiling water, stirring occasionally until tender yet firm to the bite, 9 to 11 minutes. Drain.
  • Fill the same pot with salted water and bring to a boil. Add broccoli rabe; cook until tender, 7 to 10 minutes. Drain.
  • Heat butter and olive oil in a large skillet over medium heat. Add sausage and onion; cook and stir until sausage is no longer pink, 5 to 7 minutes. Stir in broccoli rabe, roasted red peppers, and garlic. Cook until flavors combine, about 5 minutes.
  • Dissolve chicken stock with white wine and water in a small bowl. Whisk in cornstarch. Pour chicken stock mixture into the skillet. Season with salt and pepper. Bring sauce to a simmer until slightly thickened, 3 to 5 minutes. Remove from heat.
  • Pour sauce over cooked cavatelli and top with Parmesan cheese. Toss lightly and serve.

Steps:

  • Mix together flours and salt on a clean surface, make a well in center, and gradually add 1/2 cup water and oil, working flours into center until a dough forms. (If dough is too dry, add more water, 1 tablespoon at a time.) Knead dough until smooth and it springs back when gently pressed, about 5 minutes. Wrap in plastic.
  • Sprinkle 2 rimmed baking sheets with semolina flour. Divide dough into 8 pieces; keep covered with plastic wrap. Roll one piece at a time into a long rope, about 1/3 inch in diameter, then cut rope into 1/3-inch-long pieces. Using tips of index and middle fingers, firmly press each piece and pull dough toward you so it lengthens slightly and forms a curl in the middle. Transfer pieces to baking sheets. Repeat with remaining dough.
  • Cavatelli can be refrigerated, covered, up to 4 hours. (Or freeze on sheet; once firm, transfer to a resealable bag and freeze up to 3 months. There's no need to thaw before cooking.)

1 cup plus 2 tablespoons durum semolina flour, plus more for baking sheets
3/4 cup all-purpose flour
1/2 teaspoon coarse salt
2 teaspoons extra-virgin olive oil

Steps:

  • 1. Put a large pot of water on to boil over high heat. Bring a second large saucepan of water to boil. Add the broccoli rabe to the saucepan and cook until crisp-tender, 2 minutes. Remove from the heat, drain, and plunge the broccoli rabe into a large bowl of cold water. Transfer to a salad spinner and spin dry. Set aside. 2. Heat 3 tablespoons of the olive oil in a shallow Dutch oven, over medium-high heat. Add the sausage, breaking it up with a wooden spoon and stirring often, until the sausage is in small pieces and is thoroughly cooked through, about 5 minutes. Reduce the heat to medium-low and stir in the garlic. 3. Meanwhile, add the cavatelli to the pot of boiling water and cook according to the package directions, 5 to 7 minutes. 4. Add the crushed tomatoes and the salt to the Dutch oven and cook, stirring occasionally, for 5 minutes. 5. Drain the cavatelli and add to the Dutch oven with the broccoli rabe and the remaining 3 tablespoons of olive oil, tossing gently to evenly coat. Cook for 2 minutes more. 6. Serve immediately with the grated Parmigiano-Reggiano cheese and black pepper to taste.

Ingredients
1 pound broccoli rabe, coarsely chopped (2-to-3-inch pieces are good)
6 tablespoons olive oil
3/4 pound sweet Italian turkey sausage, casings removed
1/4 cup minced garlic
2 pounds frozen ricotta cavatelli
1 cup canned crushed tomatoes
1 teaspoon salt
Finely grated Parmigiano-Reggiano cheese
Freshly ground black pepper
