CEDAR PLANKED SPUDS

Here's an adaptation I made for a mashed sweet potato recipe that I found on a plank grilling website.

Cedar Planked Spuds image

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Rub the soaked cedar plank with 1/2 teaspoon of butter.
  • Use a paring knife to pierce the sweet potatoes in several spots to a depth of 1/2-inch. Cook the sweet potatoes in a microwave on High until soft, 8 to 10 minutes. Peel the potatoes, and place into a mixing bowl. Add 2 tablespoons butter, 2 tablespoons Parmesan cheese, the yogurt, and roasted garlic. Mash until smooth. Mound the potatoes onto the cedar plank.
  • Bake in the preheated oven until a golden brown crust forms on the potatoes, about 30 minutes. Drizzle with 1 tablespoon of melted butter, and season with salt and black pepper to taste. Sprinkle with parsley, onion, paprika, and the remaining 2 tablespoons Parmesan cheese to serve.

Steps:

  • Preheat oven to 500 degrees F.
  • Immerse cedar planks in water and soak for at least 4 hours or overnight.
  • Once oven is hot preheat the plank for 5 minutes prior to starting the tuna.
  • Heat a large saute pan over high heat. Season the tuna on all sides with salt and pepper then rub with olive oil. Place 2 tablespoons of olive oil into the hot saute pan. Sear the tuna on 1 side until well browned, about 4 to 6 minutes. Remove from pan placing onto the preheated cedar plank seared side up. Place on a half sheet pan. Place into the oven and roast 2 minutes (for medium rare), or until desired doneness.
  • Heat large saute pan over medium heat, toast the fennel seeds, until lightly brown and fragrant. Place olive oil and butter into the heated pan, once the butter melts and starts to brown add the thinly sliced fennel and shallot. Season fennel with salt and pepper, to taste. Cook until the fennel becomes somewhat soft and starts to brown, about 8 minutes. Finish with the chopped parsley. Set pan aside and keep warm until ready to plate.
  • Shrimp Vinaigrette:
  • Heat large saucepan over high heat. Add the olive oil. Add the garlic, shallot and chiles, being careful not to burn the garlic. Add the shrimp, white wine and orange juice to the pan, cover and lower heat to medium. Cook shrimp until they have turned pink, be careful not to overcook them. When shrimp are cooked through, remove them with a slotted spoon and place in a bowl. Reduce liquid by half, then, finish the sauce with the orange segments, chopped parsley, and butter.
  • Walnut Polenta:
  • Heat a large straight-sided pan over high heat. Add milk and butter and season with salt and pepper. Bring to a boil. Slowly whisk in polenta, reduce flame to low. Stir for 3 to 5 minutes. Fold in half of the chopped walnuts. Season with salt and pepper.
  • Assembly:
  • Place some of the sauteed fennel on the cut cedar plank. Slice tuna and arrange on top of fennel. Place plank on half of a rectangle plate. Spoon shrimp vinaigrette over tuna. Spoon polenta into cast iron casserole. Garnish with grated Parmesan and grate the remaining walnuts, over the polenta, and drizzle with walnut oil. Place casserole on the other half of the plate. Repeat procedure for the remaining portions.

20 baby shrimp, peeled

1 cup freshly squeezed orange juice
4 blood oranges, or navel oranges, segmented
1 tablespoon chopped parsley leaves
2 tablespoons butter
6 cups milk
1/4 cup butter
2 cups quick cooking polenta
2 cups walnuts, toasted
1 cup grated Parmesan
Salt and pepper
Walnut oil, for drizzling

CEDAR PLANKED SALMON WITH SPICE RUB

Cooking fish on wooden planks is a native tradition. Use untreated cedar that you can buy at the local lumberyard or hardware store. You can usually use them a few times if they are not too badly charred.

Cedar Planked Salmon With Spice Rub image

Steps:

  • Soak plank in a tub of cold water for at least 1 hour and up to 12 hours.
  • Score top side of salmon in about 2"/5cm diagonal strips but do not cut through the skin.
  • Rub olive oil into salmon.
  • In a small bowl combine sugar, paprika, salt, black pepper and cumin.
  • Rub into slits.
  • Allow salmon to marinate 10 to 20 minutes.
  • Place salmon on soaked plank.
  • Place the whole thing, plank and salmon, on the rack of a barbecue.
  • Close the lid or cover fish with an inverted metal baking dish and barbecue 20 to 25 minutes or until salmon is cooked through.
  • Remove cover for the last 5 minutes of cooking.
  • Do not turn fish during cooking. This can be brought to the table on the plank decorated with fresh herbs or the salmon can be transferred with a wide lifter to a serving platter or a clean plank.

There is nothing comparable to the taste of freshly caught salmon, but to serve it planked.....is phenomenal!!! Cedar Planked Salmon With Whiskey Maple Glaze image

Steps:

  • Plank: Make sure that the plank has soaked for at least 1 hour and up to 24.
  • Glaze: Combine the whiskey and maple syrup in a small saucepan, bringing the mixture to a low boil and reduce by about half. You should have a thick syrup that coats the back of a spoon. Add chilies and butter and stir until just combined. Set aside and keep warm.
  • Season the salmon with salt, pepper and granulated onion. Pour the glaze over the salmon carefully. Let the salmon sit for 10 - 15 minutes at room temperature, until the rub is moistened.
  • Preheat the grill on medium high heat for 5 - 10 minutes. Rinse the plank and place it on the cooking grate. Cover the grill and heat the plank for 4 - 5 minutes or until it starts to throw off a bit of smoke and crackles lightly.
  • Reduce the heat to medium low. Season the plank with kosher salt and place the salmon, skin side down, on the plank. Cover the grill and cook for 15 to 20 minutes or until the fish flakes.
  • Check periodically to make sure the plank doesn't catch fire and spray the burning edges with water if it does, making sure to close the lid afterwards.
  • When the salmon is done, squeeze half a lemon along its length and carefully transfer to a platter. Garish with remaining lemon cut into slices.
