CRAB WITH CELLOPHANE NOODLES
This is one of the must-have dishes at The Slanted Door. When the New York Times first reviewed our restaurant, they loved it and the rest is history. Steps:
- Soak the noodles in warm water for 10 minutes, then thoroughly drain. The noodles should be fluffy and light, not clumped together. Do not chill the noodles while they're draining and drying as it will ruin the texture. Remove the crab from the shell and break it up (if it's uncooked, blanch it in water about 12 minutes)
- Heat a wok over high heat until a drop of water evaporates on contact. Add the oil and heat until shimmering. Add the crab and green onion and briefly sauté, about 1 minute. Add the noodles, followed by the oyster sauce. Depending on how wet the noodles are, add a few tablespoons of chicken stock and continue to move the noodles around the wok for another few minutes, adding more stock if necessary. Finish with sesame oil and cilantro, stir until combined and serve immediately.
VEGETARIAN SPRING ROLLS
Spring rolls, a popular street food in San Francisco chef Charles Phan's native Vietnam, are usually made with shrimp and pork. But in this vegetarian version, adapted from his book The Slanted Door: Modern Vietnamese Food, he uses shiitake mushrooms, tofu and cabbage "to mimic the flavor profile and texture of the shrimp and pork," he explains.

- Soak the cellophane noodles in warm water for 20 minutes. Drain the noodles and cut into pieces about 3 inches long.
- To make the filling, in a large skillet or saute pan over medium-high heat, warm the oil until shimmering. Add the garlic and cook until light brown. Add the carrots and celery and cook until the vegetables are soft, about 3 minutes. Add the shiitake and tree ear mushrooms and cabbage and cook, stirring, until the cabbage is wilted, about 5 minutes.
- Add the salt, pepper, and sugar, and stir until combined. Add the bean sprouts and stir for about 1 to 2 minutes. Add the cellophane noodles and stir for another minute. Add the fried tofu, stirring gently to combine. Transfer the filling to a colander and set aside until the mixture is well drained.
- Fill a large bowl with very warm water. Dip one sheet of rice paper halfway into the water and quickly rotate to moisten the entire sheet. Lay the wet rice paper on a flat work surface. Spread about 1/3 cup of the filling over the bottom third of the rice paper. Spread about 1/4 cup of the vermicelli over the filling, and top with a few mint leaves. Fold in the left and right sides of the rice paper, then fold the bottom edge up and over the filling tightly and roll toward the top end to form a tight cylinder. Repeat with the remaining rice paper and filling.
- The rolls can be made up to 2 hours in advance. Cover the rolls with a damp towel until ready to serve. Just before serving, cut each roll crosswise into three or four pieces and serve with the peanut sauce.
CELLOPHANE NOODLES WITH CRAB AND BLACK PEPPER
Steps:
- In a bowl, combine the tomalley and fat, egg, water, fish sauce, pepper, and chopped cilantro and mix well. Measure the mixture; you want about 3/4 cup total. Add water if needed.
- In a wok or large skillet, heat the oil over medium heat. Add the shallot and stir-fry for about 2 minutes, or until soft. Add the crabmeat and mushrooms and stir-fry for about 1 minute, or until aromatic. Add the noodles and continue to stir-fry for about 2 minutes, or until they begin to soft en. They noodles will look a bit dry.
- Give the tomalley mixture a good stir and pour over the noodles. Quickly work the mixture into the noodles to ensure an even distribution of flavors, lowering the heat if the noodles begin to clump. In about 2 minutes, the noodles will become translucent and lightly golden.
- Remove from the heat and taste and adjust with extra sprinkles of fish sauce and/or pepper. Transfer to a serving plate and serve immediately.
GLASS NOODLES WITH CRAB

- Cover noodles in warm water for about 10 minutes. Drain.
- Put oil in a wok or large skillet, and turn heat to high. A minute later, add garlic and half the scallions and, almost immediately, the noodles and crab. Toss, and stir to mix the ingredients.
- Add the sauces, taste, and adjust seasoning as necessary. Toss with sesame oil and remaining scallions. Garnish, and serve.

- Thinly slice celery and carrots diagonally.
- Soak noodles in cool water for 1 hour. Cut into 5-inch lengths with kitchen shears. Cook in boiling water until clear, 2 to 3 minutes. Drain (don't rinse). Place in a bowl.
- Add celery, carrots, and salt. Toss with tongs for 2 to 3 minutes. Add vinegar and bean paste; toss. When cool, toss in cucumbers and oil. Serve at room temperature.

- Soak the mung bean noodles in warm water for 20 minutes or so until they become soft. Drain with a colander and set aside.
- Heat up a wok with 3 tablespoons of cooking oil. When the oil is very hot, add in garlic and onions and stir fry until aromatic. Add the crab meat and stir well. If you use frozen crab meat, add 1 teaspoon of fish sauce to season the crab meat because frozen crab meat tends to be less flavorful. Skip this step if you use fresh crab meat.
- Add the mung bean noodles into the wok and follow by oyster sauce, fish sauce, sesame oil, sugar, and white pepper powder. Stir continuously to blend well. Add mung bean sprouts and do a few quick stirs. Push the noodles to the side of the wok and add the remaining 1 tablespoon of oil into the wok. Add the beaten eggs and let is cook for about 10 seconds before you push the mung bean noodles to cover the top of the eggs. Let it cook for another few seconds before you flip the noodles over. Gently break the eggs into pieces and blend well with the noodles. Add chopped scallions into the noodles, stir a few times, dish out and serve immediately.

- Soak cellophane noodles in water for 15-30 minutes until they become soft. You can speed it up by using warm water. Discard water, rinse noodles and set aside.
- Soak dried wood-ear mushroom and shiitake mushroom in hot water for 5-7 minutes or until they are fully rehydrated. Remove stems and slice into thin strips. We need about ¾ cup sliced wood-ear mushroom and 2 tablespoons sliced shiitake mushroom.
- Peel and julienne carrot. If you have time, pick and discard the yellow beans from beansprouts since we only need the white stems and it will make the final dish prettier, but it is completely optional.
