BAKED BBQ CHICKEN WINGS
These wings are easy to make and taste delicious. They turn out slightly crispy outside and tender inside. You can use your favorite barbeque sauce so they turn out just right.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Line a jelly roll pan with aluminum foil and lightly brush with 1 teaspoon oil.
- Place wings in a single layer on the prepared pan, skin-side up, with a little space between each wing. Brush the top of each wing with the 1/3 cup oil. Brush hot sauce over the oil layer.
- Bake in the preheated oven, basting with pan juices a few times, until wings are browned, 1 1/2 to 1 3/4 hours. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Remove pan from oven and soak up excess grease with paper towels. Spread barbeque sauce over top side of wings.
- Return wings to oven and bake for 5 minutes. Spread a second layer of barbeque sauce over wings; bake for 5 minutes more.

"Char siu" literally means "fork roast" - "char" being "fork" (both noun and verb) and "siu" being "roast" - after the traditional cooking method for the dish: long strips of seasoned boneless pork are skewered with long forks and placed in a covered oven or over a fire. - Cut pork with the grain into strips 1 1/2- to 2-inches long; put into a large resealable plastic bag.
- Stir soy sauce, honey, ketchup, brown sugar, rice wine, hoisin sauce, red food coloring or red bean curd (see Cook's Note), and Chinese five-spice powder together in a saucepan over medium-low heat. Cook and stir until just combined and slightly warm, 2 to 3 minutes. Pour the marinade into the bag with the pork, squeeze air from the bag, and seal. Turn bag a few times to coat all pork pieces in marinade.
- Marinate pork in refrigerator, 2 hours to overnight.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove pork from marinade and shake to remove excess liquid. Discard remaining marinade.
- Cook pork on preheated grill for 20 minutes. Put a small container of water onto the grill and continue cooking, turning the pork regularly, until cooked through, about 1 hour. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

- For barbecue sauce, in large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the ketchup, vinegar, brown sugar, Worcestershire sauce, chili powder, cayenne and cumin. Simmer, uncovered, for 8-10 minutes, stirring often. Remove from the heat; stir in pepper sauce. Set aside 2/3 cup for serving., In a large resealable plastic bag, combine the vinegar, olive oil, salt and pepper; add chicken wings in batches and turn to coat., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. - In a bowl whisk together peanut oil, rice vinegar, 2 teaspoons soy sauce, garlic, ginger and chili oil (if using). Place chicken wings in marinade and toss to coat. Cover and refrigerate for at least 1 hour.
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Place marinated chicken wings on top, cook 20 - 25 minutes or until chicken is cooked through and skin has darkened. Turning once.
- In another bowl whisk together sweet Thai chili sauce, 1 teaspoon of sriracha and remaining teaspoon of soy sauce. Taste and add more sriracha if desired.
- Transfer hot wings to the bowl and toss to coat.
- Serve with plenty of napkins.

CHAI BBQ WINGS
Developed for RSC#18. A different but delicious way to serve a favorite snack! Feel free to cook the wings however you like best - bake, fry, grill - whatever. I set them on a metal cooling rack on a baking sheet in the oven for 45 minutes initially. 1 hour cook time is how long it took me to make this by baking the wings. It may differ for you depending on your method of cooking your wings. Enjoy!

- While your wings are cooking, steep your tea. I used 1tsp tea leaves in 2c boiling water & let it sit for 10 minutes, then strained it. You could use 3 tea bags in a similar manner.
- Empty tomato paste into a bowl, add corn syrup & spices. Mix thoroughly. Add 1 - 2c of the tea until it to your desired consistency. I used 1 3/4c.
- With a pastry brush, slather the sauce on the wings. Bake for 15 minutes in a 400F oven until the sauce has become one with the wings. Let cool for a moment then enjoy. Don't forget the napkins!
