If you're one who likes to pick off artichoke leaves and dip them into a sauce, you must try this recipe!! I'ts really easy and fun to do alongside whatever piece of meat you're grilling on a lazy afternoon.

Charred Artichokes image

Steps:

  • Cut the artichokes in half lengthwise.
  • Grill on Med/Hi heat for about 5 minute each side or until slightly charred.
  • Remove from grill.
  • Tear off 4 sheets extra-duty tin foil and assemble on each sheet: 1/2 artichoke, 1 t garlic, 1 T butter, 2 T wine and salt and pepper.
  • Wrap tightly and grill (indirect heat) for an additional 45 minutes.

2 large artichokes, stems removed at base
4 teaspoons minced garlic
4 tablespoons butter or 4 tablespoons olive oil (or combination of both)
8 tablespoons dry white wine
salt & freshly ground black pepper

CAMP FIRE ARTICHOKES

I found this recipe in a package of Ocean Mist Artichokes from Costco. I have not made the recipe as yet, but I thought it sounded interesting enough to post. It's something a little different to do with artichokes. It is difficult to estimate the cooking time because the chokes are first steamed, then grilled. The cooking time listed is for the steaming process which is variable as is the grilling time. It seems like it would be a fun summertime side dish.

Steps:

  • Cooking these artichokes is a two step process.
  • First trim the stems flat and the tops about one inch.
  • Then trim the tips of the petals with scissors.
  • Steaming process:.
  • Steam them stem side up using a steamer rack about 30 to 45 minutes or until the base of the stem is tender. This will depend on the size of the chokes. The ones that came with this recipe are HUGE so it might take these a little longer.
  • Grilling:.
  • Once the campfire or backyard grill is hot, gently spread the petals of the cooked artichokes and generously spray each one with non-fat cooking spray. Make sure spray gets between petals. Generously dust each arichoke with 1 tablespoon of mesquite seasoning or taco seasoning, followed by a half a teaspoon of garlic salt. Place cooked artichokes directly on grill. Turn frequently until outside petals are evenly charred.
  • According to the recipe, there is no need for dipping sauces, since they have a wonderful smoky flavor. However, I think I will have some on hand, just in case.
  • Once you get to the heart of the choke, remove it along with any spiny petals with a spoon.

Steps:

  • Heat the grill to high. Toss the cauliflower with half the oil and some seasoning. Tip onto a baking tray and grill for 15-20 mins until golden, charred, and tender all the way through.
  • Meanwhile, cook the orzo in a pan of boiling salted water for 8 mins, or until al dente. Drain.
  • Heat the remaining oil in a frying pan and sizzle the capers and garlic until golden. Stir in the orzo, cauliflower, lemon zest and juice and the stock. Bubble for 1 min, then spoon half into a bowl and top with the rocket. Leave the leftovers to cool for the lunchbox, see tip below.

  • Set a steamer basket in a large pot with a lid, fill with 1 inch of water, and bring to a boil over medium-high heat. Set the artichokes stem end down in the basket, cover, and steam until a knife meets no resistance when it pierces the stem of an artichoke, 20-25 minutes. Slice the artichokes in half lengthwise.
  • Heat a well-oiled grill or cast-iron skillet. Add the artichokes, cut side down, on the hot surface and let sit until they are slightly blackened. (Charred or just steamed, the artichokes can be served warm or slightly chilled.)
  • Meanwhile, in a medium-sized bowl, whisk the aioli, dill, capers, lemon zest and juice, sea salt, and paprika until well combined. Add the hot sauce, season with black pepper, to taste, and stir.


CHICKEN WITH CHARRED-ROSEMARY VINAIGRETTE - FOOD & WINE

  • Preheat the oven to 375°. Roast 2 of the rosemary sprigs directly on the oven rack for 5 minutes, until charred. Leave the oven on. Strip off the leaves, then finely crush them; discard the stems. In a small bowl, whisk the leaves with the vinegar, mustard and 1/4 cup of the olive oil. Season with salt and pepper.
  • In a large, deep skillet, heat the remaining 1 tablespoon of oil. Season the chicken with salt and pepper and cook skin side down over moderately high heat, turning once, until well browned, 12 minutes. Transfer to a plate.
  • Pour off all but 2 tablespoons of fat from the skillet. Stir in the artichokes, tomatoes, caperberries and the remaining rosemary sprigs. Top with the chicken and roast for 15 minutes, until an instant-read thermometer inserted in the chicken registers 165°. Drizzle with the vinaigrette and serve, passing more vinaigrette at the table.

  • Bring a large pot of salted water to a boil. Trim stem of each artichoke to 1 inch, and snap off dark outer leaves. Use a sharp knife to trim off the top 1 inch from the artichoke leaves.   • Prepare a charcoal grill for two-zone cooking and build a medium fire, or heat a gas grill to medium-high. Carefully wipe the preheated grates with a lightly oiled paper towel. Using a grill brush, scrape the grill grates clean, then carefully wipe with a lightly oiled towel again.
