Steps:

  • Preheat the broiler to high and adjust an oven rack to the top level.
  • Whisk together the lime juice, olive oil, garlic and a pinch of salt and pepper in a medium bowl.
  • Dice the peppers and onion into bite-size pieces (about 1/2 inch).
  • Place the tomatillos stem-side down on a sheet pan and place under the broiler. Char until the tops are blackened, about 3 minutes. Flip and broil 3 more minutes. Set aside to cool.
  • Meanwhile, heat a large cast-iron skillet on high heat and add the peppers and onions. Spread them out in an even layer and sear in the dry skillet until lightly charred, about 4 minutes.
  • Dice the tomatillos into 1/2-inch chunks. Toss all the vegetables into the bowl with the lime dressing. Stir in the diced avocado and top with the cilantro, queso fresco and toasted pepitas.

2 tablespoons fresh squeezed lime juice (from about 2 limes)
2 tablespoons olive oil
1 clove garlic, minced
Kosher salt and freshly ground black pepper
6 mini sweet peppers, mixed colors
1 small white onion
1 1/2 pounds medium tomatillos, husks removed
1 ripe avocado, 3/4-inch dice
1/2 bunch fresh cilantro leaves, roughly chopped
1/4 cup queso fresco, crumbled
1/4 cup toasted pepitas

Steps:

  • For the guacamole: Combine the cilantro, tomatillos, garlic, avocado, jalapeno, onion, lime juice, cumin and salt in a food processor or blender and pulse until combined. Set aside 1/2 cup of the guacamole for the creamy tomatillo dressing, and use remaining guacamole for another recipe.
  • For the charred corn salad: Preheat a grill pan over high heat. Brush or rub each ear of corn with the canola oil and sprinkle with salt and black pepper. Grill the corn until it gets a nice char, 2 to 3 minutes per side. Set aside until cool enough to handle, about 5 minutes. Stand each ear stalk-end down, in a wide, shallow bowl and slice the kernels off using your knife.
  • Combine the corn kernels, lime juice, avocado, Fresno chiles and red onions in a large bowl.
  • For the creamy tomatillo dressing: Mix together the mayonnaise, 1/2 cup tomatillo guacamole, hot sauce, chili powder and cumin. Add to the corn salad and toss to combine.
  • Fold in the cilantro and crumbled cotija and season with salt.
  • Serving suggestion: Portion the salad into small cups, squeeze additional lime over the top, and serve with a spoon.

3/4 cup coarsely chopped fresh cilantro
6 to 8 tomatillos, husked & coarsely chopped (about 8 ounces)
2 cloves garlic, smashed, peeled and quartered
1 avocado, halved, pitted, peeled and diced
1/2 jalapeno, coarsely chopped with seeds
1/2 onion, coarsely chopped
Juice of 1 lime
1 teaspoon ground cumin
1 teaspoon salt
6 ears fresh corn, shucked
2 tablespoons canola oil, to coat corn
Kosher salt and freshly cracked black pepper
Juice from 3 limes
1 ripe avocado, diced
1 Fresno chile pepper, seeded and finely diced
1/2 small red onion, finely diced
1/2 cup mayonnaise
1 tablespoon hot sauce
1 teaspoon chili powder
1 teaspoon cumin
1/4 cup chopped fresh cilantro
3/4 cup crumbled cotija cheese

  • Salad and Assembly:
  • Prepare grill for medium-high heat. Grill poblano, turning occasionally, until charred and blistered, 6-8 minutes. Let cool. Peel and finely chop.

CHARRED-ROMAINE SALAD

Even lettuce can be grilled. Romaine stands up beautifully to heat and develops a nice sweetness. The salad, served with pickled radishes and shallots and buttermilk dressing, is best when still hot.

  • Celery Root Steaks with Tomatillo Salsa Verde. To prevent peeled or cut celery root from browning, submerge it in cold water with the juice of 1 lemon for up to 1 day.
  • Avocado-Tomatillo Salsa Verde. Oh, the inherent stress in choosing the perfect avocado. The “ready to eat” ones can go from ripe to rotten quickly, so buy uniformly firm Hass avocados instead.
  • Chilaquiles with Blistered Tomatillo Salsa and Eggs. If you've got both a camp stove and a grill, you're golden: Prep the salsa over the live fire and make perfect eggs on the propane stove.
  • Crab Cakes with Roasted Tomatillo Mayo. Try not to pack the crab mixture too tightly; you want these to just hold their shape so they fry up light and airy.
  • Fried Whole Fish with Tomatillo Sauce. Cutting those slits in the fish is key. They help the fish cook more quickly and make it easier to tell when it's done.
  • Cucumber-Tomatillo Gazpacho. A cool green zingy soup; pack it in a thermos on ice and take it picnicking or to the beach. View Recipe.
  • Charred Tomatillo Chermoula. A delicious alternative to chimichurri to go alongside your grilled steak (or whatever!). View Recipe.
  • Charred Romaine with Tomatillo Dressing. Charred to a crisp: Not a statement usually associated with salads, but delicious nonetheless in this Mexican-inspired romaine number from Rose's Luxury.
  • Posole Verde with Chicken. We like toasting the canned hominy to concentrate and develop its flavor, but if that’s one step too many, it will still be awesome!

  • Classic Caesar Salad. A great Caesar salad gets its swagger from a great dressing. Squeamish about raw egg yolks and anchovies? Sorry. Yolks are what give richness to the emulsion, while anchovies provide a briny blast (and that whole umami thing).
  • Little Gem Salad with Lemon Cream and Hazelnuts. Wait, whipped cream in a salad? Yep. This rich, bright lemon cream is perfectly suited for Little Gems. “The cream takes over your whole mouth,” says chef Joshua McFadden, “while the lemon juice acts as a bridge.”
  • Black Tie Crudite with Whipped Ricotta. Intentionally burning vegetables—it’s a thing! The burnt onion powder adds a smoky, slightly bitter finish to the rich dip, and is responsible for the black part of this tuxedo-inspired crudite.
  • Seared Steak Lettuce Cups. We like using tender butter lettuce for these edible cups. View Recipe.
  • Iceberg Wedges with Grilled Bacon and Croutons. Who doesn’t love a wedge? Ask your butcher to cut slab bacon into thick slices (about ¼") to yield nice meaty pieces once they’re crisped on the grill.
  • Steakhouse Salad with Red Chile Dressing and Peanuts. The steak can be marinated a day in advance—in fact, it gets better. Dress the salad at the last minute, so the lettuce doesn't wilt.
  • Green Goddess Cobb Salad. To make addictively crispy chicken skin, turn it often in the skillet, until it looks like bacon. View Recipe.
  • Grilled Little Gem Salad with Pita Croutons. Yes—you can grill lettuce. And it’s worth it. View Recipe.
  • Grilled Vegetable Salad with Raw Green Mole. This uncooked mole gets heat from jalapeño, cooling freshness from lettuce and herbs, and a touch of richness from toasted seeds.
  • Pickled Vegetable Salad with Nori Vinaigrette. It might seem fussy to separate the vegetables when pickling, but if they’re combined, the colors will bleed and they won’t be as vibrant.
